SLOW COOKER CHEESY CHICKEN AND FRITO CASSEROLE
Look no further for an easy slow cooker dinner recipe! This Slow Cooker Chicken and Frito Casserole comes together quickly and you can never go wrong when there are Fritos involved!

Steps:
- Combine the tomatoes, black beans, tapioca and cumin in the bottom of a 5 1/2 - 7 quart slow cooker. Season the chicken with salt and pepper on both sides, then nestle it into the tomato mixture. Cover and cook on low until the chicken is cooked through, 4 to 5 hours on low.
- Remove the chicken from the slow cooker to a cutting board and allow to cool slightly before cutting into bite sized pieces. Stir 1 cup of the crushed Fritos into the slow cooker along with 1 cup of the cheese, the corn and the cilantro. Stir the chicken back into the slow cooker and season with more salt and pepper, if needed.
- Sprinkle the remaining Fritos and cheese over the top, then cover and cook on high until the cheese is melted, 5-10 minutes.
- Serve topped with your desired toppings.

Steps:
- Dice chicken, cook in a skillet with margarine, salt and pepper, set aside.
- Mix chiles and soup together.
- Put an even layer of Fritos on the bottom of a casserole dish (I usually use a 2qt).
- Layer on top of the fritos as follows:.
- cooked chicken, soup/chile mix, tomatoes, cheese.
- Bake at 350 until heated through, and cheese is bubbly.
- Serve with sour cream.

- Cover and cook until chicken is tender, 4-5 hours on LOW.
- Transfer chicken to cutting board, let cool slightly, then shred into bite-size pieces.
- Stir 1 cup Fritos, 1 cup Mexican cheese, corn, and cilantro into slow cooker until cheese is melted and mixture is thickened slightly.
- Gently stir in shredded chicken and season with salt and pepper to taste (adjust filling consistency with hot water as needed).
- Sprinkle with remaining ½ cup cheese and remaining 3 cups Fritos; cover and cook on HIGH until casserole is heated through and cheese is melted, about 5 minutes.
- Serve.

- Preheat oven to 350 degrees F (175 degrees C). Lightly spray a 9x13-inch baking dish with cooking spray.
- Spread crushed chips out into the bottom of the prepared baking dish.
- Stir chicken, 1 cup Mexican cheese blend, salsa, cream of mushroom soup, cream of chicken soup, and sour cream together in a bowl. Pour chicken mixture over crushed chips into the baking dish.
- Bake in the preheated oven for 20 minutes. Spread remaining 1 cup cheese over the casserole and bake until cheese is melted and bubbling, about 5 minutes more.
