PUREED CARROT SOUP
A recipe that I had in one of my recipe boxes that I think my mom gave to me many years ago. I'm posting this so I have it handy to try.

Steps:
- In a large soup kettle heat oil. Saute leeks and garlic until softened but not brown.
- Add carots, potato and enough liquid to barely cover. Simmer about 30 minutes until vegetables are soft.
- Puree soup in a blender (or use an immersion blender) and return to pot. Add remaining liquid to your desired thickness. Mix well and heat through.
- Serve hot with croutons.

Steps:
- Melt 2 tablespoons butter in heavy large pot over medium heat. Add carrots, leeks, and celery. Cover and cook until vegetables soften slightly, about 10 minutes. Add broth and bring to a boil. Reduce heat, cover and simmer until vegetables are very tender, about 25 minutes. Cool slightly.
- Working in batches puree soup in blender until smooth. Return soup to pot. Whisk cream, sour cream and 1/2 teaspoon sesame oil into soup. Season soup to taste with salt and pepper(can be made one day ahead, just cover and chill).
- Melt the remaining 3 tablespoons butter with remaining 1/2 teaspoon sesame oil in large heavy skillet over medium heat. Add bread cubes and saute until golden brown and crispy -- about 4 minutes.
- Bring soup to a simmer over medium heat. Ladle into bowls , mound croutons in centre of each. Sprinkle with sesame seeds and chives and serve.

Steps:
- Wash the spring greens and drip dry in a colander and then on kitchen paper.
- Remove the thick stems and finely shred the green leaves.
- Deep fry the spring greens in batches in hot oil for about 1 minute.
- Take care not to let it burn.
- Drain well and place in a large mixing bowl.
- Scatter sugar, salt and toasted sesame seeds and mix well.

"There's something about the mixture of toasted sesame seeds and garlic that makes this broccoli, well, poetic! Though we created it especially to complement our Sweet and Sour Mango Shrimp, it's the perfect side dish for almost any Asian-style fish or meat. Because the broccoli is steamed rather than sautéed, the fat content is extremely low. If you limit how much sauce you drizzle over it, you can reduce the calories even more."

Steps:
- Preheat oven to 350ºF.
- Spread the sesame seeds in a single layer on a cookie sheet.
- Bake in the oven for 12 minutes until fragrant and golden brown.
- When done, remove from hot pan into medium bowl to stop cooking.
- Mix the chopped garlic, sesame oil, chili sauce, and soy sauce.
- Using a vegetable peeler, peel the stalks of broccoli.
- Quarter the broccoli stalks lengthwise.
- Steam the broccoli in a vegetable steamer over water until it reaches desired tenderness.
- *If you like broccoli a little crunchy, steam for about 2 minutes.
- Remove broccoli and place in serving bowl.
- Drizzle the sauce over it and mix well.
- Sprinkle with toasted sesame seeds.
- TIP:
- This vegetable dish keeps well and is delicious cold. Keep it airtight in your refrigerator.

- Heat butter and oil . Mince onion and add to oil and butter cook until tender. Pare and slice carrots and add in pan with onion and cook adding 1/2 teaspoon salt. Cook this mixture covered stirring often about 10 minutes.Then add rice, stock( chicken, vegtable or water) 1 1/2 teaspoons salt , sugar bring to boil reduce heat to simmer cover and cook about 30 minutes until carrots are tender. Being very careful blend and then return to pot adding addtional seasoning as needed. Herbs chervil, mint, chives or parsley can be used as a garnish. For the herbs 1 teaspoon dried or 1/4 teaspoon powdered = 1 tablespoon fresh.

Steps:
- Place the broccoli florets in a steamer basket over 1 inch of boiling water.
- Steam the broccoli until bright green and crisp tender.
- Meanwhile in a small bowl combine the garlic, scallions, rice vinegar, and sesame oil and sesame seeds.
- Plunge the broccoli into cool water to stop the cooking process, drain well.
- Place well drained broccoli in a medium bowl and toss with sesame dressing.
- Serve at room temperature.
