  • Blend 1/3 cup feta, 2 tablespoons olive oil, 1 tablespoon each lemon juice, water and dill, 1 small grated garlic clove, and salt and pepper to taste in a mini food processor. Toss with 1 chopped romaine heart, 1 small chopped cucumber, 5 chopped radishes, 1 drained can chickpeas, 2 chopped celery stalks, and 1/3 cup each thawed frozen peas and toasted sliced almonds. Season with salt and pepper.

Chasen's Restaurant is well known as a part of Hollywood history, however, it's fame was broader than that. Every American president since 1945 (until the restaurant closed in 1995) ate a Chasen's meal. Even though Franklin D. Roosevelt did not dine there, Eleanor did. It was the restaurant where Ronald Reagan courted Nancy Davis for two and a half years; and the place where he proposed. After Reagan became governor of California, and went on to became president, a special back door was installed at Chasen's just for them. Their favorite booth, where he proposed, is now in the Reagan presidential Library in Simi Valley, California. This chopped salad was a popular item during this era, and yet it seems very modern.

1 1/2 cups romaine lettuce, chopped
1 1/2 cups radicchio, chopped
1/3 cup hearts of palm, drained and diced

1/8 teaspoon white pepper

Steps:

  • Start with the dressing, in a jar dissiove the sugar, salt, pepper and English mustard in vinegar.
  • Add oils, lemon juce, Worcestershire, garlic, Tobasco and white pepper.
  • Cover and shake vigorously, chill until needed.
  • For the Salad.
  • Toss together the lettuces, hearts of palm, cucumber, artichokes and garbanzo beans in a large bowl,.
  • Add tomatoes and some dressing, to taste, and toss gently to combine.
  • Spoon salad onto four individual salad plates.
  • Garnish each serving with chopped hard-cooked egg and a sprinkle of chive.

1/2 cup mayonnaise
3 large scallions, trimmed and finely chopped (about 1/4 cup)

1/2 teaspoon onion powder
1/4 teaspoon garlic powder
Kosher salt (Diamond Crystal) and black pepper
3 romaine lettuce hearts (about 1 pound), trimmed and chopped into bite-size pieces
3 fresh ears of corn, shucked, kernels removed from cobs
8 radishes, halved lengthwise and thinly sliced into half-moons
2 large, ripe avocados, pitted and diced
5 scallions, trimmed and thinly sliced at an angle
1/2 cup crumbled Cotija (or grated Parmesan)
1 cup chopped cilantro, leaves and tender stems
2 cups crumbled lime tortilla chips (optional)

Steps:

  • Prepare the dressing: In a large measuring cup, whisk all the dressing ingredients together to combine. Season with ¾ teaspoon salt and ½ teaspoon pepper. (Makes 1 ¼ cups. It will taste quite salty at this point, and that is intentional. You want it to hold up when tossed with a big pile of vegetables.)
  • In a large shallow bowl or platter, toss the romaine with half of the following ingredients: corn, radishes, avocado, sliced scallions, Cotija and cilantro. Season to taste with salt and pepper. Add ½ cup dressing and toss to coat. Season again with salt and pepper.
  • Top with the remaining corn, radishes, avocado, scallions, Cotija and cilantro, scattering the garnishes on top or arranging them in stripes or piles. Sprinkle some crumbled tortilla chips on top, if using. Drizzle the salad with an additional 1/4 cup dressing, and serve immediately, serving any remaining dressing and additional tortilla chips alongside.

Like any good chopped salad, the lettuce here is in equal balance with the other ingredients, making this a great choice for those who are less than enthusiastic about leafy greens. Creamy feta and avocado mingle with briny olives and capers while cucumbers and finely chopped romaine provide crunch. Use this recipe as a template for making the most of ingredients you have on hand; radishes, cherry tomatoes or diced onion would all be welcome here. The same flexibility applies for the croutons: Stale bread works, of course, but even leftover hot dog buns, pita bread or oyster crackers become excellent little croutons when toasted in the oven.

1 (15-ounce) can chickpeas, rinsed
1 medium (or 1/2 large) English cucumber, halved lengthwise, seeded and diced
1/2 cup pitted Castelvetrano or other green olives, roughly chopped (about 3 ounces)
1/3 cup thinly sliced scallions (about 2 scallions)
2 tablespoons red wine vinegar
1 tablespoon drained capers, roughly chopped
1 tablespoon minced shallots
1/4 teaspoon Dijon mustard
1 firm-ripe avocado, halved, pitted and diced
3/4 cup diced or crumbled feta cheese (about 4 ounces)
1/4 cup chopped fresh herbs, such as dill, basil, mint or parsley, plus more for serving

Steps:

  • Heat the oven to 350 degrees. Place the diced bread on a sheet pan, drizzle lightly with olive oil and sprinkle with salt and pepper. Toss, then bake for 10 to 12 minutes, until well toasted. Set aside to cool.
  • Meanwhile, place the romaine pieces in a large mixing bowl, along with the chickpeas, cucumber, olives and scallions.
  • In a small bowl, whisk together 6 tablespoons olive oil with the vinegar, capers, shallots, mustard, 1/2 teaspoon salt and 1/4 teaspoon pepper and whisk well. Pour enough dressing over the salad to moisten; toss well. Add the avocado, feta and herbs and toss gently, adding more dressing to taste. Top with the croutons and a generous sprinkle of herbs and serve.

