I adopted this recipe, and after playing with the recipe, I have adapted it slightly (on July 7, 2005) to include a little less butter.

Steps:
- All the ingredients should be at room temperature before starting this recipe.
- Whip slowly, in a medium mixing bowl, with the mixer until the mixture is fluffy. I also have mixed it well by hand, but room-temp ingredients are KEY to do that.
- Spread on bread slices. (Rye, Sourdough or regular French Bread are great.) Toast under the broiler until hot.

HOLIDAY CHEDDAR SPREAD
This cheddar spread was a hit! All the taste testers said it's the beer that makes this dip so good. - 1. In a large bowl or in food processor, combine softened cream cheese and butter until thoroughly blended.
- 2. Add pinch pepper and just enough liquid (beer, non-alcohol beer or white wine) to make the cream cheese mixture fluffy.
- 3. Add grated old Cheddar cheese and combine thoroughly. You may need to add just a bit more liquid so that it retains nice texture, but not to worry if it's a bit thick and heavy. It still tastes great!
- 4. Add onion, but combine only until blended in. If using food processor, pulse on/off a couple of times, but do not overwork or onion taste can become overwhelming.
- 5. Spoon into a bowl and sprinkle with a parsley sprig or some paprika so that it looks pretty. Remove from fridge about 20 minutes before serving. Serve with crackers.
CANADIAN SHARP CHEDDAR CHEESE SPREAD
Attention, cheese lovers! This may be the best cheese spread you've ever had! My friend's mother gave me this recipe over 15 years ago. I always make it around the holidays, or for football and hockey game nights. Everyone begs for this recipe. Turn this into a pub spread by adding a half cup of your favorite dark ale. Use brick cream cheese for a spread, or spreadable cream cheese for a dip. Serve with crispy crackers, toast, or bagels.

- Place cream cheese and cold pack Cheddar cheese in a microwave-safe bowl; slice cheese into chunks with a knife. Microwave cheese in 30-second intervals on high just until softened, stirring between intervals.
- Stir red onion, Worcestershire sauce, black pepper, paprika, and hot sauce into cheese mixture with a fork until evenly combined; spoon into an airtight container and refrigerate, 8 hours to overnight.
- Remove cheese spread from refrigerator about 30 minutes before serving.

WHIPPED CHEDDAR BUTTER
Inspired by the butter served at a local steakhouse and underwhelmed with the few recipes found online, I concocted the following for my sweetie on his birthday and served this butter with homemade pretzel rolls.

- Bring the butter and cheese spread to room temperature.
- In a medium-sized bowl, whip the room-temperature butter with a hand mixer on high until pale yellow and doubled in size, about three minutes.
- Add one tablespoon room-temperature cheese spread into the whipped butter. Whip on high until completely incorporated, about a minute. Make sure you then scrape down the sides.
- Add the second tablespoon of cheese spread, then whip on high until incorporated for about a minute. Scrape down the sides and whip some more for another thirty seconds or so. The final mixture should be a very pale orange.
- Place mixture into an airtight container and keep refrigerated. Remove from fridge 15 minutes before serving to experience optimal spreadability.
- NOTES: To reduce the saltiness, you may opt to exchange the salted butter for unsalted. To enhance the cheddar flavor, you can add another tablespoon of cheddar spread (though I'd highly recommend you use unsalted butter). Lastly, if you struggle finding sharp cheddar cheese spread at your local grocer, you can check Target (where I got mine--Wisconsin's Kaukauna brand) or any local gourmet grocery stores.
