1 1/3 cups all-purpose flour
1/2 teaspoon salt
6 tablespoons cold butter, cut into bits
2 tablespoons cold Crisco, cut into bits
1 large onion, sliced thin
2 tablespoons butter
3 ounces blue cheese, crumbled
1 cup half-and-half
3 large eggs, beaten lightly
3/4 cup firmly packed grated cheddar cheese
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • For crust: Preheat oven to 400F.
  • Combine flour and salt and cut in butter and Crisco until mixture resembles coarse meal.
  • Add 3 tblsps ice water and combine until it forms a ball.
  • Flatten into a 6 inch disk and chill it, wrapped in plastic wrap, for 1 hour.
  • Roll out to 1/8 inch thick on lightly-floured surface and fit into a 9 inch tart pan.
  • Trim edge and prick all over with a fork.
  • Bake in middle of oven for 10 minutes.
  • Let cool.
  • Maintain oven temperature.
  • For filling: Cook onion in butter over moderately-low heat until softened.
  • Mash blue cheese with half and half and stir in eggs, Cheddar, onion and salt and pepper to taste.
  • Pour into shell and bake for 10 minutes.
  • Reduce oven temperature to 350F and bake 25 minutes longer.

1/4 teaspoon salt
6 tablespoons unsalted butter, chilled and cut into 1/4-inch pieces
2 tablespoons lard or vegetable shortening, chilled and cut into 1/4-inch pieces
3 to 5 tablespoons ice water
1 tablespoon butter, softened
2 tablespoons vegetable oil
1/2 cup finely chopped onions
1/8 teaspoon paprika
1/4 pound imported Swiss Gruyere cheese, coarsely grated (about 1 cup)
1/4 pound imported Swiss Emmentaler cheese, coarsely grated (about 1 cup)
2 eggs
1/2 cup light cream
1/2 cup milk
1/4 teaspoon salt
1/8 teaspoon ground nutmeg, preferably freshly grated

Steps:

  • Make the pastry shell: In a large chilled bowl combine the flour, salt, chilled butter, and the lard or vegetable shortening. Blend together until the mixture resembles coarse meal.
  • Pour 3 tablespoons of ice water over the mixture. Toss together lightly and gather the dough into a ball. Add more water until dough holds together. Wrap in plastic and refrigerate at least 1 hour before using.
  • Preheat the oven to 400 degrees.
  • On a lightly floured surface, roll the dough into a 14-inch round, about 1/8-inch thick. Place the dough in a 9-inch tart pan. Gently press it into the bottom and around the sides of the pan, being careful not to stretch the dough. Trim off the excess dough by rolling the pin over the rim of the pan.
  • Line the inside of the tart shell with aluminum foil and fill with beans or pie weights. Blind bake in the middle shelf of the oven for 10 minutes. Remove foil, prick the dough all over with a fork and return to the oven for an additional 10 minutes, or until the shell begins to brown.
  • Make the filling: Preheat the oven to 350 degrees. In a heavy 6 to 8-inch skillet, heat the oil over moderate heat until haze forms above it. Add the onions and cook for about 5 minutes, stirring frequently, until they are soft and transparent but not brown. Stir in the paprika and set aside off the heat.
  • In a bowl toss together the Gruyere and Emmentaler cheese until thoroughly combined. Spread half the cheese evenly in the baked pastry shell and scatter the onions over it. Cover with the remaining cheese.
  • Beat the eggs cream, milk, salt, and nutmeg together with a wire whisk and pour the mixture slowly and evenly over the cheese.
  • Bake in the upper third of the oven for 10 minutes. Increase the heat to 425 degrees and bake for an additional 15 minutes, or until the filling has puffed and browned and a knife inserted in the center comes out clean. Remove pan from the oven and remove the tart from the pan.
  • Serve hot or at room temperature as a first or main course.

SPRING ONION, PEA & PANCETTA TART

320g sheet all-butter ready-rolled puff pastry
8 spring onions
1 tsp olive oil
100g smoked pancetta, cut into cubes
200g soft cheese
handful of mint, basil, parsley or chives (or use a mixture), chopped, plus extra whole leaves to serve
1 egg yolk
25g parmesan, finely grated
1 heaped tsp Dijon mustard
100g frozen peas, defrosted

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Unravel the sheet of puff pastry on its baking parchment and slide onto a large baking tray. Score a border about 1cm from the edge all the way around the pastry, being careful not to cut all the way through. Prick the middle all over with a fork, then bake for 15 mins until puffed up and golden. Tip the spring onions onto a small baking tray, drizzle with the oil and season. Roast these alongside the pastry for the final 5 mins of cooking time.
  • Meanwhile, cook the pancetta in a small frying pan set over a medium heat until golden. Remove from the heat and set aside to cool.
  • Mix the soft cheese, chopped herbs, egg yolk, half the parmesan and the mustard together and season well. Gently squash the middle of the tart base down using the back of a spoon, then spread over the soft cheese mixture. Scatter the defrosted peas and pancetta over the soft cheese mixture, then arrange the roasted spring onions on top. Sprinkle over the remaining parmesan and return to the oven for 10 mins. Scatter with the remaining whole-leaf herbs, then slice and serve.

