CATHY'S HAM BONE SOUP
I wasn't a big fan or regular boiled dinner, so after years of hubby missing one of his favorite meals, I decided to revise it & make my own version into more of a soup. I cut everything into about 1 inch pieces , just nice for a bite. the stewed tomatoes add a really nice flavor, now this is a favorite for the whole family, even the little kids love it. **** you can use chicken or vegetable soup base in place of the ham flavor if you dont have ham flavor. I always use the SOUP BASE & NOT bouillon, as the bouillon makes it too salty and the flavor is not as good.

Steps:
- simmer ham bone covered in water for a few hours or leave in slow cooker over night on low.
- remove ham bone set aside to cool.
- add several cups of water to soup pot and add other ingredients. I put the cabbage in 1st so it cooks down and makes room for other stuff. I always add stuff by what takes longest to cook. i.e. fresh rutabaga, raw potatoes , etc..before canned stuff
- add seasonings such as salt & pepper , to your own taste, I always add a little at a time , wait a bit then taste to see if more is needed.
- remove meat from ham bone & cut to your desired size then add just the meat back into the pot.
- set to simmer. wait until all vegetables are fully cooked, I usually simmer on low a couple hours to get all the flavors mixed well.. and...ENJOY !! a big bowl of hearty, healthy, deliciousness.
HAM BONE SOUP

- Heat a large pot over medium-high heat. Add the bacon and cook until crisp, 5 to 7 minutes; remove with a slotted spoon to a paper towel-lined plate.
- Add the carrots, celery and onion to the pot. Stir until softened, about 5 minutes. Add the garlic and cook 1 minute. Drop in the ham bone and bay leaf. Cover with 8 cups water and 2 teaspoons salt. Bring to a boil over high heat; reduce heat to medium-low and simmer for 20 minutes. Stir in the cabbage and simmer 30 minutes. Add the beans and simmer 15 minutes. Stir in the kale and simmer until soft, but vibrantly green, about 15 minutes. Season with the remaining 1/2 teaspoon salt (or more to taste). Add lots of pepper and a dash of hot sauce or vinegar. Serve with crumbled bacon on top.

- Place the ham bone, onion, tomatoes, kidney beans, potatoes, and green pepper into a 3 quart or larger slow cooker. Dissolve the bouillon cubes in water, and pour into the slow cooker.

- Bring 3 quarts water and ham bone to a boil in a large stock pot. Boil until meat from the bone comes off easily, about 1 hour. Remove bone from broth. Allow bone to cool enough to touch; remove as much meat from as possible. Transfer meat to a resealable plastic bag, seal, and refrigerate.
- Pour broth into a large bowl; cover and refrigerate overnight. Skim and discard any fat from the top of the chilled broth; transfer broth to a large pot.
- Bring broth to a boil; add potatoes, cabbage, celery, and reserved ham. Continue to simmer until potatoes are tender, about 45 minutes.
- Whisk 1/2 cup water and flour in a bowl; whisk into potato-ham soup until thickened. Add light cream; stir.

- Place the ham bone into a large pot and fill with enough water to cover. Bring to a boil and cook for 15 minutes. Add the onion and tomatoes, then stir in the frozen mixed vegetables and potatoes. USING THE CHRISTMAS HAM BONE, MAKES YOU FEEL GOOD POTATO SOUP
This recipe is a "base" potato soup that is WONDERFUL as is, but with SO many possibilities! I dumped in a can on Niblets corn, and it became chowder! It was wonderful! How about: add Julienne'ed carrots close to the end; or 8 oz Velveeta cheese; or 2 cups cooked broccoli florets; or throw in some cooked shrimp and crab meat & some Cajun seasonings...; or any combination you can think of! YUM! If your hambone isn't too meaty, add a cup of shredded or chopped ham from leftovers.

- Place first 6 ingredients in a Dutch Oven, bring to a boil over medium heat, and simmer for 30 minutes or until meat easily comes off the bone with a fork. Shred ham from the bone, discard any fat, return meat to the pot. Add diced potatoes, bring to a boil, reduce heat and simmer until potatoes are tender.
- While potatoes are cooking, in a medium saucepan, melt butter over medium heat being careful not to brown. Add flour, stirring constantly until incorporated well. Bring heat to medium/high and gradually stir in the Half n Half until creamy, thick and bubbly, stirring constantly, being careful not to scorch. Once it thickly coats the spoon, remove from heat.
- When the potatoes are tender, stir the sauce mixture into the potato pot over medium heat, stirring constantly. Let simmer until soup reaches the desired consistency. You can add milk to adjust.
- There has been no salt added to this point. You may add salt, pepper, garlic, herbs or seasonings to your taste.
CHEESY HAM AND POTATO SOUP RECIPE
This Cheesy Ham and Potato Soup is easy to throw together, and will quickly become a family favorite. It's my favorite meal on a cold chilly day, and tastes amazing.

- In a large stock pot combine potatoes, onion, carrots, peas, ham and chicken broth
- Bring to a boil, lower heat to medium, and let cook until potatoes are soft (about 15-20 minutes).
- Add salt and pepper to taste.
- In a small saucepan, melt butter over medium-low heat.
- Whisk in the flour and continue to stir constantly until the mixture thickens (about 1-2 minutes).
- Slowly add the milk to the butter/flour mixture, stirring the entire time so that you don't get any lumps. Continue to stir until the mixture thickens once again (takes about 3-5 minutes).
- Add in the cheese to the butter/flour/milk mixture and stir until it's completely melted.
- Pour the cheese mixture into the stock pot with the vegetables and ham and stir until completely incorporated. It will get thicker as it cools.
