BEER CAN DUCK

Beer Can Duck image

A variation on beer can chicken. I did this with a can of iced tea rather than beer but I don't think it makes that big a difference (my beer can chicken does not taste like beer and this duck did not taste like tea - the flavors come from the rub). Remember roasting duck is not like roasting chicken. The skin of a duck is massively fatty and the meat is dark meat. You need a lot of cooking time and you want the fat to drip out. Piercing the outer layer of skin and long roasting time will accomplish this and will leave you with a crispy delicious skin.

Categories     Whole Duck

Time 3h15m

Yield 2 serving(s)

Number Of Ingredients 10

1 duck (4-5 pound)
1 (8 ounce) can beer or 1 (8 ounce) can iced tea
salt
2 teaspoons salt
1 teaspoon star anise, freshly ground
1 teaspoon paprika
1 teaspoon black pepper
2 teaspoons mustard seeds, freshly ground
1/2 teaspoon msg
1 tablespoon sugar

Steps:

  • Salt the duck and place it uncovered in the refrigerator overnight to dry out.
  • Preheat oven to 425.
  • Pierce the duck skin with a sharp knife in multiple locations (10 to 20 pierces over the whole duck). Make sure not to pierce through to the meat. Piercing at an angle will help to ensure you only go through skin and fat.
  • Combine ingredients for the rub and rub over the entire duck.
  • Open the can, empty half and pierce 2-3 extra holes in the top. Optionally you can make extra rub and add to the can.
  • Plug the duck neck opening with a small lime or shallot or spud (whatever you have handy that's golfball size).
  • Stand the can in a relatively deep drip pan with a bit of water in the pan (preferably using a beer butt stand which you can get for $6 or less) and lower the duck onto the can shoving it into the backside as far up as it goes.
  • Place in oven and roast for one hour at 425, then one hour at 375, and then one hour at 325.
  • Remove from oven and carefully separate can from bird then carve and serve.
  • You will have a huge amount of rendered duck fat in the pan which you can refrigerate or freeze and save for future use.

TURDUCKEN (A CHICKEN IN A DUCK IN A TURKEY)

Turducken (A Chicken in a Duck in a Turkey) image

A Turducken is a de-boned turkey stuffed with a de-boned duck, which itself is stuffed with a small de-boned chicken. The name is a portmanteau of those ingredients, turkey, duck, and chicken. The birds can be deboned the day before to save some time since this recipe requires a long slow cook time.

Provided by Karen From Colorado

Categories     Whole Turkey

Time 11h

Yield 25 serving(s)

Number Of Ingredients 8

16 -20 lbs whole turkey
4 -5 lbs whole ducklings
3 -4 lbs whole chickens (or use a larger chicken and place the duckling inside it)
6 -8 cups prepared stuffing (I like to use 2 kinds such as sausage and cornbread stuffing, but use your favorites or just one kin)
2 tablespoons salt
2 tablespoons paprika
1 tablespoon black pepper
1 -2 teaspoon dried thyme

Steps:

