STRIP STEAK WITH SPICED SALT



Strip Steak With Spiced Salt image

Number Of Ingredients 10

Flaky sea salt or kosher salt
1 tablespoon coriander seeds
1 tablespoon black peppercorns
2 teaspoons paprika
2 teaspoons red pepper flakes
1 teaspoon dill seeds
1 clove garlic, minced
4 boneless New York strip steaks (12 to 14 ounces each)
Extra-virgin olive oil, for brushing
1 pound small tomatoes

Steps:

  • Preheat the oven to 250 degrees F. Line a baking sheet with foil. Spread 2 tablespoons salt, the coriander seeds, peppercorns, paprika, red pepper flakes, dill seeds and minced garlic in an even layer on the baking sheet and roast until the garlic is dry, about 30 minutes; let cool. Transfer to a spice grinder and pulse several times. (The spiced salt can be made up to 1 week ahead; store in an airtight container.)
  • Remove the steaks from the refrigerator about 1 hour before grilling to bring to room temperature; sprinkle each side with 1/2 teaspoon of the prepared spiced salt, then cover with plastic wrap and set aside.
  • Preheat a grill to high and prepare for indirect grilling: On a charcoal grill, bank the coals to one side; on a gas grill, turn off half of the burners. Wipe the salt off the steaks and pat dry; brush lightly with olive oil. Grill over direct heat until marked on the bottom, about 2 minutes, then rotate 90 degrees F and cook 2 more minutes. Flip the steaks and repeat on the other side, then transfer to the cooler side of the grill (indirect heat); cook 5 more minutes per side for medium rare. Transfer to a cutting board and let rest 5 to 10 minutes.
  • Meanwhile, grill the tomatoes over direct heat, turning, until marked, about 5 minutes. Serve with the steaks and the remaining spiced salt.

1 (10 1/2 pound) wild pig, cleaned
6 to 10 garlic cloves, sliced
6 to 10 sprigs fresh rosemary
1 cup olive oil, to rub
1 cup Italian seasoning
1 bottle sweet Chardonnay wine
Spray bottle
Salt and pepper

Steps:

  • Score the meat with a sharp knife about 1-inch deep. Push a slice of garlic and a sprig of rosemary into the sliced areas. Rub the entire roast with olive oil to coat. Shake on the Italian seasoning covering the entire roast.
  • On a hot charcoal or wood BBQ, place the meat on a rotisserie or on the grill. A dry, oak, wood base is the best. Put your sweet Chardonnay in the spray bottle and spray the meat every 10 minutes as it cooks. Char the outside of the roast, and the inside will cook.
  • Turn the meat every 20 minutes if not on a rotisserie. Cook the 10 1/2 pound roast for 2 1/2 hours.

Honey Ice Cream with Sugar Maple Smoked Sea Salt image

Dairy and smoked salt go together like rainbows and lollipops. Only better. The rainbow's beauty is nice, but one can only speculate at its flavor, and you outgrow lollipops. Homemade ice cream is another matter. Swapping the bright intensity of sugar for the dewy softness of honey lends gusto to the meteorological event happening in your mouth. The interplay of pungent salt amid the cream's frozen opulence of sweet smoke and vanilla bolsters the soul with prismatic beauty all its own.

Yield serves 4; makes about 1 quart

Number Of Ingredients 5

2 vanilla beans
3 cups half-and-half
1/2 cup aromatic honey, such as eucalyptus, avocado, or heather
4 extra-large egg yolks
2 two-finger pinches maple smoked sea salt

Steps:

  • Cut the vanilla beans in half lengthwise. Scrape out the seeds with a small spoon. Put the seeds and pods in a medium saucepan. Add the half-and-half and honey and stir to dissolve the honey. Heat over medium heat, stirring from time to time, just until tiny bubbles form around the edges of the pan, about 8 minutes.
  • Remove the pan from the heat and let the mixture steep, covered, for 1 hour. Remove the vanilla pods and discard. Mix in the egg yolks and cook over medium-low heat, stirring constantly, until lightly thickened and a thermometer reads 170°F, about 10 minutes. Remove from the heat.
  • Cover and refrigerate the ice cream batter until thoroughly chilled. Transfer to an ice cream maker and freeze according to manufacturer's instructions. Scoop directly from the ice-cream maker for soft serve, or store in a freezer for at least 1 hour for firmer ice cream.
  • Serve scoops sprinkled with a little smoked salt.
