CHEESY BEEF AND PASTA CASSEROLE
Hearty comfort food that's EASY and IRRESISTIBLE!! Cheesy pasta and ground beef coated in marinara sauce and topped with more CHEESE!

Steps:
- Preheat oven to 375F and spray a 9×13-inch casserole dish with cooking spray; set aside.
- Cook pasta according to package directions and drain.
- While the pasta is cooking, to a large Dutch oven, optionally add the olive oil (my beef was very lean and the oil was necessary), beef, onion, red pepper, and cook over medium-high heat until beef is cooked through and vegetables have softened; stir frequently and crumble the beef while it cooks; do not drain.
- Add the garlic, oregano, salt, pepper, and stir to combine. Cook for about 1 minute, or until garlic is fragrant.
- Add the cooked pasta to the beef mixture, add the marinara, and stir to combine and coat evenly.
- Add 1 1/2 cups cheese and stir to combine until the cheese has melted.
- Turn mixture out into the prepared baking dish and evenly sprinkle the remaining 1 1/2 cups cheese over the top.
- Bake for about 15 to 20 minutes, or until the cheese has melted on top.
- Optionally garnish with fresh herbs and serve immediately.

- Preheat the oven to 375 degrees F. Spray a 2-quart casserole dish with nonstick spray. In a large skillet, heat the oil over medium heat. Add the onion, zucchini, garlic and red pepper flakes-- cook, stirring, until the vegetables are softened-- about 5 minutes. Remove the vegetables to a bowl and set aside. Add the beef to the pan and cook, breaking it apart with a spatula, until browned- 8 to 10 minutes. Drain off any accumulated oil and discard. Add the cooked vegetables, penne and sauce to the pan and mix to combine. Spoon the pasta mixture into the prepared casserole dish. Sprinkle with cheese. Bake until the cheese is melted and the filling is hot and bubbly- 20 to 25 minutes. Sprinkle fresh basil on top and serve.

- In a large nonstick skillet, cook the beef over high heat, stirring, for 3 to 5 minutes or until no longer pink.
- Pour off all but 1 tablespoons of fat.
- Add the onion, garlic, green pepper, basil and thyme and cook, stirring, for 2 minutes.
- Stir in the tomatoes and water and bring to a boil.
- Add the pasta and reduce the heat to simmer.
- Cover and cook, stirring frequently, for 20 minutes or until the pasta is tender.
- Stir in the salt, pepper and sugar.
- Remove from the heat and sprinkle with the mozzarella.

This is a great casserole, it tastes similar to lasagna. You can also top with grated cheese the last 15 minutes of baking if desired, I also like to add in some green bell pepper and dried chili flakes for heat but that is optional.

- Set oven to 350 degrees.
- Grease a large lasagna dish.
- Cook the pasta until only firm-tender; drain (it does not have to measure exactly 4 cups cooked, careful not to overcook the pasta as it will cook more in the oven) drain and transfer to a bowl, toss with a couple tablespoons oil to prevent sticking; set aside.
- In a skillet, cook ground beef, onion, jalapenos (if using) mushrooms and minced garlic until meat is brown and cooked stir in 1/2 cup Parmesan cheese, tomato sauce salt and pepper, stir until heated through (you can the sauce for up to 45 minutes on low heat).
- Spread 1/2 meat sauce on bottom of pan.
- Spread 1/2 noodles on top of sauce.
- Top noodles with 1 cup mozza cheese.
- Mix 1 cup cottage cheese with 1/2 cup sour cream and 1/2 cup Parmesan cheese.
- Spread over mozzeralla cheese.
- Top with remaining tomato sauce, noodles,and remaining mozza cheese.
- Sprinkle with remaining 1/2 cup Parmesan cheese.
- Bake, covered for 20 mins, uncover casserole (at this point you can sprinkle with grated mozzeralla or cheddar cheese if desired).
- Return to oven to bake for another 10-15 mins, or until bubbly.
