EASY TOFU AND CELERY SALAD



Easy Tofu and Celery Salad image

Sharing a super easy tofu and celery salad that is perfect for hot summer days. The tender tofu and crisp celery are mixed with a savory and tart dressing with plenty of aromatics and heavenly chili oil, using minimal ingredients to create maximum flavor! It's a perfect dish for making ahead too because it tastes even better the next day. {Gluten-Free Adaptable, Vegan}To make the dish gluten-free, use rice vinegar to replace Chinkiang vinegar.

7 oz. (200 g) baked tofu (, sliced to 1/2" (1 cm) thick 2" (4 cm) long sticks)
3 to 4 stalks regular celery (or 1 small batch Chinese celery)
3 tablespoons light soy sauce ((or soy sauce))
1 tablespoons Chinkiang vinegar ((or 1 1/2 tablespoons rice vinegar))
3 teaspoons sugar
1 tablespoon peanut oil
2 cloves garlic (, grated)
2 teaspoons grated ginger
1/2 teaspoon ground Sichuan peppercorns ((or ground black pepper))
2 tablespoons homemade chili oil (, or to taste (or 2 teaspoons toasted sesame oil))

Steps:

  • Add the tofu and celery to a big bowl. Add the light soy sauce, Chinkiang vinegar, and sugar.
  • Heat oil in a small saucepan over medium heat until hot. Add the garlic, ginger and ground Sichuan peppercorns. Stir a few times to release the fragrance. Immediately pour everything over the tofu and celery. Stir to mix well. Pour in the chili oil (or sesame oil) and mix again. You can either store the salad in the fridge for up to a day or serve immediately as an appetizer. The salad will taste better if you let the tofu marinate in the dressing for at least 30 minutes.

Sichuan Celery and Tofu Salad image

This otherwise simple salad, adapted from a dish at Szechuan Gourmet in Manhattan, may require a trip to a Chinese market for Szechuan peppercorns and pressed tofu. And you'll need to make your own chili oil! But here's the thing. The effort, which really isn't much more than difficult shopping, produces an elegant dish that is worth whatever shoe leather or mileage you'll expend getting the ingredients together. It is astonishingly good. And we'll even allow one substitution. You can use regular celery instead of the Chinese version!

1 cup peanut oil
1 piece ginger, 2 inches long, cut into 3 or 4 slices
1 piece cinnamon, 3 inches long
3 cloves
1 teaspoon coriander seeds
1 teaspoon cumin seeds
4 star anise
1 tablespoon Sichuan peppercorns
1/4 cup red chile flakes, or more to taste
Salt
1 bunch Chinese celery, or regular celery, thinly sliced
4 to 6 ounces pressed tofu, thinly sliced or julienned

Steps:

  • Heat oil in a small saucepan over medium-high heat; when it simmers, add ginger, cinnamon, cloves, coriander, cumin, star anise, Sichuan peppercorns and chili flakes. Remove from heat and let sit until cool, at least 1 hour and preferably 2 or 3. Strain oil into a bowl or jar and discard spices.
  • Put a pot of salted water over high heat and bring to a boil. Add celery and blanch for about a minute; drain in colander and run under cold water to stop the cooking process.
  • Layer celery and tofu on serving plates, drizzle with chili oil and sprinkle with salt.

2 tablespoons peanut oil or vegetable oil, divided
8 ounces savory baked five-spice tofu cakes (about 2 squares), cut into matchstick-size strips
2 cups matchstick-size strips carrots (about 3 medium)
2 cups matchstick-size strips celery (about 3 long stalks)
1/3 cup finely chopped rinsed canned Szechuan preserved vegetable (about 1 1/4 ounces)
1 tablespoon Shaoxing wine (Chinese rice wine) or dry Sherry
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon ground white pepper
2 teaspoons Asian sesame oil

Steps:

  • Heat 14-inch-diameter flat-bottomed wok or heavy 12-inch-diameter skillet over high heat until drop of water added to wok evaporates on contact. Add 1 tablespoon peanut oil and swirl, then add tofu and stir-fry until tofu just begins to brown, about 1 minute. Transfer tofu to plate. Add remaining 1 tablespoon peanut oil to same wok (do not clean). Add carrots, celery, and Szechuan preserved vegetable and stir-fry until carrots are crisp-tender, about 3 minutes. Return tofu to wok; add rice wine, salt, sugar, and white pepper. Stir-fry to blend, about 1 minute. Remove pan from heat; stir in sesame oil and serve.

1/2 teaspoon sesame oil
1 teaspoon chili-garlic sauce
2 tablespoons vegetable oil
8 ounces extra-firm tofu, drained, pressed, and cut into matchsticks
Kosher salt
4 celery stalks, cut into matchsticks
2 tablespoons minced fresh ginger
2 tablespoons minced scallion
2 tablespoons minced cilantro stems

Steps:

  • Stir together tamari, sesame oil, chili-garlic sauce, and 1 tablespoon water. In a large nonstick skillet, heat vegetable oil over high until just smoking. Add tofu and cook, turning once, until golden, 4 minutes total. Transfer to a plate.
  • Add celery (and additional oil, if needed) to skillet and cook, stirring often, until crisp-tender, 1 to 2 minutes. Stir in ginger, scallion, and cilantro; cook 30 seconds. Return tofu and add tamari mixture to skillet. Toss to coat; serve.

  • Cut block of tofu into thirds crosswise, then cut each piece crosswise again into 3 pieces (you should have 9 square-ish pieces). Pat dry with paper towels.
  • Heat 2 Tbsp. vegetable oil in a large skillet, preferably nonstick, over medium-high. When oil is shimmering and easily slides across surface of pan, cook tofu, undisturbed, until golden brown underneath, about 4 minutes. Turn and continue to cook until browned on second side, about 4 minutes. Transfer tofu to a plate, leaving oil in pan.

Add mushrooms to pan and cook, undisturbed, until crisp around the edges and browned underneath, about 4 minutes. Give mushrooms a toss and continue to cook, tossing often, until browned in most spots, about 4 minutes longer. Add tofu, celery, ginger, chile, soy sauce, and sesame oil to pan. Season lightly with salt and cook, tossing often, until celery is crisp-tender, about 3 minutes. Remove from heat and squeeze in lime juice. Scatter cilantro over and toss once more.
