2 tablespoons peanut oil
1 large onion (10 ounces), peeled and coarsely chopped (1 3/4 cups)
3/4 pound carrots (about 6 medium size), peeled and cut into sticks 2 inches long and 1/2-inch thick (2 1/2 cups)
1/4 teaspoon Italian seasoning
3/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 package (10 ounces) frozen petite or tiny peas
1 tablespoon unsalted butter

Steps:

  • Heat the oil over high heat until hot, but not smoking, in a sturdy saucepan. Add the onions, and cook until they are lightly browned, about 2 minutes.
  • Add 1 cup of water, the carrots and the Italian seasoning to the saucepan, cover, and boil gently for 10 minutes. Add the salt, pepper and peas, and bring the mixture to a boil. Boil for 2 minutes, then stir in the butter. Serve.

Number Of Ingredients 8

2 large, firm white turnips, about 1/2 pound
3 large carrots, about 1/2 pound
1/2 pound fresh snow peas
1 tablespoon olive oil
2 tablespoons chopped onions
Salt and freshly ground black pepper to taste
2 teaspoons red-wine vinegar
2 tablespoons chopped fresh coriander or parsley

Steps:

  • Scrape and trim the turnips. Cut them in half crosswise into 1/4-inch slices. Stack the slices, and cut them into batons 1/4-inch wide.
  • Scrape the carrots and cut them into 1 1/2-inch lengths. Then cut the pieces into 1/4-inch slices, and then into batons the same size as the turnips.
  • Trim off and discard the tips of the snow peas.
  • Heat the oil in a heavy skillet, and add the turnips and carrots. Cook, stirring, about 1 minute. Add the onions and cook until wilted, about 1 minute. Add the snow peas, salt and pepper, and cook, stirring, for about 4 minutes or until tender. Add the vinegar and coriander, cook briefly, toss and stir well.

1/2 pound carrots
1/3 pound snow peas, trimmed
1 tablespoon butter
1 tablespoon olive oil
2 tablespoons sesame seeds
1/4 teaspoon ground cumin
3 tablespoons chopped scallions
Salt and pepper to taste

Steps:

  • Peel and trim the carrots and slice them thin.
  • Place the carrots in a saucepan and cover with salted water. Bring to a boil and simmer for 1 minute. Add the snow peas. Return to a boil and cook for 1 minute. Drain.
  • In a nonstick skillet, melt the butter and add the olive oil. Add the sesame seeds. Cook, stirring until lightly browned; add the carrots and the snow peas, the cumin and the scallions. Check for seasoning, and saute, stirring, for 1 minute.

6 small to medium-size white turnips, about 3/4 pound
2 dozen baby carrots, about 3/4 pound
Salt to taste if desired
2 tablespoons butter
1 tablespoon finely chopped shallots
2 tablespoons finely chopped parsley

Steps:

  • Peel the turnips and cut them into quarters.
  • Trim off the stem ends of the carrots. Scrape the carrots and put them in a saucepan. Add water to cover and salt. Bring to a boil and let cook about 7 minutes. Add the turnip pieces and continue cooking until both vegetables are tender, about 3 minutes or slightly longer. Drain well.
  • Return the vegetables to the saucepan. Add butter and shallots and toss. Sprinkle with parsley and serve hot.

2 tablespoons chopped scallions
Freshly ground pepper to taste

Steps:

  • Slice the carrots into julienne strips about 1 1/2 inches long.
  • Place the carrots in a saucepan, cover with water and bring to a boil. Simmer 4 minutes. Add the snow peas, bring to a boil, stir and cook for 2 minutes. Drain.
  • Heat the oil in a skillet and add the carrots, snow peas, garlic, soy sauce, scallions and pepper. Stir and cook 1 minute. Serve.

2 medium turnips, peeled and diced
1/2 cup butter, cubed
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Place carrots and turnips in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. , Drain and mash. Add the butter, salt and pepper. Sprinkle with parsley if desired.
