BACON-WRAPPED SWEET POTATO BITES

- Preheat oven to 350°. In a large bowl, mix butter and seasonings. Add sweet potatoes and toss to coat., Wrap 1 piece bacon around each sweet potato cube; secure with a toothpick. Sprinkle with brown sugar. Place on a parchment-lined 15x10x1-in. baking pan., Bake until bacon is crisp and sweet potato is tender, 40-45 minutes. Serve with maple syrup.

CHEESY BACON SWEET POTATO APPETIZERS
This is a quick and easy recipe for your holiday appetizer tray. This recipe idea is from Monty's Restaurant. You can use any bacon and any cheese of choice.

- 1. Heat oven to 400^. Place frozen fries on a foil lined baking pan in a single layer and bake for 15 minutes. Remove from oven and sprinkle 1/2 the cheese on each one the sprinkle on the bacon and then remaining cheese.
- 2. Return to oven and bake for an additional 10 to 15 minutes. Watching so they do not over bake- just melt cheese well. Remove from oven and serve immediately.(I like these reheated too-except there's usually none left). Use your favorite sauce for dipping.
SWEET POTATO AND BACON TOTS WITH CREAMY MUSTARD DIPPING SAUCE

- For the sweet potato and bacon tots: Boil a pot of salted water. Add the potatoes and partially cook, about 15 minutes. Drain the potatoes and set aside. Meanwhile, add the bacon to a small skillet over medium heat and cook until crisp, about 10 minutes. Transfer the bacon to a paper-towel-lined plate. Finely chop the bacon when cooled. Heat the oil to 300 degrees F in a straight-sided skillet. When the potatoes are cool enough to handle, shred the potatoes using either a box grater or shredding attachment on a food processor. Place 4 sheets of paper towels on a countertop. Dump the potatoes on top of the paper towels and fold the towels over the potatoes. Squeeze as much moisture out of the potatoes as possible. (This is the trick to make perfect tater tots; too much moisture will result in little pieces of potato all around your skillet when frying.) Combine the potatoes with the bacon, flour and 1/2 teaspoon salt. Mix well to combine. Form the potato mixture into small logs using a 1 tablespoon measuring spoon. Working in batches, fry the tots in the skillet until golden brown, 2 1/2 to 3 minutes. Adjust the heat, as needed, to keep the oil at 300 degrees F. Transfer the tots to a paper-towel-lined plate to strain excess fat. Sprinkle the tots with salt while still warm.
- For the creamy mustard dipping sauce: Combine the mayo, honey and mustard in a small bowl. Sprinkle the sauce with salt and pepper. Serve the sweet potato and bacon tots hot with the creamy mustard dipping sauce.

- Preheat the oven to 400°F. Pierce the sweet potatoes all over with a fork then place them on a baking sheet and bake for about 50 minutes or until they’re cooked through.
- While the potatoes are baking, arrange the bacon slices in a large sauté pan and cook until crispy, pouring out and reserving all bacon drippings. Transfer the cooked bacon to a paper towel-lined plate and set it aside.
- Remove the potatoes from the oven and transfer them to a rack to cool until you can safely handle them. Slice the potatoes in half lengthwise then scoop out and discard the centers leaving a 1/4-inch border of the filling around the edges intact.