  • Debone the birds:.
  • If it is your first time deboning a fowl, you might want to practice first on the chicken rather than the turkey since mistakes will be hidden inside the bigger birds.
  • Rinse the turkey and remove the neck and any giblets.
  • Place the turkey, breast side down, on a clean flat surface.
  • Cut through the skin along the length of the spine.
  • Using the tip of a knife and starting from the neck end, gently separate meat from rib cage on one side.
  • Toward neck end, cut through the meat to expose the shoulder blade; cut meat away from and around the bone, severing bone at the joint to remove shoulder blade.
  • Disjoint wing between second and third joints. Leave the wing bones and keep the wing attached to the meat.
  • Continue separating meat from frame, working toward the thighbone and being careful to keep the "oyster" (pocket of meat on back) attached to skin, rather than leaving it with the bone.
  • Cut through ball-and-socket joint to release the thighbone from the carcass (bird will be open on one side). Keep the leg attached to the meat.
  • Repeat boning procedure on the other side of the bird.
  • Carefully remove the carcass and use it to make stock for your gravy and stuffing. To make stock, put the turkey carcass in a large pot and cover with water. Bring to a boil, then simmer on low heat. You can also place it in a large crock pot.
  • You should end up with a flat boneless (except for wings and legs) turkey with the skin intact in one large piece. Put the boned turkey in a large dish or bowl and cover with plastic wrap to keep it from drying out. Place it in the refrigerator.
  • Repeat the deboning process on the duckling and the chicken, but debone both stumps of wings and leg drumsticks. Cut through flesh at the thinnest point and trim around these bones with a knife until they can be removed. (Since they have little meat, you can cut off the entire wings and add them to the stock pot.) Both the chicken and duck will be stuffed inside the turkey and need not be kept "perfectly" intact.
  • Trim excess skin and fat from the birds. Ducks, in particular, have a lot of excess fatty skin that should be saved to render fat to be used later for making gravy. You can completely remove the skin from the chicken, but keep some duck skin which adds flavor.
  • At least 10 to 11 hours before dinner, assemble the Turducken.
  • Mix together the seasonings in a small dish.
  • Spread the turkey, skin down, on flat surface, exposing as much meat as possible.
  • Rub 3 tablespoons of seasoning mix evenly on meat.
  • Spread some of stuffing over the turkey in an even layer approximately 3/4 inch thick.
  • Place duck, skin down, on top of stuffing.
  • Season exposed duck meat with about 1 tablespoons of seasoning mix.
  • Spread more stuffing in an even layer (about 1/2 inch thick) over the duck.
  • Arrange the chicken, skin down, evenly on top of the stuffing.
  • Season chicken meat with seasoning mix.
  • Spread remainder of your stuffing on top of chicken.
  • With another person's help, carefully lift the sides of the layered birds, folding the sides of the turkey together.
  • Have a helper hold the bird while sewing the opening down the back of the turkey together using cotton thread. The bird may not close perfectly, and a strip of cheese cloth can be used to help close the "crack" in the back of the turkey so stuffing will not leak out when the bird is turned over.
  • Since the turducken has no skeleton, it must be trussed up or it may fall apart in cooking.
  • Tie 4-5 pieces of cotton string around the bird, widthwise to act as skeletal support.
  • Turn the bird over and place in a roasting rack inside a large roasting pan so it is breast side up and looks like a "normal" turkey.
  • Tie the legs together just above the tip bones.
  • Cooking:.
  • Heat oven to 225 degrees F.
  • Place the bird in the center of the oven and bake until a meat thermometer inserted through to center reads 165 degrees, approximately 9 hours, though cooking times will vary depending on the size of the birds and amount of stuffing used. Rely on temperature and not time cooked for doneness.
  • There will be no need to baste, but accumulated drippings may need to be removed from the pan every few hours so that the lower portion does not deep fry in the hot oil. Save pan drippings for gravy.
  • Remove the turducken from the oven and let cool in the pan for an hour before serving. Make gravy according to your favorite recipe.
  • To serve cut bird in half. Carve crosswise so each slice reveals all 3 meats and stuffings.

DUCK STOCK (SAVE THAT CARCASS)

Duck Stock (Save That Carcass) image

Russ and I love duck and I love to make stock with the remaining carcass, wing tips and that big neck. I remove the skin from the neck. We mostly eat marinated Asian style duck, so I pop the wings and neck in the marinade and then bake them alongside the bird for a while. I also strain off the fat and cooking juices and after removing the layer of fat, add the jellied juices to my stock. I use the stock for noodle soup for the two of us.

Provided by JustJanS

Categories     Stocks

Time 2h15m

Yield 3 cups

Number Of Ingredients 11

1 roast duck carcass, including wings and neck
1 large onion, peeled and roughtly chopped
1 large carrot, peeled and roughtly chopped
2 stalks celery, roughly chopped
1 red chili pepper, slit
2 garlic cloves
4 slices ginger
1 star anise
2 pieces lime rind, no pith
3 coriander sprigs
1/2 teaspoon black peppercorns, lightly crushed

Steps:

  • Throw everything into a large pot and cover with water (about 3 litres). Bring to the boil then reduce to a simmer and cook for 1 1/2 hours, skimming any scum that rises.
  • After simmering, strain into a bowl pressing the meat and veg gently to remove all the liquid. Discard carcass and veg etc. Add in any reserved meat jelly (see my intro) and return stock to the cooktop.
  • Boil until 2 or 3 (500-750 ml) of stock remain. I stop reducing when the flavour is good. Strain again.
  • Cool quickly, label and freeze.
  • No need to season it-that happens when I use it for soup in the future.

