EASY CHEESE STUFFED MUSHROOMS



Easy Cheese Stuffed Mushrooms image

These cheese and garlic stuffed mushrooms are simple to put together and easily adapt to your favorite cheeses. We love using a sharp cheddar, but mozzarella, Swiss, Gruyere cheese, or even creamier cheeses like feta, goat, and brie will all work. Of course, a combination of cheeses is a great idea, too!

Yield Makes 20 stuffed mushroom caps

Number Of Ingredients 10

20 white button or cremini mushrooms (about 10 ounces)
1 tablespoon olive oil
1 tablespoon butter
1/2 cup chopped onion (half medium onion)
2 tablespoons minced garlic (4 to 5 cloves)
2 teaspoons chopped fresh rosemary or thyme, see notes for parsley
2 ounces shredded cheese like sharp cheddar, mozzarella, Swiss or a combination
3 tablespoons breadcrumbs (use panko or regular breadcrumbs)
Salt and fresh ground black pepper
1 tablespoon chopped fresh parsley or chives for serving, optional

Steps:

  • Heat oven to 375° degrees Fahrenheit.
  • Using a damp paper towel, brush all dirt from the mushrooms. Remove the mushroom stems. Cut away and discard any hard bits of the stems, then finely mince them.
  • Add the mushroom caps to a rimmed baking sheet or sizeable oven-safe skillet that fits the mushrooms in one layer. Toss them with a tablespoon of olive oil and lightly season with fresh ground black pepper. Arrange them cavity-side-up so that they are ready to be stuffed.
  • Melt butter in a skillet over medium heat. Add the onions, chopped mushroom stalks, and a pinch of salt. Cook, occasionally stirring, until the onions smell sweet and are soft, about 5 minutes.
  • Add the garlic and herbs, then cook for another minute or until the garlic is fragrant. Before the garlic begins to brown, scrape the mixture into a bowl and set it aside to cool.
  • Add the breadcrumbs to the same skillet. Place it over medium-low heat, and then cook, stirring, until they are lightly toasted; about one minute.
  • Stir the cheese into the onions and garlic mixture, then divide the filling between the mushroom caps. Sprinkle the toasted breadcrumbs on top.
  • Bake the mushrooms until the cheese has melted and the mushrooms have softened; 15 to 20 minutes.
  • Serve with chopped fresh herbs and freshly ground black pepper on top.

BAKED PARMESAN MUSHROOMS

The easiest, most flavorful mushrooms you will ever make, baked with parmesan, thyme and lemon goodness!

Number Of Ingredients 8

1 1/2 pounds cremini mushrooms, thinly sliced
3 tablespoons olive oil
1/4 cup freshly squeezed lemon juice
Zest of 1 lemon
3 cloves garlic, minced
2 teaspoons dried thyme
1/4 cup grated Parmesan
Kosher salt and freshly ground black pepper, to taste

Steps:

  • Preheat oven to 375 degrees F. Lightly oil a baking sheet or coat with nonstick spray. Place mushrooms in a single layer onto the prepared baking sheet. Add olive oil, lemon juice, lemon zest, garlic, thyme and Parmesan; season with salt and pepper, to taste. Gently toss to combine. Place into oven and bake for 12-15 minutes, or until browned and tender, tossing occasionally. Serve immediately.

4 large field mushrooms
100g gorgonzola or other blue cheese , crumbled
25g walnuts , toasted and roughly chopped
4 thyme sprigs
knob butter , cut into small pieces
rocket leaves, to serve

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Arrange the mushrooms on a baking tray. Scatter over the cheese, walnuts, thyme sprigs and butter. You can do up to this stage a day in advance.
  • Pop in the oven and cook for 10 mins until the cheese is melted and the mushrooms are softened. Arrange some rocket leaves on plates and place the mushrooms on top.

100 g goat cheese
4 large flat field mushrooms
3 sprigs thyme, leaves only
375 g ready rolled puff pastry
1 teaspoon olive oil

Steps:

  • heat oven to 220C and put a baking sheet in to heat.
  • slice goats cheese into four pieces and leave rind on (tip - heat the knife in hot water to make slicing easier)
  • remove the stem from the mushrooms and clean up if needed. Put a circle of cheese in each mushroom. top with a sprinkling of thyme and season if desired.
  • Cut pastry into 4 strips lengthways. Wrap each mushroom in a strip of pastry so the ends are underneath. Make slashes on the top of each pastry with a knife but donr go all the way through and brush the exposed mushroom with the oil.
  • bake on the hot sheet for 15 mins until pastry is golden and cheese is oozy and delicious.

100 g goat cheese, the type with rind
4 mushrooms, large, flat ones, stalks removed
thyme, sprigs leaves only
375 g puff pastry, ready-rolled
1 teaspoon olive oil

Steps:

  • Heat oven 200 C, place a baking sheet in to heat.
  • Slice goats cheese into 4 equal pieces, leaving the rind on.
  • Turn the mushrooms cut side up.
  • Sit a piece of cheese in the middle of each mushroom.
  • Top with some thyme leave and season to taste.
  • Cut pastry into 4 strips lengthways.
  • Wrap each mushroom in a strip of pastry so that the ends of the pastry are under the mushroom.
  • Make slashes on top of the pastry with the tip of a sharp knife.
  • Brush exposed sides of mushroom with oil.
  • Place them on hot baking sheet, cook 15 - 20 minutes til pastry is golden and cheese oozing and mushroom is tender.