Number Of Ingredients 20

1 lemon
4 tbsp extra virgin olive oil
1 tsp Dijon mustard
1 tsp honey
10 cherry tomatoes (use a mixture of different colours, if you like)
1⁄2 cucumber
2 Little Gem lettuces
1 punnet of cress
100g pomegranate seeds
25g mixed seeds (we used sunflower and pumpkin seeds; see tip below)
chopping board
tea towel or kitchen paper (optional)
sharp knife
citrus juicer
tablespoon
teaspoon
jam jar or small bowl
large salad bowl
kitchen scissors
measuring scales

Steps:

  • Before you get started take a look at our chopping and knife skills guide. If your chopping board doesn't have anti-slip grips, lay a dampened tea towel or sheet of kitchen paper on the work surface, then place the board on top to stop it from slipping.
  • Holding the lemon with your hand in the bridge position, cut the lemon in half. Push one half onto a citrus juicer, twist and squeeze to release the juice. Repeat with the second lemon half. Pour the juice into a jam jar or small bowl along with the oil.
  • Add the mustard, honey and a good pinch each of salt and black pepper. Seal the jar and shake to combine, or whisk the ingredients together. Will keep covered in the fridge for up to a week.
  • Cut the tomatoes in half by pinching each one between your thumb and a finger and carefully slicing through the middle with a small serrated knife. Cut each piece in half again to make quarters, then tip the tomatoes into a large bowl.
  • Wipe down the chopping board, then cut the cucumber in half lengthways. Put the two halves cut-side down on the board so they don't roll around, then cut in half again along the length, so you have four chunky sticks of cucumber. Cut across the cucumber now to make little triangles, keeping your free hand in the claw position with your fingers tucked away from the blade of the knife. Tip the cucumber into the bowl with the tomatoes.
  • Cut the hard stalk off the lettuces, then cut each lettuce in half and in half again to get four wedges. Working with one lettuce wedge at a time, hold the wedge with your hand in the claw position and chop it into small ribbons - the smaller, the better for this salad. Repeat with the remaining wedges and tip the lettuce into the bowl.
  • Snip the cress straight into the bowl using kitchen scissors. Weigh out the pomegranate seeds using the scales and add these to the bowl. Repeat with the mixed seeds. Drizzle over roughly half of the dressing over the salad (you will have some leftover) and toss everything together to coat.

1/3 cup chopped bacon, cooked crisp
1/2 cup fresh mushrooms, sliced
1/2 tablespoon red wine vinegar
1/4 teaspoon Worcestershire sauce
fresh ground pepper, to taste
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dry English-style mustard
1/4 cup red wine vinegar
1/4 cup olive oil
1/2 cup vegetable oil
1 teaspoon lemon juice
1/2 teaspoon Worcestershire sauce
1 garlic clove, finely chopped
1/4 teaspoon Tabasco sauce
1/8 teaspoon white pepper

Steps:

  • Start by making the dressing, in a shaker (such as a jar) dissolve the sugar, salt, pepper and English mustard in vinegar.
  • Add in oils, lemon juice, Worcestershire, garlic, Tabasco and white pepper.
  • Cover and shake jar vigorously.
  • Set the jar aside or chill until needed.
  • For the salad, remove stems and wash spinach leaves in several changes of water until there is no trace of sand, dry well.
  • Clean mushrooms and cut off stems, thinly slice mushrooms.
  • Combine the red wine vinegar and Worcestershire sauce with the French dressing in a cup.
  • Place the spinach in a large bowl, tear the large leaves into smaller pieces.
  • Add the mushrooms, dressing and bacon.
  • Toss to mix, sprinkle with freshly ground pepper.
  • Serve on chilled plates.
  • Serve with Chasen's cheese toast.

1/3 cup extra-virgin olive oil
Salt and freshly ground black pepper
3 romaine hearts (about 1 pound), trimmed and torn into bite-size pieces
1 cup cherry tomatoes, halved
3/4 cup (about 6 ounces) chopped cooked bacon
3/4 cup thinly sliced cucumber
1/2 cup crumbled blue cheese or feta
1/4 cup thinly sliced scallions
1 ripe avocado, pitted, peeled and sliced
2 hard-cooked (or jammy) eggs, quartered

Steps:

  • Make the dressing: Zest the lemon into a small bowl, then halve the naked lemon and squeeze the juice into the bowl. Whisk in oil and season to taste with salt and pepper; set aside.
  • Put the romaine into a large bowl, then top with tomatoes, bacon, cucumber, blue cheese and scallions. Drizzle in about two thirds of the dressing, then toss until well coated.
  • Place sliced avocado and eggs on top of salad, and season lightly with salt and pepper (especially the avocado, which can take a lot of salt). Drizzle salad with remaining dressing, and serve.

1 red onion , very thinly sliced
100g radish , quartered
1 tbsp toasted poppy seed
zest and juice 1 lemon
1 tbsp olive oil
1 tsp golden caster sugar
1 cucumber , halved lengthways, seeds scooped out, then sliced
250g pack cooked beetroot , chunkily diced
2 large carrots , coarsely grated
juice ½ orange
½ tsp ground cumin
340g can sweetcorn , drained well
1 red pepper , deseeded and diced
squeeze lime juice
2 quite ripe avocados , halved, peeled, stoned and diced
squeeze lime juice

Steps:

  • For the cucumber and beetroot, mix the poppy seeds, lemon zest and juice, oil and sugar. Tip half into a bowl with the cucumber, the other half into a separate bowl with the beetroot, and mix each.
  • Mix the carrot ingredients together, the corn ingredients together and the avocado ingredients together.
  • Pile the different elements in strips across a large platter. Cover and chill for up to 2 hrs, or serve straight away.
