BACON-JALAPENO DIP
This winning dip gets a double dose of bacony goodness in the form of crispy thick-cut nuggets and a splash of flavorful drippings that are mixed into the creamy base. Fresh jalapenos offer up just the right amount of bright heat.

Steps:
- Preheat the oven to 350 degrees F.
- Cook the bacon in a nonstick skillet over medium heat, stirring occasionally, until crisp, about 8 minutes. Transfer to a paper towel-lined plate with a slotted spoon. Reserve 1 tablespoon of the drippings.
- Mix together the cream cheese, Cheddar, sour cream, milk, vinegar, jalapenos, bacon and reserved drippings in a medium bowl. Spread the mixture in a baking dish and bake until golden and bubbly, about 30 minutes. Sprinkle with the scallions before serving.
CHEESY JALAPEñO BACON DIP
Steps:
- In a large frying pan, fry bacon until crispy. Remove and place on a plate lined with paper towels.
- Preheat oven to 350° and spray a 1 quart baking dish with a non stick spray. Set aside.
- In a medium mixing bowl, beat cream cheese until creamy, then add mayonnaise and sour cream. Mix until incorporated.
- Add cheese (saving 1/2 cup for topping), jalapeños, onions, cilantro to mixing bowl. Stir.
- Crumble bacon, add to bowl, stir, saving a small amount for the topping.
- Spoon into prepared baking dish. Top with remaining cheese and bacon and pop in the oven.
- Bake for 20-25 minutes until cheese is bubbly and mixture is heated thoroughly.
- Remove for oven, serve hot with corn chips or tortilla chips.

- To make this Cheesy Bacon Jalapeno Dip, preheat your oven to 350 degrees and spray a baking pan with non-stick spray.
- Reserve 3/4 cup of shredded cheese and a small bit of bacon and diced jalapeno and set aside. Add all of your remaining ingredients to a large bowl and using a hand mixer, mix to combine. Spoon your dip into your baking pan, sprinkle with the reserved shredded cheese and toppings and cook for 25 minutes.
- Remove from oven and serve hot with corn chips, tortilla chips or pita chips.

- Preheat oven to 350 degrees F. Spray baking dish with non-stick spray and set aside. I use my quiche pan, but any shallow baking dish will work.
- Add softened cream cheese and mayo to a mixing bowl and beat with a hand mixer until smooth and combined. Add 1/2 the bacon, jalapenos, green chiles, cumin, and mexican and mozzarella cheeses.
- Transfer to prepared dish, smooth out with a rubber spatula.
- Combine melted butter, panko, and Parmesan cheese. Sprinkle over the top of the dip. Sprinkle remaining bacon pieces over the top.
- Bake for 25 minutes, until panko is lightly golden brown and dip is bubbling.
- If desired, top cooked dip with slices of fresh jalapeno. Serve hot.

- PREHEAT oven to 350° F.
- WHISK cream cheese and mayonnaise together until smooth. Add 1/2 the bacon, 3/4 cup Jalapeños, green chiles, cumin, Mexican and mozzarella cheeses. Stir to blend.
- TRANSFER to pie dish.
- COMBINE remaining Jalapeños and Parmesan cheese. Sprinkle over the top of the dip along with the remaining bacon crumbles.
- BAKE for 20 minutes until dip is bubbling. Serve hot with your favorite crackers.

- Preheat oven to 400 degrees.
- In a cast iron skillet or ovenproof skillet, cook bacon over medium heat until crispy. Remove from heat and set on paper towels to absorb excess grease. Drain off all but 1 teaspoons of bacon grease remaining in skillet to grease the pan and add more bacon flavor to the dip. Crumble bacon.
- Combine corn, jalapeno, cream cheese, mozzarella cheese, salt, cayenne, half of the bacon, and half of the basil. Scoop into the skillet and bake for 20 minutes.
- Sprinkle with the remaining bacon and basil, and parmesan cheese to taste. Serve immediately.

- Cook bacon till crisp - drain well, removing all traces of fat. Crumble and set aside.
- Sauté tomatoes, jalapeno, garlic, salt, and pepper until thickened.
- Add pre-cooked bacon.
- Cut cream cheese into cubes; add to mixture, stirring until melted.
- Add green onions.
- Stir in heavy cream, simmer, stirring occasionally until desired consistency (approx.5-10 minutes).
