Number Of Ingredients 6

1 package (9 ounces) refrigerated cheese tortellini
40 pimiento-stuffed olives
40 large pitted ripe olives
3/4 cup Italian salad dressing
40 thin slices pepperoni
20 thin slices hard salami, halved

Steps:

  • Cook tortellini according to package directions; drain and rinse in cold water. In a large bowl, combine the tortellini, olives and salad dressing. Toss to coat; cover and refrigerate for 4 hours or overnight., Drain mixture, discarding marinade. For each appetizer, thread a stuffed olive, a folded pepperoni slice, a tortellini, a folded salami piece and a ripe olive on a toothpick or short skewer.

1 (8 ounce) container small fresh mozzarella balls
1 (4 ounce) package fresh basil leaves
1 (10.5 ounce) container cherry tomatoes, halved
24 small skewers, or as needed
salt and ground black pepper to taste

Steps:

  • Wrap each mozzarella ball with a basil leaf.
  • Thread a tomato half, a basil-wrapped mozzarella ball, and another tomato half onto a skewer. Repeat until all tomatoes are on skewers. Sprinkle with salt and pepper.

  • Toss tomatoes, mozzarella cheese, olive oil, basil, salt, and pepper together in a bowl until well coated. Skewer one tomato and one piece of mozzarella cheese on each toothpick.

Italian Tortellini Skewers image

Our Italian Tortellini Skewers make a great quick and easy appetizer for summer BBQs or Potlucks. Perfect for picking up and eating on the go, each skewer is loaded with fresh veggies, cheese, and pasta drizzled with Italian Dressing.

Number Of Ingredients 9

1/2 (9 ounce) package tortellini
40 slices pepperoni
1/2 cucumber (sliced)
20 black olives
4 ounces fresh mozzarella (cubed or 20 mini fresh mozzarella balls)
20 grape tomatoes
20 pepperoncinis
1/4 cup Italian dressing
10 large skewers

Steps:

  • Cook tortellini according to package directions. Drain, set aside, and let cool.
  • Thread each skewer with pepperoni (I used two pepperoni each time), cucumber, olive, tortellini, mozzarella, tomato, and pepperoncini. Repeat until all the skewers are full.
  • Drizzle skewers with Italian dressing and keep refrigerated until ready to serve.

Olive, Pepperoni & Mozzarella Bites image

Number Of Ingredients 4

1 can of medium whole black olives
1 package of pepperoni
1 pound block of Mozzarella cheese
Pizza Sauce (optional)

Steps:

  • Slice Mozzarella cheese into 1/2" x 1/2" cubes. Drain olives from liquid. Using a toothpick, skewer an olive and push 1/3 way up the toothpick. Fold a piece of pepperoni into half or quarters and skewer next. Finally skewer mozzarella. Do not push toothpick all the way through mozzarella, only half way through as you do not want guests poking themselves in the mouth with the toothpick. If making ahead of time, arrange on tray and cover with saran wrap so that it does not dry out. When serving, serve plain or with a drizzle of pizza sauce on platter.
