CASCAVAL PANE ( TRANSYLVANIAN FRIED CHEESE)
These are very hearty and satisfying little fried cheese squares, and if you can't locate Cascaval cheese, you may substitute Provolone. They make a perfect little Halloween party (or anytime) snack, with a crumb crust seasoned with plenty of garlic, to keep vampires at bay, of course.

Steps:
- Slice the cheese into 1-1/2 inch squares that are 1/2 inch thick.
- Dip first into the beaten egg mixture, then into the seasoned bread crumbs (I find that a"double dipping" of each works the best; after the first dip in the bread crumbs, repeat the process again).
- Heat oil in a deep skillet until it"shimmers".
- Fry cheese until golden brown on both sides and a little soft (this does not take very long, and do not completely melt cheese).
- When you turn over the cheese the first time, the crust may fall apart from the cheese; just pat it back on, it will melt back together.
- To serve, immediately put each cheese square on a lettuce leaf.

GEBNA MAKLEYAH (EGYPTIAN OVEN-FRIED CHEESE)
I found this recipe on the Food By Country website which stated that "in Egypt, cheese with bread is frequently served at meals. Here, oven-fried cheese is served with lemon wedges and pita triangles." You can easily vary the recipe to suit your tastebuds by adding tomatoes or other vegetables, or vary the cheese by using a traditional Egyptian white cheese, such as gibna beyda, instead of crumbled feta.

- Preheat oven to 400°.
- Place the cheese, flour, egg, salt, and pepper in a bowl and mix well with very clean hands. Roll the mixture into 1-inch balls. If the mixture seems too loose to hold its shape, add a little more flour. If the mixture seems too dry, add a bit of lemon juice, vinegar, or water.
- Pour 2 or 3 Tablespoons olive oil onto a cookie sheet to grease. Arrange the cheese balls on cookie sheet, rolling them around to coat thoroughly with the oil. Bake 5 minutes at 400°.
- Wearing an oven mitt, shake the baking sheet to turn the cheese balls, and bake 5 more minutes or until golden brown.
- With a spatula, transfer the cheese balls to a paper towel.
- Serve the cheese balls while still warm, with lemon wedges and triangles of pita bread.
SAGANAKI (GREEK FRIED CHEESE SQUARES)
I live next to a city that is mainly Greek restaurants and gets a lot of tourism for the Sponge Docks and just love having this appetizer!! The combination of the salty cheese, butter and lemon juice is so flavorful. Can serve it with pita bread or type of bread of your choice, or heck, just eat it plain as it is delicious.

- Cut cheese into bite sized pieces. In a heavy skillet, fry cheese in hot butter quickly (a few seconds on each side) until golden. Arrange on a platter and sprinkle with lemon juice. Serve hot.

Steps:
- In the begining its good to wash the cheese so the flour would stick on the cheese better when dipping.
- Now take three plates and put flour into one of them, egg and a little bit of milk (just to make it more smooth) and a hint of salt to the second one and the breadcrubs to the third one.
- (you need to mix the egg with milk with a fork so you cant see the yolk, egg white and milk but a kind of orange liquid)
- Dip cheese slices into flour to form a light coating on all surfaces.
- Dip each slice into lightly beaten egg and coat completely.
- Dip each slice into breadcrumbs and coat completely, pat crumbs onto any areas that are not coated.
- If needed repeat the point 4. and 5.- tastes better.
- Pour oil into deep frying pan to a depth of 1/2 inch. Heat to 375 degrees F.
- Carefully place slices in pan and fry on one side until golden-brown.
- Turn and fry on the other side until golden brown. Pay attention so the cheese doesnt get out from the "coat"!
- Serve with french fries and tatar sauce/ketchup.

QUESO FRITO (FRIED CHEESE)
So good! Not the healthiest of appetizers. But hey! Cheese is a good source of calcium and if you use olive oil for frying that's not as bad as other oils, right? --------* If you have it in your pantry use Spanish smoked paprika if not whatever paprika you have on hand will do. Also use short aged manchego. Manchego that has been aged for over 6 months is better for grating. If you can't find manchego us mozzarella.

- Mix together flour and paprika in a bowl. Have the beaten eggs in a separate bowl. Mix the bread crumbs and oregano in a third bowl. Dredge the cheese in the flour mixture, then egg and then coat well in bread crumbs. Refrigerate for at least an hour.
