EASY BEEF AND BEAN ENCHILADAS
A quick and easy enchilada recipe that can be on the table in no time.

Steps:
- Preheat oven to 375° and spray a 13x9 casserole dish with cooking spray.
- In a large skillet, brown ground beef and add seasonings. Drain grease and return to pan.
- Add refried beans and stir until meat and beans are combined.
- Pour 1/4 cup of enchilada sauce on the bottom of the prepared baking dish.
- Pour 1/2 can of enchilada sauce onto a large tray or plate. One at a time, coat both sides of tortillas in sauce.
- Place meat and bean mixture into the center of tortilla and top with cheese. Roll up and place seam side down in the casserole dish.
- Continue dipping tortilla in sauce, filling with meat mixture, and cheese until meat is gone.
- Pour the remaining enchilada sauce on top of the enchiladas and top with the remaining cheese.
- Cover with foil and bake for 25-30 minutes. Uncover and bake for an additional 10 minutes until cheese is melted and bubbly.

- Heat large skillet over medium-high heat; add meat and bell pepper. Cook 5 minutes, stirring until meat crumbles and is no longer pink; drain. Add taco seasoning mix and 1/2 cup water. Simmer, uncovered, 5 minutes or until sauce thickens, stirring occasionally.
- Spoon 1/3 cup meat mixture down center of each tortilla; sprinkle with 2 tablespoons cheese. Roll up; place seam-side down in greased 13x9-inch baking pan. Spoon salsa over enchiladas.

Steps:
- Preheat oven to 350 degrees.
- Cook the ground beef in a skillet until brown.
- Add the taco seasoning and water (according to package instructions) and cook until beef is well coated, and sauce is thickened.
- Pour a bit of the enchilada sauce in the bottom of a 9x13in pan and spread evenly.
- Set up an assembly line: Tortillas, refried beans, taco meat, corn, any of the above optional ingredients, and lastly cheese.
- Assemble enchiladas: Smear a line of refried beans from the top of the tortilla to the bottom, then top beans with the remaining assembly line items.
- Fold in the sides of the tortilla to close the enchilada, then place in pan, side by side, until pan is full (pan should hold 6 enchiladas).
- Top each enchilada with enchilada sauce, then cover with cheese, and optional ingredients, if desired.
- Place assembled enciladas into the oven and heat through.
- Repeat process to make the next batch.

- Preheat oven to 350 degrees.
- Stir the soup, sour cream, picante/salsa and chili powder in a medium bowl, set aside.
- Stir 1 cup of soup mixture, beef, beans and 1/2 cup cheese in a large bowl.
- Divide the beef mixture among the tortillas (1/3 to 1/2 cup). Roll up the tortillas and place them seamside up on a 11 x 8" shallow baking dish. (You may need to secure with picks. JUST MAKE SURE TO REMOVE THEM BEFORE EATING).

- Preheat oven to 300°F. In a medium sauce pan over medium heat melt butter. Add flour and whisk for 2 minutes, to cook out the 'floury' taste. Meanwhile, in a medium skillet over medium-high heat; combine beef, salt, pepper and onion powder. Cook beef until browned breaking it apart with spatula as it cooks. Once sauce and filling are started; wrap tortillas in aluminum foil and warm in the oven. While the beef is cooking and the tortillas are warming; add chicken broth, enchilada sauce, coriander and pepper to your sauce pan. Whisk to combine bring to a boil, reduce to simmer. Meanwhile add green chile sauce, green chiles, and beans. Stir to combine and cook until hot. About 5 minutes. Remove tortillas from oven. Turn oven to 400°F. Open foil. Ladle green chile sauce (about 1 cup) from filling mixture to cover the bottom of a 9x13 baking dish (or 2 smaller dishes). Ladle red sauce (about 1 cup) on top of the green chile sauce. Lay a tortilla on a clean work surface. Spoon about ¼ cup of the beef filling into the center of the tortilla. Roll tortilla up, enclosing the filling and lay in the baking dish seam side down. Repeat until all tortillas are in the baking dish. Ladle remaining red sauce over the top of the enchiladas, covering them completely. Sprinkle cheese over top. Scatter black olives on top. Bake for 7-10 minutes until cheese is completely melted. Garnish with sour cream and chopped cilantro. Serve and enjoy!

- Heat oven to 350. Saute onion and garlic in oil until onions are softened.
- Add 1/2 of each type of beans and mash with a potato masher, then add the remaining half of beans.
- Add 1/2 of enchilada sauce, 1/2 cup salsa, cumin, and salt and pepper; simmer and mix on low heat for about 3 minutes or until heated through.
- Fill each tortilla with about 3 tablespoons of bean mixture and a sprinkle of cheese and roll up leaving ends open, arranging seam side down in a greased 9 x 13 inch baking dish.
- Mix the 2 tablespoons of water with the remaining enchilada sauce and pour evenly over tortillas.
- Sprinkle with remaining cheese and bake, covered, for about 15-20 minutes.

BEEF AND BEAN ENCHILADAS
This recipe is from a friend of mine who made a family cookbook of their favorite recipes. We have really enjoyed the cookbook and I will be posting more of her recipes. For the enchiladas, I have made them with the original recipe (listed below) and then last night I didn't have all the right ingredients, so I used a can of RoTel that had the lime and cilantro in place of the can of green chilies. I also used recipe #66591 instead of a packet from the store (I didn't have any on hand). I also always use the flour tortillas that you can buy at Costco that you cook yourself. These enchiladas have a bit of spice to them. They might be too spicy for some and not enough for others, they are perfect for us!!

Steps:
- Brown the ground beef and onion.

- Cook on medium heat until thick.
- Stir occasionally for 10-15 minutes. Remove from heat.
- Fill each tortilla with about 1/3 cup of the mixture and a small handful of cheese.
- Roll tight and place them seam side down, side by side in a 13x9-inch baking pan.
- Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
