VERY BEST BANANA BREAD
Get ready for the very best banana bread recipe! It's super moist, light and just the perfect amount of sweet. You can make one loaf to eat and one to freeze for later, or give as a gift to a friend.

Steps:
- Preheat the oven to 325
- Beat the butter and sugar together until light and creamy
- Add in the eggs, one at a time, blend well
- Stir in the buttermilk, vanilla and mashed banana
- In a separate bowl sift together the flour, salt, baking powder, baking soda and cinnamon
- Add the dry ingredients to the wet ingredients and stir to combine (low speed or use a spoon until just combined)
- Grab two loaf pans
- Line them with parchment paper (alternatively you can butter and flour your loaf pans)
- Pour an even amount in to each pan
- Bake for 65-75 minutes, turn the pans 180 degrees in the oven half way through cooking (so turn once the first 35 minutes have passed)
- Use a toothpick to check for doneness, center should come out clean, if it is still gooey continue cooking in 5 minute increments
- Remove from the oven, rest 10 minutes, transfer to a wire rack to cool
- Serve with butter, while the banana bread is still warm!

NANCY'S - ULTIMATE DOUBLE BANANA BREAD
A friend gave me 1/2 a bushel of bananas...and I believe in "Waste Not, Want Not". SOOO, here is my entry in to your banana bread recipe collections. Plus ..I have a freezer full of frozen bananas with the skin on ,for future baking! This is a delicious bread, moist and not to sweet. no frosting but....bursting with banana flavor! My friends loved it at our coffee gathering! along with some fresh fruits, cantalope, grapes and watermelon served on the side. I do hope you enjoy my recipe........Nncy...9/17/12

- Pre-heat oven to 350 degrees. Grease and flour 2 regular bread pans. In a large bowl, mix sugar and butter together.
- ADD eggs, bananas, buttermilk and banana flavoring to the sugar butter mixture. Beat with an electric mixer till smooth. ***Stir in salt and baking soda..to the above mixture.
- Pour batter into the prepared pans. Bake 8 inch pans for 1 hour. Bake 9 inch pans 1- 1.4 hours. Insert a toothpick into the center.. if it comes out clean...you loaf is done. ( I use a wooden chop stick, the pointed end.)
- Cool 10 minutes in the pan, Loosen the sides of your bread in the pans, then remove and turn out onto a wire rack to cool. Cool before slicing.
- Now please enjoy your bread... and later it is great toasted,and buttered....YUM! Picture of bananas in the freezer...for now....LOL
DOUBLE BANANA NUT BREAD

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9x5-inch loaf pans.
- Beat vegetable oil and sugar together in a bowl until creamy and smooth; stir in eggs.
- Mash bananas and lemon juice together in a separate bowl; mix into oil mixture until just incorporated.
- Sift flour, baking powder, and salt together in a third bowl; slowly mix into wet mixture using an electric mixer on low until just incorporated. Fold in walnuts. Pour batter into the two prepared loaf pans.
- Bake in the preheated oven until a knife inserted in the center of the loaf comes out clean, about 1 hour 15 minutes.

NANCY'S BANANA BREAD
I don't know who Nancy is, but I have been making this banana bread for about 20 years! I think I got it out of an old cookbook, but it is a super moist banana bread. The key is using bananas that are turning black.

- Mash bananas in a large bowl.
- Add sugar and mix well.
- Cut in butter.
- Add egg and beat slightly.
- In a separate bowl, mix together flour, baking soda and a dash of salt.
- Gradually add to banana mixture.
- Pour into a well-greased loaf pan.
- Bake in a preheated 350 oven for 45-55 minutes.
- A toothpick inserted should come out almost clean.

- Grease a 10-in. fluted tube pan. Sprinkle with 3 teaspoons sugar; set aside. , In a large bowl, cream butter and the remaining 3 cups sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Stir in bananas and extracts. - Preheat the oven to 350°F (180°C). Grease a 9 x 5-inch loaf pan with nonstick cooking spray. Line the pan with parchment paper, leaving some overhang on the long sides so it will be easy to lift out the bread, and spray again.
- Add the butter to a medium nonstick pan over medium heat. Cook, stirring occasionally, until the butter turns amber brown and smells nutty, about 3-4 minutes. Watch carefully so the butter does not burn. Remove the pan from the heat and set aside to cool for 10-15 minutes.
- Add cooled brown butter and brown sugar to a large bowl. Beat with an electric hand mixer on medium speed until evenly combined, about 1 minute. Add the egg and beat until light and fluffy, 3-4 minutes.
- In a medium bowl, combine the mashed bananas, sour cream, and vanilla and mix with a rubber spatula until well combined.
- In a separate medium bowl, whisk together the flour, salt, baking soda, and cinnamon.
- Alternate adding the flour mixture and banana mixture to the butter mixture, starting and ending with flour and folding with a rubber spatula between each addition until just incorporated. Fold in the chocolate chunks.
- Pour the batter into the prepared loaf pan and smooth with an offset spatula, then sprinkle the turbinado sugar on top.
- Bake the banana bread until golden brown and a toothpick or cake tester inserted in the center comes out clean, 60-70 minutes. Set the loaf pan on a wire rack to cool for at least 1 hour, then lift out the banana bread and slice.
