CHEESECAKE WITH GLAZED FRUIT
My sister always made this dessert for family picnics when we were growing up.

Steps:
- 1. Prepare crust by mixing graham cracker crumbs, confectioners sugar, butter and cinnamon. With back of spoon, press firmly on bottom and sides of 9" pie pan. Chill.
- 2. Preheat oven to 350 degrees. Let cream cheese soften at room temperature then beat with lemon rind until very creamy using an electric mixer. Add next three ingredients and beat at medium speed until blended, then beat for 5 minutes until smooth and creamy. Pour into crust and bake about 30 minutes; cool.
- 3. To decorate and glaze, put a hulled large strawberry n the center of pie. Arrange strawberry halves petal fashion around the center strawberry. Surround with blueberries. Cut pineapple slices in 1 1/2" wedges and arrange alternately with apricot halves around the edge of pie.
- 4. To prepare glaze: in small saucepan blend cornstarch, pineapple/apricot syrup and 1 teaspoon of lemon juice. Cook, starring over low heat until clear and thickened. Cool slightly. Spoon glaze carefully over fruit using just enough to cover.
GORGEOUS GLAZED FRUIT CHEESECAKE
Steps:
- Early the day before: With electric mixer at low speed, mix well 1-1/2 cups sifted regular all-purpose flour, 1/4 cup granulated sugar, 3/4 cup butter or margarine, 1 egg yolk and grated peel 1 lemon; refrigerate 1 hour.
- Press 1/3 of this dough to base of 10-inch spring-form pan.
- Bake at 400 (F) for 8 minutes; cool.
- Grease side of springform pan; fit over base; press rest of dough around side up to 1-inch below top.
- In a bowl, with electric mixer at low speed, beat 40 ounces of cream cheese, sugar, flour, salt, and 2 egg yolks until smooth; then beat in the 5 eggs, one at a time, till smooth.
- Stir in the heavy cream, grated peels of lemon and orange; pour into springform pan.
- Bake at 475 (F) for 15 minutes, then at 200 (F) for 1-1/4 hours.
- Let stand in oven 1/2 hour, then cool at room temperature, remove side of pan; refrigerate.
- Early next day: Cut each slice from a drained 8-1/4-ounce can sliced pineapple into 8 pieces; arrange on cake with 1-1/2 cups fresh strawberry slices, 1/2 cup halved seedless grapes, as pictured: glaze with 1/4 cup melted apple jelly.
- Chill.
- Serve in 24 wedges, cleaning knife often with damp cloth.

FABULOUS CHEESECAKE WITH BLUEBERRY GLAZE
Thumbing through my Mother's Recipe Box I discovered this recipe clipped from Southern Living, 1975. Cooking time include time to chill.

Steps:
- Preheat oven to 325 degrees F.
- Prepare Graham Cracker Crust (**See Recipe below).
- Combine cream cheese and cottage cheese; beat until smooth and creamy.
- Gradually add sugar, beating well.
- Add eggs, and beat until well combined.
- Add cornstarch, flour, lemon juice, and vanilla; blend well.
- Add butter and sour cream, beating until smooth.
- Pour filling into prepared pan; bake for 70 minutes, or until firm around edges.
- Turn off oven; all cheesecake to stand in oven 2 hours.
- Remove from oven; cool completely.
- Remove from pan; chill.
- Top with Blueberry Glaze (***recipe follows)
- **To Make Graham Cracker Crust:.
- Combine all ingredients, press into bottom of a 10" springform pan.
- ***To Make Blueberry Glaze:.
- Combine sugar and cornstarch ina small saucepan; blend thoroughly.
- Gradually stir in water.
- Crush 1/2 cup blueberries; add to sugar mixture.
- Cook over medium heat, stirring constantly, until mixture thickens and comes to a boil.
- Continue to boil about 2 minutes or until mixture is clear.
- Cool.
- Arrange remaining blueberries over top of chilled cheesecake.
- Pour cooled glaze over berried.
- (Makes 1 1/3 cups).
