I had a bunch of pears that needed used up and I make this recipe with apples so I substituted pears for the apples.

Steps:
- 1. Defrost pie shell. Preheat oven to 425. Peel, core and slice pears. Toss with lemon juice. Add cornstarch, sugar and salt to pears and toss until coated. Place in pie shell.
- 2. In small bowl add cheese, flour, sugar and salt. Stir together. Add melted and cooled butter and stir with a fork. Add to top of pears in an even layer.
- 3. Bake for 25-35 minutes until golden brown. I place pie on cookie sheet (in case it bubbles over)
- 4. Cool on wire rack. I prefer it cooled completely, but my husband likes it warm with vanilla ice cream.
- 5. After you place pie on rack, sprinkle with handful of cheese. It will melt with residual heat.
CHEDDAR CHEESE PIE
I cut this recipe off a package of Kraft shredded cheddar cheese about 40 years ago and it is still one of my favorites. You can't find it on their website ;-(

Steps:
- 1. Toss cheese with flour (keeps it from sinking to the bottom). Add eggs, milk, ham and seasonings, mix well. Bake at 350 degrees 1 hour or until set. Garnish with parsley or pimento strips, if desired.
- 2. I like to serve it with fresh fruit and muffins.
PEAR AND CHEDDAR CRISP
An unusual combination but very good. Peeled or unpeeled pears of any type will do.

PEAR CHEDDAR CHEESE CRISP
I found a recipe a couple years ago for a Pear Pie with Cheddar Cheese crumb crust. In a hurry one day I adapted the recipe to make just a crisp. In winter when I could only find canned pears I tried it & while the pears are a little softer it's still very tasty. Serve with vanilla ice cream or whipped cream.

DETHBERT'S PEAR PIE
I've made these pies 4 or 5 times at this point, and I still can't decide if they are merely interesting or the greatest thing ever. I will update this after the 10th making. If you are unfamiliar with pears, read up on them. Usually they need to ripen for several days once they've been purchased from the store.

Steps:
- Sift flour, sugar, and salt into a mixing bowl. Stir grated Cheddar cheese into the flour mixture using a fork. Stir in butter using a wide spoon until mixture becomes crumbly. Set topping mixture aside at room temperature.
- Preheat the oven to 400 degrees F (200 degrees C). Place pie crusts in their tins onto a baking sheet to catch drips; place crusts 1 inch apart.
- Sift sugar, cornstarch, and salt into a small bowl. Place pears in a large mixing bowl. When oven is hot, sprinkle sugar mixture over pears and stir to combine. Pour filling evenly into the 2 pie crusts. Divide topping mixture in half and add to the top of each pie in 4 to 6 dollops; use a wide knife to spread evenly.
- Bake on the middle rack of the preheated oven for about 18 minutes; the pears will produce a lot of liquid and will bubble over. Check pies and cover with aluminum foil if crust or topping is getting dark. Bake about 7 minutes more.

Steps:
- Preheat oven to 450 degrees F (230 degrees C). Place a baking sheet on the bottom oven rack.
- Combine sugar, flour, salt, cinnamon, and lemon zest in mixing bowl. Roll out half the pastry and line a 9-inch pie pan.
- Arrange pear slices in layers in the pastry-lined pan, sprinkling the sugar mixture over each layer. Dot with butter and sprinkle with lemon juice.
- Roll out remaining dough for the top crust. Use your finger dipped in a small bowl of water to moisten the rim of the bottom crust. Place top crust over filling, and trim edge using kitchen shears or a sharp paring knife. Fold edge under bottom crust, pressing to seal. Flute edge. Cut slits in top crust to allow steam to escape.
- Bake in the preheated oven on the baking sheet for 10 minutes. Reduce oven temperature to 350 degrees F (175 degrees C), and bake until crust is golden brown and filling is bubbly, 35 to 40 minutes longer. Allow to cool several hours before serving.