TENDER ROAST DUCK WITH CITRUS & CARROTS

Tender roast duck with citrus & carrots image

Buying ready-prepared duck confit makes this luxurious meal for two really simple. Try it served with mashed potatoes and watercress

Provided by Jane Hornby

Categories     Main course

Time 1h

Number Of Ingredients 12

2 shop-bought duck confit legs
300g slim carrot , halved lengthways (about 6)
4 garlic cloves , bashed in their skins
1 orange , half juiced, half cut into wedges
1 tsp vegetable oil
1 tbsp lemon juice
1 tbsp sherry vinegar
1 tbsp golden caster sugar
4 tbsp good chicken stock (you'll only need this if your duck doesn't come with any surrounding jelly)
2 or 3 bay leaves
few thyme sprigs
mashed potatoes and watercress , to serve

Steps:

  • Heat the oven to 200C/180C fan /gas 6. Scrape away any excess fat from the duck (you could keep this for duck fat potatoes), but keep any jelly. Put the carrots, garlic and orange wedges into a large roasting tin, then toss with the oil and season well. Season the duck legs, then sit them on top of the veg, skin-side up. Roast for 40 mins until the carrots are tender and the duck is turning golden.
  • Stir the citrus juice, vinegar and sugar together until the sugar dissolves. Pour over the veg, add the jellified duck or chicken stock, then tuck in the bay and thyme here and there. Roast for another 10 mins until the carrots are surrounded with syrupy sauce and the duck is golden. Season the sauce to taste, then serve with mashed potatoes and watercress.

ROAST DRUNKEN DUCK RECIPE - (4/5)

Roast Drunken Duck Recipe - (4/5) image

Provided by á-170456

Number Of Ingredients 23

MARINADE:
2 teaspoons soy sauce
2 teaspoons dark soy sauce
1/2 cup white wine or dry sherry
1/2 teaspoon salt
1/2 teaspoon Chinese five-spice
DUCK AND MUSHROOMS:
1 whole duck - (3 to 3 1/2 lbs) cleaned
8 dried black mushrooms
STUFFING:
2 tablespoons cooking oil
4 slices ginger - (quarter-size) julienned
3 garlic cloves minced
2 medium onions thinly sliced
1/4 cup shredded bamboo shoots
2 tablespoons thinly-sliced Sichuan preserved vegetable
1/4 cup white wine
1 teaspoon Chinese five-spice
2 tablespoons dark soy sauce
1 tablespoon hoisin sauce or char siu sauce
GLAZE:
2 tablespoons dark soy sauce
1 tablespoon hoisin sauce

Steps:

  • Combine marinade ingredients in a bowl. Rub duck inside and out with marinade. Cover and refrigerate for 2 hours. Soak mushrooms in warm water to cover until softened, about 20 minutes; drain. Discard stems; thinly slice caps. Place a wok over high heat until hot. Add oil, swirling to coat sides. Add ginger and garlic; cook, stirring, until fragrant, about 10 seconds. Add onions and stir-fry for 1 minute. Add mushrooms, bamboo shoots, and preserved vegetable; stir-fry for 2 minutes. Add wine, five-spice, soy sauce, and hoisin sauce; cook for 1 minute. Let cool. Place stuffing inside duck; use skewers to enclose. Preheat oven to 400 degrees. Place duck, breast-side up, on a rack in a roasting pan. Bake until meat is no longer pink when cut near bone, 1 to 1 1/2 hours. Increase heat to 475 degrees. Combine glaze ingredients in a bowl. Brush glaze over duck. Bake until skin is richly glazed, 5 to 7 minutes. This recipe yields 4 to 6 servings. If you live near a Chinese deli that sells roast ducks, you're in luck: You can enjoy a wonderful treat any time without running up a huge "duck bill"! Roasting duck the Chinese way is a real art. First, the birds are parboiled, melting away some of the fat. Then they're blown up with air and hung up to dry to tighten their skin. Finally, they're lacquered with a sweet glaze of honey, maltose, vinegar, and rice wine that caramelizes during roasting, making the skin crisp and brown. You can eat Cantonese roast duck at room temperature, or warm it in the oven. Serve it with the thin brown cooking sauce that's usually included at no extra charge, or shred the meat and use it to top a salad of greens tossed with a vinaigrette enriched either with a bit of the duck sauce, or with bottled plum sauce.
