1 (17 ounce) package frozen puff pastry, thawed
1 (8 ounce) round edam cheese, red rind removed
1 tablespoon honey dijon mustard
1 egg, separated

Steps:

  • Preheat oven to 400ºF.
  • Cut two circles from the puff pastry dough, one 7-1/2" round, and one 7" round.
  • Place cheese, with the rind removed, on the smaller circle.
  • Spread with mustard.
  • Brush edge of the pastry with slightly beaten egg white.
  • Cover completely with larger circle of dough.
  • Seal edges well and crimp with fork.
  • Brush top of dough with egg yolk.
  • You can refrigerate the Wellington at this point, well covered, for several hours.
  • Place the Wellington in a pie pan and bake for 20-25 minutes.
  • Break through the top crust to serve.

Here's what you need: butter, garlic, medium onion, fresh spinach, salt, pepper, breadcrumb, cream cheese, shredded parmesan cheese, fresh dill, puff pastry, salmon fillet, salt, pepper, egg

2 tablespoons butter
2 cloves garlic, chopped
½ medium onion, chopped
5 oz fresh spinach
1 teaspoon salt, for spinach
1 teaspoon pepper, for spinach
⅓ cup breadcrumb
4 oz cream cheese
¼ cup shredded parmesan cheese
2 tablespoons fresh dill, chopped
1 sheet puff pastry, softened to room temperature
1 salmon fillet
1 teaspoon salt, for salmon
1 teaspoon pepper, for salmon
1 egg, beaten

Steps:

  • Preheat oven to 425°F (220°C).
  • In a pan over medium heat, melt butter. Add the garlic and onions, cooking until translucent.
  • Add the spinach, salt, and pepper, cooking until spinach is wilted.
  • Add the breadcrumbs, cream cheese, parmesan, and dill, stirring until mixture is evenly combined. Remove from heat and set aside.
  • On a cutting board, smooth out the sheet of puff pastry. Place the salmon in the middle of the pastry and season both sides with salt and pepper.
  • Place several spoonfuls of the spinach mixture on top of the salmon, smoothing it out so that it does not spill over the sides.
  • Fold the edges of the puff pastry over the salmon and spinach, starting with the longer sides and then the shorter ends. Trim any excess pastry from the ends, then fold the ends on top. Flip the puff pastry-wrapped salmon over and transfer for a baking sheet lined with parchment paper.
  • Brush the beaten egg on the top and sides of the pastry. Score the top of the pastry with a knife, cutting shallow diagonal lines to create a crosshatch pattern.
  • Brush the top again with the egg wash.
  • Bake for 20-25 minutes, until pastry is golden brown.
  • Slice, then serve!
  • Enjoy!

  • Heat the oven to 180°C. Place the portobello mushroom on a baking tray and spray with low calorie cooking spray. Place in the oven for 15 minutes. Turn half way through. Once it's ready transfer the mushroom to a few sheets of kitchen roll to soak up the juices.
  • Heat a frying pan over a medium to high heat and add the spinach to wilt. No need for oil - just keep turning continually with tongs to stop it catching
  • Place the mushroom on the pastry and cut around it leaving around a 2cm margin. Place the pastry circle over another area of the pastry and another circle leaving another 2cm margin from the smaller one. If you are feeling fancy then cut a few pastry leaves out as well.

  • Remove the stems from the portobello mushrooms, and place the mushrooms face down in a baking dish. Drizzle lightly with oil, and season with salt and pepper. Roast at 190°C (Gas Mark 5 / 375°F) for around 20 minutes, until soft. Set aside to cool.
  • Meanwhile, add the pine nuts, parsley and garlic to a mini food processor, and blitz until finely chopped. Add the olive oil and a pinch of salt and pepper, and blitz again to finish the pesto.
  • Cut two squares from the puff pastry, each slightly larger than one of the cooked portobello mushrooms. Spread some of the parsley pesto in the middle of the square of pastry, and add the portobello mushroom. Top with some crumbled goat's cheese.
  • Bring the corners of the pastry squares up to meet in the centre, over the top of the portobello. Pinch the corners together so that the pastry doesn't flatten out again as it cooks.
