CHEESE NIP CHICKEN

I found this in a small recipe cookbook years ago that they sell at the grocery check out counter, I don't remember which one. This is a very tasty, kid friendly dish. My kids love to help make this, and ask for it all the time. Make sure to make extra, because they heat up real well the next day too!!

Number Of Ingredients 6

1 -1 1/2 lb chicken tenders or 4 boneless chicken breast halves
2 cups cheese nips, crushed (makes about 1 cup)
1/2 cup of finely shredded cheddar cheese
1 -2 egg
onion powder (to taste) (optional)
garlic powder (to taste) (optional)

Steps:

  • Preheat oven to 400°F.
  • Spray 9x13 glass pan or jelly roll pan (15.5 x 10.5) with cooking spray.
  • (I cut up the chicken into bite size pieces but the chicken can also be left in chicken tender sizes).
  • Mix crushed cheese nips and cheddar cheese in a bowl.
  • Combine egg, onion powder and garlic in a separate bowl.
  • Dip chicken into egg mixture, and drag through the cheese nip/cheddar cheese mixture.
  • Place chicken in single layer close together in glass pan.
  • Bake uncovered 10 to 12 minutes or until no longer pink in the center, and the coating is crispy.
  • Serve with barbecue sauce, ranch dressing or ketchup if desired,.

Great Kid-friendly dish. Buttery Crushed Cheese Nips really make this dish. Plus, can be put together in no time.

1/2 cup butter, melted
10 ounces cream of chicken soup
8 ounces sour cream
1 teaspoon salt
1 teaspoon pepper
8 ounces cheddar cheese, shredded
2 lbs frozen hash browns, thawed
1/4 cup chopped onion
2 cups crushed cheese nips (or other cheese flavored crackers)
1/4 cup butter, melted

Steps:

  • Preheat oven to 350 degrees F.
  • Mix all of the casserole ingredients together.
  • Put into a large baking dish.
  • Mix cheese nips and 1/4 cup melted butter together.
  • Spread on top of casserole.
  • Bake for 45 minutes.

Delicious crackers, just like the commercial "CheezIts" or "Cheese Nips". These are gluten-free from Bette Hagman's, "The Gluten-Free Gourmet".

Number Of Ingredients 8

8 ounces cheddar cheese
2 tablespoons butter
1 large egg
1/2 teaspoon salt
1/8 teaspoon ground pepper
3/4 cup rice flour
1/4 cup potato starch
1 teaspoon xanthan gum

Steps:

  • Preheat oven to 400 degrees F.
  • Grate the cheese (you should have approximately 2 cups).
  • Set aside.
  • Place butter in bowl of mixer and beat until creamy.
  • Add egg, salt, and pepper.
  • Beat until blended.
  • Beat in cheese one-third at a time until completely combined.
  • Stir in flours and xanthan gum until thoroughly blended.
  • Work the dough into a ball.
  • If dough doesn't stick together, add cold water, 1 T at a time, until a ball can be formed.
  • Don't worry about overworking.
  • Divide dough in half.
  • Place one half on a baking sheet, cover with plastic wrap, and roll out as thin as possible.
  • Repeat with the other half.
  • Sprinkle with salt, if desired, and cut with a pastry wheel into 1-inch squares.
  • Bake for 4 to 6 minutes, until deep golden.

This recipe is from my cousin, Trudy. We have every Thanksgiving and Christmas, when our families get together. However, I do carry it to church functions all year long. I always get compliments on it. Hope you enjoy!!! By the way, a short cut would be just to mix all the vegetables into the cheese mixture and bake(not layering), then topping with the crushed crackers

1 box cheese crackers (Better Cheddars or Cheese Nips)
2 (10 ounce) packages chopped broccoli, cooked and drained
1 can leseur garden peas, drained
1 can cream of mushroom soup
1 cup mayonnaise
1 teaspoon salt
1 teaspoon pepper
1 cup shredded cheddar cheese
1 medium onion, chopped
2 eggs, beaten

Steps:

  • Preheat oven to 350 degrees.
  • Grease 2 quart or 9 x 13 casserole dish.
  • Crush enough cheese crackers till very fine and you have 1 1/2 cup.
  • (I crush in a zip lock bag, using my grandmother's rolling pin.) Layer ½ broccoli, ½ garden peas, ½ cheese mixture.
  • Repeat these layers.
  • Top with 1 ½ cup crushed cheese crackers.
  • Bake at 350 degrees for 30 minutes.
