One 18.3-ounce package fudge brownie mix
One 15.25-ounce can black beans

Steps:

  • Heat the oven to 350 degrees F. Grease an 8-by-8-inch baking pan with nonstick cooking spray. Puree the undrained black beans and their liquid in a food processor until smooth. Put the brownie mix and pureed beans in a large bowl and beat with an electric mixer until combined, about 2 minutes. Transfer the batter to the prepared pan. Bake for 25 to 30 minutes, or until a toothpick inserted near the center comes out clean. Let cool on a wire rack and cut into squares.

1 (15.5 ounce) can black beans, rinsed and drained
3 eggs
3 tablespoons vegetable oil
¼ cup cocoa powder
1 pinch salt
1 teaspoon vanilla extract
¾ cup white sugar
1 teaspoon instant coffee
½ cup milk chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 square baking dish.
  • Combine the black beans, eggs, oil, cocoa powder, salt, vanilla extract, sugar, and instant coffee in a blender; blend until smooth; pour the mixture into the prepared baking dish. Sprinkle the chocolate chips over the top of the mixture.
  • Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes.

A slight variation on other similar recipes posted here, without added fat. Recipe calls for agave syrup but you may substitute honey. A friend used regular flour instead of self-rising and the brownies turned out nicely.

1 1/2 cups black beans, drained
1/2 cup agave syrup
1/2 cup self-rising flour
1/2 cup egg white
1/4 cup cocoa
2 teaspoons vanilla
1 teaspoon baking powder
6 teaspoons mini chocolate chips

Steps:

  • Mix all ingredients, except chocolate chips, in a blender or food processor.
  • Spread in a greased 8x8 baking pan or mini-muffin pan.
  • Sprinkle with chocolate chips, then mix gently.
  • Bake at 350 degrees for 20 minutes.

sunflower oil , for greasing
2 x 400g cans black beans , drained
1 tbsp vanilla extract
6 large eggs
200g soft butter , chopped
200g light muscovado sugar
100g cocoa powder
2 tsp gluten-free baking powder
85g chilli-flavoured chocolate (or plain chocolate), chopped into chunks

Steps:

  • Heat oven to 180C/160C fan/gas 4. Lightly grease a 20 x 30cm brownie tin and line with baking parchment. Blitz the beans and vanilla, 1/2 tsp salt and 2 eggs with a stick blender until completely smooth.
  • Put the butter and sugar in a bowl with the cocoa and remaining eggs, and beat with an electric whisk until creamy. Start off slowly, then increase the speed as you mix (so you don't get covered with cocoa!). Beat in the baking powder, then stir in the bean mixture and fold in the chocolate chunks.
  • Scrape the mixture into the tin with a spatula, level it and bake for 25 mins until firm to the touch. Leave to cool, then cut into squares. Will keep for a few days in a tin at room temperature, and 1 week in the fridge.

2 tablespoons melted butter
1/4 cup milk
2/3 cup cocoa
1 tablespoon instant coffee granules
1/4 teaspoon baking powder
1/2 cup brown sugar
1/2 cup low calorie sweetener (ie. Splenda)
1 teaspoon vanilla

Steps:

  • Preheat oven to 350 F and spray and 8X8 pan with cooking spray.
  • Puree black beans with eggs, vanilla, melted butter and milk.
  • Combine remaining ingredients and mix well into bean mixture (both steps can be done in a food processer or with an immersion blender).
  • Pour batter into prepared pan and bake for 30-35 minutes or until brownie comes off of sides and toothpick inserted comes out with moist crumbs.
