Doritos Cheesy Chicken Casserole - THE BEST Mexican casserole EVER! Chicken, sour cream cream of mushroom, cream of chicken, salsa, corn, cheese and Doritos! Everyone goes nuts over this casserole. Only takes a minute to assemble and it is ready to eat in 20 minutes. SO quick and easy. Great for a crowd - even picky eaters love this!

Steps:
- Preheat oven to 350 degrees. Lightly spray a 9x13-inch pan with cooking spray.
- Crush the entire bag of Doritos and cover the bottom of the dish.
- Reserve one cup of cheese. Mix together remaining ingredients in a large bow. Pour chicken mixture over the Doritos.
- Bake uncovered for 20 min. Top casserole with the remaining cheese and bake 5 additional minutes or until melted.

Was given this recipe by a co worker. My husband says: 'You had me at Doritos®!' You can substitute 1 can Ro-Tel® tomatoes for the salsa.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly spray a 9x13-inch baking dish with cooking spray.
- Spread crushed chips out into the bottom of the prepared baking dish.
- Stir chicken, 1 cup Mexican cheese blend, salsa, cream of mushroom soup, cream of chicken soup, and sour cream together in a bowl. Pour chicken mixture over crushed chips into the baking dish.
- Bake in the preheated oven for 20 minutes. Spread remaining 1 cup cheese over the casserole and bake until cheese is melted and bubbling, about 5 minutes more.

Steps:
- 1. Pre-heat oven to 350-f degrees.
- 2. In a mixing bowl, combine all ingredients except doritos.
- 3. In a greased 2 qt baking dish, put a layer of crushed Doritos (about 2 cups), then a layer of the chicken mixture. Repeat once more, ending with a layer of chicken mixture. Top with more shredded cheese, cover, and bake for 30-35 minutes, till bubbling hot.
- 4. Then if you like, you can top it off with lettuce ,tomatoes and onions

- Melt the butter in a small skillet over medium heat. Add in the diced onions and sauté until translucent and beginning to brown, about 5 minutes. Set aside to cool.
- Take half of the tortilla chips and crush them into large pieces. Add the pieces to the bottom of your baking dish.
- In a large mixing bowl, stir together the cooked chicken, cooked onions, cream of chicken soup, diced tomatoes with green chiles, sour cream, sweet corn, 1 cup of the shredded white cheddar cheese, cumin, chili powder, sea salt, black pepper, and oregano. Add the mixture on top of the chips in the baking dish.

- In a large bowl, stir together chicken, condensed soup, tomatoes and green chilies, sour cream and taco seasoning. Spread the chicken mixture on top of the chips in the dish. Sprinkle with cheese, cover with foil, and bake for 20 minutes.
- Remove the cover, sprinkle remaining crushed Doritos over top, and return to the oven (uncovered) for 5-7 more minutes, or until the casserole is hot and bubbly.
