CAST IRON GRILLED CHUCK EYE (POOR MANS RIB-EYE) STEAKS W/SPICY R

Cast Iron Grilled Chuck Eye (Poor Mans Rib-Eye) Steaks W/Spicy R image

We discovered the Chuck Eye steaks a few years back at our local grocery store. The butcher recommended them to us. He calls them 'the poor mans rib eye'. They come out incredibly tender; you just can't beat them for the price. We prepare them many different ways, but this is my husband's favorite when he's in the mood for a spiced up steak. I highly suggest preparing them outdoors on a grill side burner if you have one, as the rub does smoke when cooked in the cast iron pan.

Time 20m

Yield 4 serving(s)

Number Of Ingredients 10

1/2 cup chili powder
1 tablespoon ground cumin
1 tablespoon dried coriander
1 teaspoon cayenne pepper
2 teaspoons dry mustard
2 teaspoons dried oregano
1 tablespoon salt
1 teaspoon ground black pepper
4 chuck eye steak (1/2 - 3/4 inch thick)
olive oil

Steps:

  • Prepare the rub by combining all ingredients.
  • Preheat a cast iron pan over high heat, and grill (or oven) to 425.
  • Rub each steak on one side with the rub. Brush over the rub with a light coat of olive oil.
  • Cook the steak, rub side down, until 'blackened', about 5-7 minutes.
  • Flip the steaks over and continue to cook either on the grill or in the oven, until medium rare (or desired doneness), approximately 8 to 10 minutes for a thicker steak.
  • Remove from heat and let rest for 5 minutes before serving.

RIB-EYE STEAKS WITH MEDITERRANEAN MARINADE

Rib-Eye Steaks With Mediterranean Marinade image

Make and share this Rib-Eye Steaks With Mediterranean Marinade recipe from Food.com.

Provided by Loves2Teach

Categories     Steak

Time 50m

Yield 4 serving(s)

Number Of Ingredients 9

1/2 cup dry red wine
1/4 cup olive oil
2 tablespoons fresh lemon juice
1 teaspoon dried marjoram
1 teaspoon dried thyme
1 teaspoon garlic salt
1 teaspoon crushed red pepper flakes
4 (10 -12 ounce) rib eye steaks, about 1 inch thick
1 teaspoon garlic salt

Steps:

  • In large plastic resealable bag set inside a large bowl, combine marinade ingredients. Add steaks to bag. Press air out of the bag and seal tightly. Turn bag several times to distribute marinade, place bag back in bowl, and marinate 30 to 60 minutes.
  • Remove steaks from bag and let excess liquid drip off. Discard marinade. Let steaks stand at room temperature for 20 to 30 minutes before grilling. Just before grilling, season both sides of each steak with 1 teaspoon garlic salt.
  • With lid closed, grill steaks over direct high heat (500 to 550 degrees) until cooked to desired doneness, 6 to 8 minutes for medium-rare, turning once. (If flare-ups occur, move steaks temporarily over indirect high heat.).
  • Remove from grill and let rest 2 to 3 minutes. Serve warm.

BEST EVER GRILLED CHUCK STEAK

Best Ever Grilled Chuck Steak image

This is a great easy way to cook cheap steaks. I used some cheap steaks I got on sale and they were so tender and tasty. Recipe is easily adjusted to how many steaks you have. Prep time includes overnight marinating time. Recipe source: Fire and Smoke

Categories     Steak

Time P1DT20m

Yield 4-6 serving(s)

Number Of Ingredients 3

4 chuck steaks (or other inexpensive steaks)
1 (16 ounce) bottle yellow mustard (I used French's)
vegetable oil

Steps:

  • Trim all but 1/4 - 1/2 inch fat from sides of steaks and then slash remaining fat with a knife at 1-inch intervals. Spread 1/4 inch of mustard over both sides of steaks -- do not coat sides of steak with the mustard. Place steaks in a shallow dish large enough to hold steaks in one layer and cover with plastic wrap. Refrigerate overnight. Let stand at room temperature 2 hours before grilling.
  • Prepare grill. I used charcoal sprinkled with wood chips.
  • Brush grids with oil.
  • Sear steaks over hot coals (or high heat) for one minute per side. Than adjust grids so steaks are over medium hot heat (on my grill I lower the grill grates or you can move the steaks so they are on the outer edges of the coal to reduce heat). Grill for 7-10 minutes on one side (7 minutes for rare, 8-9 for medium, and 10 for well). Turn steaks and grill for 8-12 minutes (8 minutes for rare, 9-10 for medium rare, 11-12 for well done).
  • To serve, transfer steaks to serving platter or carving board and let stand 5 minutes before cutting across the grain into slices 1/4 inch thick or serve steaks whole.
