nonstick cooking spray
3 cups dried elbow macaroni, 12 ounces
3 cups shredded swiss cheese, 12 ounces
2 1/2 cups shredded gruyere cheese, 10 ounces
5 tablespoon flour
3 /4 tsp. garlic, minced
2 cups chicken broth
3/4 cup dry white wine
salt
ground black pepper
8 ounces swiss cheese, cubed
1 3/4 cups crushed saltine crackers, 36 crackers
3 tablespoons butter, cut up

Steps:

  • 1. preheat oven to 350°. Coat a 3 quart casserole with cooking spray; set aside. Cook macaroni according to package directions; drain. Return macaroni to pan; set aside.
  • 2. Meanwhile, in a large bowl combine shredded Swiss cheese, Gruyere cheese, flour, and garlic. Toss to mix. In a large pan heat broth and wine over medium heat just until bubbles form around edge of pan. Add cheese mixture, 1 cup a time, whisking constantly until cheese melts. Do not boil. Remove from heat. Season to taste with salt and pepper.
  • 3. Pour cheese mixture over macaroni; stir gently to combine. Fold in cubed Swiss cheese. Spoon pasta mixture into prepared casserole. Sprinkle crushed crackers evenly over top; top with butter. Bake, uncovered, for 35 to 40 minutes or until bubbly and topping is golden. Makes 10 to 12 servings. Note: for best results, shred the cheese just before using. Purchased pre-shredded cheese does not melt as well

This is a very economical casseroles, and now adays who isn't on a budget? ??LOLOL You can make it just with the cheese, or if you want to elaberate a little you can add in 2 cups of cooked shrimp. I'm not sure where the receipe came from, when I got married all of my friends got together and each one wrote their favourite receipe and placed in a hand make wooden receipe box, so would keep as a memory. I still have that little receipe box after 31 yrs and treasure it dearly.

10 slices white bread
6 eggs
3 cups milk
2 tablespoons of chopped parsley
1 teaspoon dry mustard
1/2 teaspoon pepper (or to taste)
1 teaspoon salt (or to taste)
1/4 teaspoon nutmeg (just a dash)
2 cups shredded sharp cheddar cheese
3 tablespoons finely chopped onions
2 teaspoons finely chopped garlic cloves

Steps:

  • Heat oven to 325º.
  • Remove crusts from bread, cut into cubes.
  • Beat eggs, milk, and seasonings with beater.
  • Stir in bread cubes, cheese andon onion,and garlic. Pour into ungreased baking dish .
  • Bake uncovered for 1 hour or til center is set. Serve immediately.

3 cups cubed French bread
3 cups cubed cooked ham
1/2 lb cheddar cheese, cut in 1 inch cubes
3 tablespoons flour
1 tablespoon dry mustard
3 tablespoons melted butter
4 eggs
3 cups milk
salt (if using mild ham)
pepper
red pepper

Steps:

  • Mix bread, ham and cheese in a large mixing bowl with lid, or big ziplock.
  • Mix flour and mustard. Sprinkle in the ham mixture and toss.
  • Pour into a greased 9x13 dish.
  • Pour butter on the mixture and toss.
  • Beat eggs with milk and seasonings.
  • Pour over dry ingredients.
  • Cover and chill at least 4 hours (Overnight is better).
  • Bake uncovered at 350 º for 1 hour until puffed and golden. Serve at once.
