Cheerios™ Banana-Raisin Muffins image

A Cheerios™ Challenge recipe! Turn whole-grain cereal and fruit into moist and delicious muffins for a nutritious breakfast on the move!

2 cups Cheerios™ cereal
3/4 cup Gold Medal™ all-purpose flour
1/2 cup Gold Medal™ whole wheat flour
1/3 cup packed brown sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
1 cup mashed very ripe bananas (2 to 3 medium)
2/3 cup buttermilk
2 tablespoons canola oil
2 egg whites
1/2 cup raisins or sweetened dried cranberries

Steps:

  • Heat oven to 400° F. Spray 12 regular-size muffin cups with cooking spray, or grease bottoms only of muffin cups. Place cereal in food-storage plastic bag; slightly crush with rolling pin to make 1 1/2 cups.
  • In large bowl, mix cereal, flours, brown sugar, baking powder and baking soda. Stir in remaining ingredients just until moistened. Divide batter evenly among muffin cups.
  • Bake 18 to 22 minutes or until golden brown. Let stand about 2 minutes in pan, then remove from pan to cooling rack. Serve warm if desired.

1/2 cup whole wheat flour
1/3 cup brown sugar, packed
1 teaspoon baking powder
3/4 teaspoon baking soda
1 cup mashed very ripe banana (2 to 3 medium)
2/3 cup buttermilk
2 tablespoons canola oil
2 egg whites
1/2 cup raisins or 1/2 cup dried sweetened cranberries

Steps:

  • Heat oven to 400°F
  • Spray 12 regular-size muffin cups with cooking spray, or grease bottoms only of muffin cups.

We have an abundance of cheerios at our house right now, so I had an urge to make something out of them. I found this recipe for muffins at Cheerios.com. very yummy! I didn't use the oil though because the muffins had all the applesauce in them. It still turned out good.

  • Stir together eggs, vanilla, 1 cup of the brown sugar, and 3/4 cup of the butter in a large bowl until well combined. Add flour mixture; stir just until combined. Mash bananas with a fork in a medium bowl until mostly smooth. Gently fold mashed bananas and 3/4 cup of the walnuts into batter. Divide batter evenly among 15 lightly greased or paper baking cup-lined muffin cups.
  • Stir together remaining 1/2 cup Cheerios; 1/4 cup each of the flour, brown sugar, and walnuts; and 1/4 teaspoon cinnamon in a medium bowl. Stir in remaining 1/4 cup butter until combined. Sprinkle Cheerios mixture evenly over batter. Bake in preheated oven until a wooden pick inserted in center of muffins comes out clean, 18 to 20 minutes. Cool in muffin pans on a wire rack 5 minutes.
