Authentic Homemade Indian Chai image

An actually-authentic Indian Chai tea recipe, as made for me by my lovely Indian mother-in-law. Tea the Indian way is rich and milky, deeply coloured, steaming hot, flavourful and sweet.

Provided by Jennifer Pallian BSc, RD

Categories     Drinks

Time 6m

Number Of Ingredients 8

8 oz water
4 oz whole milk
granulated sugar (to taste (about 2 heaped teaspoons per serving, traditionally))
1 heaping tablespoon of black tea (empty out tea bags to make a tablespoon if you don't buy loose leaves)
4 cardamom pods (smashed with side of a knife)
small piece of cinnamon stick
1/4 " coin of fresh ginger
pinch of fennel seeds (about 10 seeds)

Steps:

  • Bring water and milk to a simmer with desired spices in a medium saucepan. Reduce heat to lowest setting and add tea. Steep until tea takes on a deep, pinky-tan colour, about 3 minutes, stirring occasionally. Strain into a cup and stir in sugar to taste.

VANILLA & HONEY CHAI TEA

Vanilla & Honey Chai Tea image

This Chai Tea is a steamy sip of bliss. It's simple to make, and it infuses your home with an intoxicating aroma while it's brewing on the stove. This recipe is an adaptation of one by Dr. Anisha Abraham that appeared in the Washington Post.

Time 13m

Yield 4 serving(s)

Number Of Ingredients 9

4 cups water
2 whole cardamom pods
1/2 teaspoon of grated ginger
8 whole cloves
4 black tea, teabags
1 cup milk
1/3 teaspoon vanilla
clover honey
1 pinch salt (optional)

Steps:

  • When you are making brewed tea, it is important to use a pot that has NOT had regular use for greasy foods, tomato sauces, or soups. I reserve a medium pot exclusively for boiling water for tea. Of course, I am fussy about my tea. Good tasting tea needs good tasting water in a clean pan. Use a good bottled water from a natural spring if it's a available. It does make a difference, and so does the tea your using. A quality organic tea, i.e. ,St Balfours or Infusions, makes a cup of tea over which you will want to linger. The bouquet and body of organic teas are superior to other commerical teas.
  • While your tea is brewing, warm a teapot and/or the cups that you will be using. Fill them with hot water, and let them sit under a cotton kitchen towel until you are ready to serve the tea.
  • At high heat, boil the 4 cups of water containing the cardamom pods, ginger, cloves, vanilla and the pinch of salt (optional) for 5 minutes.
  • Add the tea bags and simmer 3 to 4 minutes.
  • Add the milk, and increase the heat until the mixture boils. Watch the mixture closely at this stage, so the milk won't scald. Occasionally, stir the tea.
  • Remove from the heat, and strain the tea into the warmed teapot or cups.
  • Add clover honey to taste.

CHAI HONEY TEA

Chai Honey Tea image

Healthy ingredients are the foundation for a healthy lifestyle. Whether it be a minor addition for flavour, or an increased dosage that completely transforms a meal, finding healthy ingredients that are both nutritious and delicious can enhance your diet and your life. Honey is a diverse ingredient that can be supplemented or added to your favorite food and beverage to enrich the taste and fill your meal with the natural source of vitamins, minerals and essential amino acids ?that honey provides. Many Canadian consumers are opting for honey as an alternative to sugar. "The natural anti-oxidants and anti-bacterial properties of good quality honey make it an ideal replacement for its heavily processed, refined sugar counterpart," says Greg Mohr, Director of sales and marketing at Bee Maid.

CHAI TEA WITH MILK

Chai Tea with Milk image

Chai tea is a blend of black tea, milk, and spices. This recipe was first published in Martha Stewart Living, September 2003.

Provided by Martha Stewart

Categories     Food & Cooking     Drink Recipes

Number Of Ingredients 8

10 whole green cardamom pods, lightly crushed
5 whole cloves
2 cinnamon sticks
1 piece fresh ginger (about 2 inches), peeled and quartered
1/2 vanilla bean, split lengthwise and scraped
1/3 cup honey, plus more for serving (optional)
4 bags black tea
1 1/2 cups milk

Steps:

  • Place 3 cups water in a small saucepan; add cardamom, cloves, cinnamon, ginger, and vanilla bean and scrapings. Bring to a boil over high heat. Reduce heat to low; simmer until mixture is aromatic, about 15 minutes. Whisk in honey; drop tea bags in pan. Turn off heat, and let steep 3 minutes.
  • Strain tea through a fine strainer or a coffee filter into a warmed serving pot. Heat milk in same saucepan over medium-high heat, about 3 minutes. Do not let milk come to a boil because it will separate. Pour into serving pot with the tea, and stir well to combine. Serve immediately, with more honey on the side if desired.
