JOHNNY MARZETTI CASSEROLE
Johnny Marzetti is a classic ground beef casserole with egg noodles, tomato soup, veggies and cheese -- all baked into one delicious comfort food dish!

Steps:
- Heat a large skillet or Dutch oven over medium-high heat. Brown beef, sausage, bell pepper, and onion in the skillet; drain. Season with salt and pepper, to taste. Add tomatoes (with juice), crushing them slightly with a wooden spoon, condensed soup, brown sugar, dry mustard, and garlic powder. Simmer over very low heat for about 30 minutes.
- Meanwhile, cook egg noodles according to package instructions. Drain well.
- Preheat oven to 350 degrees F. Spray a large rectangular baking dish with cooking spray and set aside.
- After beef mixture has simmered for 30 minutes, stir in mushrooms and olives. Remove from heat and toss with the cooked noodles.
- Transfer mixture to prepared baking dish. Sprinkle with cheese. Bake for 20 minutes, or until heated through and bubbly.

JOHNNY MARZETTI CASSEROLE
Kids love this buffet-ready casserole dish. My mother-in-law used to make a simpler version of this for my husband when he was growing up. This version pushes the flavor profile a bit. I prefer to have this dish sit overnight before baking as the flavors improve and the pasta absorbs some of the sauce so the consistency is just right.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add pasta and cook until just al dente, 6 to 8 minutes; drain. Run cold water over the pasta to stop pasta from cooking further. Set aside.
- Meanwhile, cook the ground beef and sausage until completely browned and crumbled, 7 to 10 minutes. Mix in the onion, celery, garlic, and pepper; continue to cook and stir another 5 minutes. Season with salt and pepper. Remove from heat and stir in tomatoes and tomato sauce. Allow to cool five minutes.
- Lightly grease a large casserole dish. Spread the pasta over the bottom of the dish. Sprinkle the Italian cheese blend over the pasta. Pour the meat mixture over the pasta and cheese. Cover dish with heavy aluminum foil. Bake in preheated oven for 45 minutes; remove foil and sprinkle Cheddar cheese evenly over the casserole. Continue baking until Cheddar cheese has melted, about 5 minutes. Rest for 10 minutes before serving.

GRANNY'S FAMOUS MARSETTI
I have no idea where this recipe originally came from. It's one of those strange concoctions that you try to describe to people and, well, they just never understand... until they TASTE it. This is a family recipe my great grandmother - aka Granny - used to make for my cousins and me. It is the ultimate comfort food and I rarely make it because I can't stop eating it!

Steps:
- Preheat oven to 350 degrees.
- Brown beef well, then drain.
- Saute onion in 1 tbs. butter until clear.
- Combine beef, onion, and remaining ingredients in large sauce pan. Simmer for 20 minutes.
- Meanwhile, break spaghetti into 2 " pieces and cook according to package directions. Drain and put in a roasting pan.
- Pour sauce over spaghetti. Mix together and bake at 350 for 30 to 45 minutes before serving.
- Top with parmesan cheese and chow mein noodles. Serve with rye bread (because when you taste it, it will make sense.).

- In a large pot with boiling salted water cook pasta until al dente. Drain.
- Meanwhile, in a large skillet cook ground beef until no pink remains. Add onions and celery and cook until they are softened. Add salt and pepper to taste. Stir in tomato soup, tomato sauce, and water. Simmer for 10 minutes.
- In a casserole dish, mix together the cooked and drained pasta with the meat mixture.
- Bake in a preheated 350 degree F (175 degree C) oven for 20 to 30 minutes. Sprinkle the top with grated Cheddar cheese and continue to cook until cheese is melted, about 3 to 5 minutes.

ALMOST MARZETTI'S SLAW DRESSING
Did you ever just start cooking without really having a clue where you were going to end up? My kids have gotten used to it by now. "Mom, what's for dinner?" "I don't know, it's not DONE yet. Let's wait and see what it turns out to be, okay?" Sometimes I let them name it. I really had absolutely NO idea how this would taste, but sometimes I come up with pretty decent stuff that way. Over the Memorial Day weekend, I thought I'd just whip up some coleslaw to go with my Bobbie-Q Beef (recipe for that may follow...eventually) But instead of reaching for a coleslaw recipe in a cookbook, I whipped out my handy-dandy Palm Pilot (how did I EVER get along without it?) and looked up the recipe for "Amish Macaroni Salad." I took that as my leaping-off point. First, I changed it from Miracle Whip to mayonnaise, then reduced the sugar. Also I added the celery salt, because, well, if it's good enough for a Chicago Style Hot Dog, it's good enough for me. Turned out that it tasted almost-but-not-quite exactly like Marzetti's Brand Slaw Dressing which comes in a glass jar from Your Grocer's Refrigerator Case. Which I just happen to like, so it was a good thing. Hope you give this a try.

Steps:
- Combine mayonnaise, sugar, vinegar and mustard in bowl and mix thoroughly until sugar is completely dissolved.
- Using a large and very sharp chef's knife, slice cabbage into shreds fine shreds.
- Thinly slice or shred carrot and combine with cabbage in bowl.
- Sprinkle lightly with celery salt and toss.
- While stirring, pour just enough dressing over the prepared vegetables to moisten them nicely.
- (After it sits a while, there will suddenly be more liquid in the bowl than you thought there was- it will come off the veggies. So don't overdo the dressing. You can always add more later if need be.) Cover and chill.
- Refrigerate unused portion of dressing for later use.
