CAULIFLOWER, SQUASH, COCONUT & LENTIL CURRY
Save time on busy days by roasting the cauliflower and butternut squash ahead of time and freezing to make this tasty vegan curry at a later date

Steps:
- For the base, heat oven to 180C/160C fan/gas 4. Toss the cauliflower and squash in oil and spread it out on a large oven tray. Roast for 25 mins, or until tender. If you're making the base ahead of time, you can now freeze in an airtight container for up to a month. (Defrost fully before using in the next step.)
- Heat oil in a pan, then add the onion and cook until soft, stir in the spices and cook for 2 mins. Stir in the lentils, coconut milk and 200ml water and bring to a simmer.
- Cook for 20 mins, then add the roast veg and cook for a further 10 mins, adding a little water if it looks dry. Stir in the coriander. Serve with rice and yogurt.

- Heat the oil in a large saucepan, then add the onion, garlic and ginger. Cook for 5 mins, add the curry paste, then stir-fry for 1 min before adding the lentils, stock and coconut. Bring the mixture to the boil and simmer for 40 mins or until the lentils are soft.
- During the final 10 mins of cooking, stir in the cauliflower to cook. Spoon rice into 4 bowls, top with the curry and sprinkle with coriander leaves, and coconut if you like. Serve with mango chutney and naan bread (optional).

- Heat the oil in a large saucepan and cook the onion until soft, about 5 mins. Add the curry paste, spices and lentils, then stir to coat the lentils in the onions and paste. Pour over the stock and simmer for 20 mins, then add the cauliflower, potato and a little extra water if it looks a bit dry.
- Simmer for about 12 mins until the cauliflower and potatoes are tender. Stir in the yogurt, coriander and lemon juice, and serve with the brown rice.

- Put the lentils into a small pan with 450ml cold water, bring to the boil, then lower the heat and simmer gently, stirring regularly, for 15-20 minutes until the lentils have become a thick purée. Cover and set aside.
- Meanwhile, heat 3 tbsp of the oil in a large saucepan over a medium heat, add half the cumin seeds and the cauliflower florets and cook, turning occasionally, for 2-3 minutes until coloured here and there with golden-brown spots. Remove with a slotted spoon to a plate.
- Add the remaining oil and cumin seeds to the hot pan, then, as soon as the seeds start to sizzle, add the onion. Lower the heat slightly and cook gently for 10 minutes, stirring now and then, until soft and sweet but not browned. Add the ginger, garlic and chilli and cook for 2 minutes more, then stir in the ground coriander, ground cumin, turmeric and curry powder. Cook for 1 minute, then stir in the coconut milk, cauliflower and tomatoes and simmer for about 10 minutes, stirring every now and then, until the cauliflower is just tender.
- Stir the lentil purée into the curry with the lime or lemon juice and season to taste with salt. Leave to simmer for 2-3 minutes more. Stir in the coriander and turn off the heat.

- Place the olive oil and sliced onion in a wide, deep saucepan and cook on a gentle heat, with the lid on for 5 minutes, stirring occasionally.
- Add the garlic, ginger, chilli, garam masala and turmeric, plus a splash of water to stop the pan going dry, and cook the paste for about a minute.
- Add the chopped butternut squash and cauliflower, plus the lentils and the tin of tomatoes. Fill the tomato tin with water and add to the pan, then add a little salt and pepper. COCONUT CURRY LENTILS WITH ROASTED CAULIFLOWER

- Preheat oven to 425° F. Cover a baking sheet with parchment paper. (optional, for easier clean up).
- Toss the cauliflower with 2 Tbsp of olive or grape seed oil, 1 Tbsp of garam masala, 1 tsp cumin, and 1/2 tsp each of salt and pepper. Spread evenly on the baking sheet and roast for 20 minutes, or until slightly charred and fork tender. Remove from the oven and set aside.
- While the cauliflower roasts, cook the lentils. Heat 2 Tbsp of coconut oil in a medium sized sauce pan over medium-high heat. Add the onion and sauté, stirring occasionally until softened, about 8 minutes. Add the garlic and the rinsed lentils and sauté, stirring constantly, until fragrant, about 30 seconds. Add the coconut milk, the vegetable stock, the water, 1 1/2 tsp of cumin, 1 tsp garam masala, 1/4 tsp of turmeric, and 1/4 tsp of pepper. Stir to combine and bring just a light boil. Reduce the heat to a low simmer and cook the lentils, stirring often. If the lentils become dry, add 1/4-1/2 cup of water and continue to cook until they are soft and enough of the liquid has absorbed, about 15 minutes (see photos above for reference). Taste and add salt if needed to taste.
