- Prepare medium-hot fire in grill with a vegetable grill rack in place.
- Toss onions and garlic (if using) with olive oil.
- Grill onions and garlic, tossing frequently, until slightly charred (about 10 minutes).
- Season with salt & pepper.
- Serve hot.

- Heat gas grill to medium high, about 400F/204C. Spray grill basket with oil. (No grill basket? note 1)
- PREPARE ONIONS: Thinly slice onions about 1/4 inch thick (Note 3). Transfer sliced onions to grill basket sprayed with oil. Drizzle onions with oil. Sprinkle with salt, pepper and pinch of sugar. Toss to coat onions. Note 4 for optional seasonings.
- GRILL ONIONS: Lower heat to medium-low on one side of grill. Place grill basket with onions on part with lower heat. Close lid. Stir every 10 minutes for about 30 minutes or until onions are soft with as much char as you like. Increase heat to get more char if you like. Taste and adjust seasonings. (You can grill something else on the other side of the BBQ at the same time.). Serve warm or at room temperature as a side or condiment.

- Preheat oven to 300°. Halve onions through root ends (do not trim tops). Remove outermost papery layers from each onion.
- Heat a large cast-iron skillet over high. Add oil and swirl to evenly coat skillet. (Oil should shimmer and start to smoke almost immediately.) Add onion halves, cut sides down, nestling them close together. Reduce heat to medium-low and cook, undisturbed, until cut sides are blackened, 18–20 minutes. Surfaces will look and smell burnt.
- Transfer skillet to oven and roast onions until the innermost layers are no longer raw but are still rigid, 10–15 minutes. Remove skillet from oven and transfer onions to a large rimmed baking sheet, placing cut sides up.
- Let onions cool slightly, then trim papery tops with kitchen shears. Separate layers into individual petals; discard root ends (some center pieces may not curve, which is okay). Arrange petals in a single layer and season with salt.
