MARY'S CLASSIC SODA BREAD

Steps:
- Preheat the oven to 200°C/fan 180°C/390°F/ fan 350°F/gas 6. Brush a 30fl oz Pyrex bowl with melted butter.
- Place the flours and salt into a large bowl. Sift in the baking soda and mix well. Add in the molasses, melted butter, and egg and pour in most of the buttermilk. Mix to form a soft dough adding in more buttermilk as needed. Transfer into the prepared Pyrex bowl.
- Bake in the preheated oven for 40 minutes. To check that the loaf is cooked, tap the base - it should sound hollow.
- Transfer to a cooling rack. If you want a soft crust, cover with a damp tea towel.

- Preheat oven to 375 degrees F (190 degrees C). Grease and flour a heavy pan.
- Mix flour, sugar, raisins, caraway seeds, baking powder, baking soda, and salt in a large bowl. Add eggs, buttermilk, and milk to the flour mixture; stir until evenly incorporated. Transfer dough to the prepared pan.
- Bake in preheated oven until when the bread is tapped on top it sounds hollow, about 75 minutes.

- Draw your finger around the edge of the pan to create a "moat." Drizzle the bread with the 1 tablespoon of milk; the moat will help prevent the milk from running down the sides of the loaf.
- Sprinkle with the coarse sugar., Bake the bread for 50 minutes to 1 hour, or until a cake tester inserted into the center comes out clean; the interior of the bread will measure 200°F to 210° on an instant-read thermometer., Remove the bread from the oven, loosen its edges, and after 5 minutes turn it out onto a rack to cool.
