ROASTED GARLIC BURGER WITH CAMBOZOLA
Break out of the rut of normal burger toppings and try this gourmet roasted garlic burger with cambozola. It's delightfully creamy and sweet with just a hint of tang.

- In a bowl, use the back of a spoon or a fork to smash the roasted garlic cloves into a paste (this works best if they are still hot or room temperature). Stir in the mayonnaise, season with salt and pepper and set aside.
- Preheat the grill.
- In a wide sauté pan, place the sliced onions and oil over medium-low heat. Stirring regularly, cook for 30 minutes or until the onions are deeply caramelized. Set aside.
- While the onions caramelize, gently work the Worcestershire sauce into the ground beef and form the beef into four 1/3 pound patties that are slightly wider than the buns you purchased. Generously sprinkle both sides of the patties with salt and pepper and set aside.
- Grill your burgers, flipping at least once, until the burger reaches your desired level of doneness, or an internal temperature 160°F. Remove from the grill and let rest for 5 minutes.
- While the burgers rest, toast the buns on the grill slightly then slather both halves with the roasted garlic aioli. Place the cambozola slices on the bottom bun and top with the burger, optional lettuce or arugula, caramelized onions and the top bun. Serve.

- Preheat the grill. In a bowl, mix the meat, salt and pepper, and the roasted garlic paste.
- Form 4 burgers by using a mold, the top of a lid, or your hands. Wrap in plastic wrap and refrigerate until you are ready to grill them.
- Cook burgers over a hot fire until desired temperature is reached.
- Meanwhile: Split the pieces of bread, and pull out some of the soft center to make a hole for the burger. Place the bread face down on the grill to toast.
- Place the burger in the bread, and top with your favorite condiments.
- Preheat the oven to 375 degrees F.
- Heat an ovenproof saucepan on the stovetop. When it's hot, add the extra-virgin olive oil. Next, add the cloves and season with salt and pepper. Let the cloves begin to caramelize, then put the pan in the preheated oven.
- Roast cloves in the oven for about 30 minutes or until they are nicely browned. (Starting the garlic on the stove will save at least 20 minutes of roasting time). Let cool.
- When cool enough to handle easily, put the roasted garlic into a small bowl, mash with a fork and add oil from the pan until a paste forms. Store, tightly covered, in the refrigerator, for up to 1 week.
GOUDA GARLIC BACON BURGER STACK

- Split buns and brush butter on both halves; lay flat on a hot griddle (about 350 degrees F). Heat until buns are just light golden brown and have a nice crispy edge, 4 to 6 minutes. (A well-buttered and griddled bun gives you great flavor and a crispy crunch, and also acts as a seal to keep the burger juices and other sauces from making the bun soggy.)
- Preheat a broiler. Form beef into four 8-ounce 3/4-inch-thick patties. Sprinkle beef patties with Burger Shake (1/2 ounce each) and place in broiler to cook, about 4 minutes. Flip the patties over and sprinkle with more Burger Shake (another 1/2 ounce each, or to taste).
- Place the roasted garlic cloves on top of the patties along with the bacon strips and top with 2 slices of Gouda per patty. Cook until Gouda is fully melted and enrobes the garlic and bacon and patties are pink inside, another 4 minutes.
- Smear both halves of buns with Caesar Dressing.
- Place finished patties on bottom buns and top with onions and tomatoes.
- Add three pickle chips to each patty and drizzle barbecue sauce over the entire burger.
- Throw on your top buns and be sure to use burger picks to keep everything in place.
- Prepare for a delicious but drippy delight.
- Combine salt, pepper, garlic and oregano in a bowl and mix for a great all-purpose seasoning. We use it for eggs, meat, vegetables and more.
- Preheat oven to 350 degrees F.
- Slice the tops off of the garlic bulbs and spread olive oil over the cut portion of the bulbs. Sprinkle with salt and pepper. Wrap in foil. Roast until tender and squeeze-outable, about 50 minutes.
- Combine mayonnaise, vinegar, lemon juice, mustard, olive oil and Worcestershire in a large bowl and whisk until ingredients are thoroughly integrated. Then whisk in Pecorino-Romano, oregano, garlic, anchovy paste, salt and pepper.

Cover tightly, place in the oven, and roast until about three-fourths cooked, about 45 minutes. Uncover and return to the oven until the cloves begin to pop out of their skins and brown, about 15 minutes. Let cool. When cool enough to handle easily, squeeze the roasted garlic into a small bowl. Press against the skins very well to get out all the sweet roasted garlic you can. Add the oil from the baking dish and mix well until a paste forms. Store, tightly covered, in the refrigerator, for up to 1 week.

- Roasted Garlic Paste: Preheat oven to 375°.
- Remove any loose papery skins from the outside of the garlic heads; cut off the top 1/3 of the heads to open the cloves; set aside for another use; place the heads in a small baking dish, cut sides up; pour olive oil over them and sprinkle with salt and pepper.
- Cover the dish tightly and bake until 3/4 done, about 45 minutes; uncover and continue to bake another 15 minutes or until the cloves begin to pop out of their skins and brown; cool.
- Squeeze the cloves out of their skins into a bowl; add the oil from the baking dish and mix well, forming a paste.
- Store, refrigerated, up to one week.

I made this recipe up one night, when I was sick of the same old burgers. The garlic really adds a nice flavor and the liquid smoke adds a nice outdoor cooked taste even in the frying pan.

- Using your hands, gently combine turkey, cheese, roasted garlic, sage, and 1/2 teaspoon each salt and pepper in a medium bowl (do not overwork meat). Shape into 4 patties (about 5 inches in diameter). Refrigerate, covered, until cold, about 1 hour (or overnight).

- Preheat oven to 400°F. Peel off the outer papery layer of the garlic bulbs. Cut off the top third of the bulbs, exposing the tops of the cloves.