200g plain flour , plus extra for dusting
100g butter , chopped
50g Beaufort (or mature cheddar ), finely grated
25g butter
bunch spring onion , sliced
200g frozen pea
150ml milk
3 large eggs
200g crème fraîche
good grating of nutmeg
100g Beaufort (or mature cheddar ), grated

Steps:

  • Heat oven to 200C/180C fan/gas 6. To make the pastry, tip the flour and butter into a food processor, and pulse until the mixture resembles fine breadcrumbs. Add the cheese and pulse to combine. Add 2-3 tbsp cold water and mix to a firm dough.
  • Tip the dough out onto a lightly floured surface and knead briefly. Roll out and line a 30 x 20cm rectangular tin (or a 26cm round flan tin) - no need to trim the pastry edges. Chill for 15 mins, then line with baking parchment, fill with baking beans and blind-bake for 10 mins. Remove the parchment and beans, and bake for a further 10 mins until biscuity brown. Trim off excess pastry using a small sharp knife.
  • Reduce oven to 180C/160C fan/gas 4. Melt the butter in a frying pan, add the spring onions and gently fry for a couple of mins until softened. Add the peas, season and cook gently, stirring occasionally, for a further 5 mins. Tip into the food processor with the milk and work to a purée.
  • Beat the eggs in a large bowl, then beat in the crème fraîche, nutmeg, half the cheese, the pea purée and seasoning. Pour into the pastry case and sprinkle with the remaining cheese. Bake for 25-35 mins until the filling is firm and lightly browned.

4 large filo pastry sheets, halved
3 tbsp olive oil
9 fat spring onions , sliced into 2.5cm lengths
2 garlic cloves , finely chopped
1 tsp Dijon mustard
250g crème fraîche
2 medium eggs
140g soft rindless goat's cheese , broken into pieces
25g blanched hazelnut , chopped

Steps:

  • Put a baking sheet in the oven, then heat to 200C/180C fan/gas 6. Brush the filo with 2 tbsp of the oil and use to line a 23cm round, loose-bottomed tart tin. Layer the sheets at different angles so that the base and sides are well covered, and allow the pastry to drape over the sides.
  • Put 1 tsp more oil in a pan, add the spring onions, garlic and some seasoning, then fry for a couple of mins to soften. Remove from the heat.
  • Whisk together the mustard, crème fraîche and eggs. Season well. Scatter half the spring onion mix and half the goat's cheese over the pastry base, pour over the egg mix and top with the remaining cheese and spring onions. Sprinkle over the hazelnuts, then fold in the overhanging pastry and brush with the remaining oil.
  • Bake the tart on the heated baking sheet for 25-30 mins until the filling is set and the pastry is golden. Carefully remove from the tin before slicing.

This savoury make-ahead tart has a delicious crumbly base - no one will realise it's shop-bought pastry! Fill with goat's cheese and beautiful spring veg including asparagus and fresh peas

500g block shortcrust pastry
plain flour , for dusting
25g mature cheddar , finely grated
200g asparagus spears , woody ends trimmed
100g fresh podded or frozen peas
2 eggs
100g crème fraîche
150g double cream
whole nutmeg , for grating
100g watercress
300g or 2 logs of soft, rindless goat's cheese

Steps:

  • Roll the pastry out into a rectangle on a work surface lightly dusted with flour. Scatter over the cheese, fold the pastry in half and roll out again into a circle that fits a 25cm tart tin with an overhang. Chill for 20 mins. Meanwhile, cook the asparagus in boiling water for 3 mins, then drain and refresh under cold water. Cook the fresh peas the same way for a minute, or simply defrost the frozen peas.
  • Heat oven to 200C/180C fan/gas 6. Prick the base of the tart well with a fork, line with baking parchment and fill with baking beans. Bake the tart for 30 mins, remove the parchment and beans, prick again if it has puffed up, then bake for another 10-15 mins until biscuit brown.
  • Meanwhile, beat the eggs in a bowl, add the crème fraîche and cream, season and add a pinch of freshly grated nutmeg. Scatter the peas and most of the watercress over the tart and crumble over half the goat's cheese. Pour over the creamy egg mixture, then lay the asparagus spears on top. Finally, slice the remaining goat's cheese and arrange on top, then bake for 25-30 mins until the custard is just set and the cheese is golden brown. Leave to cool in the tin, trim the edges of the pastry, then remove from the tin, scatter with the remaining watercress and serve cut into slices. Can be made up to a day ahead, leave out the fridge to keep the pastry crisp.

140 g flour
10 ml baking powder
5 ml sugar
2 ml salt
75 g butter, at room temperature
125 ml milk
25 g butter
25 ml oil
3 large onions, chopped
125 ml cream or 125 ml milk
1 egg
100 g cheese, grated

Steps:

  • Preheat oven to 220 degrees celcius.
  • Grease a 22cm diameter pie dish.
  • Base:.
  • Sift together the flour, baking powder, sugar & salt.
  • Rub the butter into this mixture until it resembles fine crumbs.
  • Add the milk and mix to form a soft dough.
  • Use a spatula and spread the dough onto the bottom and sides of the pie dish.
  • Set aside until the onion mixture is ready.
  • Filling:.
  • Add the oil to a large frying pan and saute the onions until soft.
  • Cool slightly, then add the onions to the unbaked base.
  • Add the eggs to the cream/milk and mix.
  • Pour this mixture over the onions.
  • Lastly sprinkle the grated cheese over the top.
  • Bake for about 20 minutes and serve warm.
