CAULIFLOWER CASSEROLE WITH MOZZARELLA CHEESE
Sneak more veggies into your comfort food with this Cauliflower Casserole with Mozzarella Cheese! Layers of steamed cauliflower, mozzarella, Parmesan, and breadcrumbs are all baked together in under 40 minutes. In the end, you'll have one of the cheesiest and comforting side dishes ever!

Steps:
- Preheat your oven to 375 degrees F.
- Bring a large pot of water to a boil on the stove. Add cauliflower and boil until cauliflower is slightly tender, about 5-10 minutes. Drain cauliflower and place in a 8x8 baking dish.
- In a mixing bowl, mix together mozzarella cheese (except save 2 tablespoons for the topping!), Parmesan cheese, garlic, oregano, salt, pepper and half and half.
- Pour mixture on top of cauliflower and mix to completely coat. Sprinkle the remaining 2 tablespoons of mozzarella cheese and bread crumbs on top.
- Bake for 30 minutes or until the top is lightly browned. Serve and enjoy!
THREE-CHEESE CAULIFLOWER CASSEROLE
I made this cheesy cauliflower dish for dinner one night when my husband was gone. It was so good the boys and I ended up not eating anything else but the casserole! I used fat-free milk and cream cheese and it turned out great!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until fork-tender, 5 to 8 minutes.
- Meanwhile, beat cream cheese and milk together in a bowl. Stir in Parmesan and Cheddar cheeses.
- Mix bread crumbs and melted butter together in a small bowl.
- Transfer steamed cauliflower to a 2 1/2-quart casserole dish. Add cheese-milk mixture and stir. Sprinkle with bread crumb mixture.
- Bake in the preheated oven until bubbly and browned, about 20 minutes.

This is a very attractive dish to bring to the table! If you want your cauliflower cooked a little more steam it for 5 min prior to putting it in the casserole. I like it crisp so I do it raw.

- Preheat oven to 375°F.
- Lightly grease a 9x13-inch casserole dish.
- Arrange flowerets in the dish.
- Sprinkle with salt, pepper and nutmeg.
- Sprinkle the onion over the cauliflower.
- Cover with 1 cup of cheese.
- Drizzle with the melted butter.
- Tuck in the Tomatoes wedges.
- Sprinkle with remaining cheese.
- Bake uncovered for about 10 minutes.
- Garnish with parsley.
