CHEESE FRENCHEES DEEP FRIED GRILLED CHEESE

Steps:
- Place parchment paper on a cookie sheet.
- Lay out the bread and on each slice, spread mayonnaise until it has all been used, making it so that the sandwich will have mayonnaise on both slices for each sandwich.
- Add 1 1/2-2 slices of cheese to 4 slices of the bread. Place the lid on, mayonnaise side down.
- Cut each sandwich in quarters.
- In a pie dish, whisk together the eggs and milk.
- In another dish add the cracker crumbs.
- Dredge each quarter in the egg and then the crackers. Place on the cookie sheet and repeat with all sandwiches.
- Place in the fridge to rest for 1 hour.
- Fill a dutch oven 1/2-3/4 full of oil. Heat over medium high heat. Too low of heat and the breading will just fall off and you'll have soggy sandwiches.
- Cook 2-4 quarters at a time, about 1-2 minutes per side until golden and the cheese is melted.
- Remove from the oil to a paper towel lined plate or a cooling rack over a paper towel lined baking sheet.
- Serve with ketchup or we prefer honey mustard.

CHEESE FRENCHIES
Cheese Frenchies- a deep-fried grilled cheese sandwich that's ultra crispy on the outside and gooey on the inside. Could anything be better? It's pure cheese heaven!

Steps:
- Line a rimmed baking sheet with parchment paper.
- Place the Ritz cracker crumbs in a shallow dish.
- Whisk the eggs and milk together in a medium bowl.
- Spread 1 tablespoon of mayonnaise on one side of each slice of bread.
- Place 1 1/2 slices of cheese on top of 4 slices of bread, placing it directly on the mayonnaise.
- Place the other 4 slices of bread, mayonnaise side down, on top of the cheese to form 4 sandwiches. Cut each one diagonally into quarters.
- One at a time, dip each sandwich quarter in egg mixture and then coat in the cracker crumbs.
- Place on parchment paper and refrigerate for 1 hour.
- Pour 2 inches of oil into a Dutch oven.Heat oil to 375 degrees.
- Working in batches, fry the sandwich quarters for 2 to 3 minutes, flipping over halfway through.
- Transfer to a paper towel-lined plate.

FRIED CHEESE SANDWICH

- Heat a frying pan on Medium heat. Melt butter in pan. Turn pan to low heat (setting 2 works best for us, however you decided on what is best for your stove) Place slice of bread into pan and swirl it around until it is thoroughly coated in butter. Place two slices of cheddar cheese on top as shown in photo. Cook until bread is a nice golden color. Flip sandwich over so that cheese is now touching the pan with the bread on top. Allow cheese to melt. When the edges of the cheese turn a dark golden color it is ready. This may take 3 or 4 minutes. Remove from pan and place on plate bread side down. Cheese should be crispy on the outside and gooey on the inside.

Petite deep fried cheese sandwiches that were served in the King's Food Host restaurants in Omaha and Lincoln Nebraska. I got this recipe from a friend of mine who worked at King's in the 1960's.

- Prepare 3 sandwiches, using mayonnaise and 2 slices of cheese for each. Cut the crusts off the sandwiches. Cut each sandwich diagonally both ways, making 4 triangles.

- 1. For frenchies...Cut crusts off bread and spread mayonnaise to taste on one side of each bread slice. Place one slice of cheese between two slices of bread. ****NOTE: USE ONLY AMERICAN CHEESE. Cut each sandwich diagonally to make 4 triangles. Best Secret Tip. If you freeze them overnight,the bread asorbs some of the mayonnaise..it helps to firm them up. Try it with and without freezing.. see what you think.
- 2. For batter,combine beaten egg, milk,salt and flour. Dip each triangle in batter, then dip in crushed cornflakes as needed.
- 3. Heat oil to 375 degrees, in your fryer. Fry Frenchies untill browned, but not burned. Serve with catsup and a dill pickle on the side. Chow down...and enjoy this special treat from the past!
- 4. Variation: For Tuna Frenchies, substitute cheese with canned,drained tuna mixed with a wee bit of mayonnaise and salt. The mayonnaise will hold the tuna together. Follow the above recipe. I have made these with canned salmon.. and served hot at a graduation part They looked so pretty on a tray, decorated with parsley sprigs and radish roses.
