You can't eat just one. Crunchy, sweet, salty, and AMAZING!

Number Of Ingredients 6

1 cup white sugar
1 teaspoon ground cinnamon
1 teaspoon salt
1 egg white
1 tablespoon water
1 pound pecan halves

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Mix sugar, cinnamon, and salt together in a bowl.
  • Whisk egg white and water together in a separate bowl until frothy. Toss pecans in the egg white mixture. Mix sugar mixture into pecan mixture until pecans are evenly coated. Spread coated pecans onto a baking sheet.
  • Bake in the preheated oven, stirring every 15 minutes, until pecans are evenly browned, 1 hour.

These candied pecans are perfect to serve with cocktails or toss over salads, and the best part is that they take just 15 minutes to make!

Number Of Ingredients 5

½ cup Confectioners' sugar
¾ teaspoon kosher salt
½ teaspoon cayenne pepper
4 teaspoons water
2 cups pecans

Steps:

  • Preheat the oven to 350°F and set an oven rack in the middle position. Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the Confectioners' sugar, kosher salt, cayenne pepper, and water.
  • Add the pecans to the sugar mixture and stir until the nuts are evenly coated.
  • Transfer the pecans to the prepared baking sheet and arrange in a single layer. Do your best to make sure the nuts are evenly spread out (if they are clumped together, they won't cook evenly). Scrape out every last bit of glaze from the bowl and drizzle over the nuts. Bake for 10 to 12 minutes, until the pecans are caramelized and the caramel on the baking sheet is a rich brown color but not burnt. (The nuts around the edges will darken first; watch closely so they don't burn.)
  • Immediately slide the parchment off of the hot baking sheet and allow the pecans to cool completely on the countertop (this stops the cooking process and prevents the nuts from burning). Once cool, remove the pecans from the parchment, breaking apart any clusters if necessary, and store in an airtight container for up to two weeks.
  • Note: If the nuts are sticky after cooling, that means they are a bit undercooked. Pop them back in the oven for a few minutes and let cool again.

This is a recipe that I borrowed from a great friend and chef, Chef James. This recipe is easy and the pecans come out delicious. They have a slight sweetness from the honey, a salty, nutty flavor from the butter and of course the spicy cayenne kick. These are fantastic in salads or just by the handful.

4 cups pecans, toasted
8 tablespoons butter (1/2 of a stick)
1/3-1/2 cup honey (depending on your sweet-tooth)
1 tablespoon water
1/2-1 tablespoon cayenne (depending on your heat level)
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Pre heat oven to 350 degrees.
  • To toast the pecans, place evenly on a cookie sheet. Bake for 5-10 minutes at 350 degrees, checking often. They will burn quickly!
  • In a 4-quart saucepan, place all ingredients, except pecans, and heat until mixture reaches 250 degrees. Turn off heat and add pecans to saucepan and mix well.
  • Spread coated pecans evenly on cookie sheet lined with parchment paper or cooking spray. Bake at 350 degrees for 15 minutes. Check the pecans midway during cooking, give them a mix using a spatula, spread evenly on cookie sheet and continue cooking.
  • Cool and enjoy.

  • Bring a large pot of water to a boil. Add pecans and blanch until slightly tender, about 3 minutes. Drain and transfer to a large bowl. Add powdered sugar and mix until completely incorporated.
  • Thoroughly dry pot and return to stove. Fill with oil making sure pot is big enough so 2 quarts of oil only comes up about half way. The oil will bubble up dramatically when you add the pecans and you want to leave lots of room. Attach a deep fry thermometer to the side and heat oil to 350°F over medium heat. Meanwhile, combine salt and cayenne in a small bowl and have ready a baking sheet.
  • Give nuts another stir to coat them in the sugar and then using a metal slotted spoon or a spider scoop up a spoonful of nuts, letting any excess moisture drip back into the bowl. Carefully slide nuts into the hot oil and repeat until you have about 1-2 cups worth in the oil. You want to give the nuts plenty of room to move about in the oil and not clump up with each other.
  • Fry nuts, stirring occasionally, until very brown, about 5 minutes. Remove with the spider, letting any excess oil drip back into the pot, transfer to the baking sheet and spread out to a single layer. Immediately sprinkle with salt mixture and let cool to harden, then push to one side of the baking sheet. Once oil has returned to 350°F, repeat with remaining nuts.
