MEXICAN CARNE ASADA RECIPE
Authentic Mexican Carne Asada - Grilled steak, arrachera, or skirt, which has been marinated with lime and garlic and then quickly cooked over high heat served with a stack of hot tortillas and a bold salsa.

Steps:
- LIME GARLIC MARINADE
- Start with a small bowl
- Mince the garlic and add to the bowl
- Squeeze the juice from 8 limes into the bowl
- Add the salt and mix with a fork
- SKIRT STEAK
- Trim the meat of any excess silver membrane
- Place the skirt steak in a tray and pour half the marinade over it
- Flip the skirt and pour the other half of the marinade over it
- Let the meat marinate for 2 hours in the refrigerator
- Bring the meat to room temperature before grilling
- Once the meat is marinated, start the charcoal
- When the coals are at their hottest grill the meat for about 7 or 8 minutes on each side
- Rest the meat for a few minutes before serving
- SPRING ONIONS
- Once the coals are going place the spring onions on the grill.
- Move them to the side of the grill when you are ready to cook the meat.

TRADITIONAL MEXICAN CARNE ASADA WITH FRESH SALSA
An excellent Mexican tradition, excellent for groups, or even just for two. The best way to cook the beef is with a standard charcoal grill, but gas works too. Prep and Cook time vary, but usually you can start the charcoal at the beginning of prep and it will be hot by the time you're ready. TIP: Have the butcher thin slice the roast for you if not already thin sliced, it's much easier and saves a lot of prep time. In place of the spices listed, you may also use Carne Asada Seasoning, or even Season Salt like Johnny's or Lowery's.

- In a large mixing bowl, separate slices of beef and mix with half cup of lime juice until coated evenly.
- Combine paprika, garlic powder, salt and cayenne pepper. Generously sprinkle on both sides of the sliced beef.
- Chop cilantro, reserving half. Sprinkle cilantro between slices of beef. Cover beef and allow to rest in the refrigerator while preparing salsa.
- Combine diced tomatoes, diced jalapeños, diced onions, remaining cilantro and 1/4 cup lime juice. Salt and Pepper to taste.
- When the grill is nice and hot, use a meat fork pushed into a half of an onion to wipe down the grill surface.
- Evenly spread out the sliced beef over the surface of the grill. With long metal tongs, carefully watch the beef and turn it as needed to cook evenly. Carefully test the meat for doneness by tearing the meat. When it pulls apart easily, it's done.
- Heat a some corn tortillas in the microwave for a few seconds between moistened paper towel or lightly steam on the stove.
- Pull cooked beef into strips and lay in the middle of a tortilla, add a spoonful of salsa mixture, and a bit of fresh lime juice. Enjoy!

- To make the salsa: Can be made 2 hours ahead. Let stand at room temperature. Combine tomatoes through lime juice in a medium bowl. Season to taste with coarse kosher salt.
- To make the Carne Asada: Prepare barbeque (high heat). Grill chiles and onions until charred all over, about 3 minutes for onions and 5 minutes for chiles. Transfer onions to a plate; tent with foil. Transfer chiles to a bowl; cover with plastic wrap and let stand for 15 minutes. After 15 miutes peel and seed the chiles; cut into1 inch wide strips. Transfer to a plate and tent with foil.
- Rub steak with garlic; sprinkle with coarse salt and pepper. Grill until cooked to desired doneness, about 3 minutes per side for medium. Transfer to work surface; cool 5 minutes. Grill tortillas until slightly charred, about 10 seconds per side. Cut steaks crosswise into strips; transfer to a plate.
- Serve steak with tortillas, chiles, onions, avocado slices, lime wedges adn Salsa Mexicana.

1 star reviewer zmailed me and said: "I really don't think the problem was with your recipe at all, my family are not big on things like avacado, or chilli like me. It was just not for my family." i'm not sure why she tried my recipe if her family doesnt like the ingredients or why she didnt comment in her review, but i have an idea; careful what you say around here, people can leave bad reviews even if they havent tried your recipe..sucks :( if you can, start by going to a carniceria & picking up some pre-marinated carne asada & some bolillos. if thats not available to you then i suggest you marinate the steaks in Recipe #220759 only through step 6 using ingredients vinegar through paprika & you can use any soft roll type bread if you cant find bolillos. these are so tasty you HAVE to try 'em!!

- start by making the salsa fresca; combine all salsa ingredients & chill for an hour.
- about 20 minutes before you're ready to cook the meat combine guacamole ingredients with a electric mixer until smooth. i'd suggest bring out the salsa now & hav some tortilla chips for dipping while waiting for the rest of the meal.
- turn oven on 250 for toasting.
- heat beans on med-low until hot.
- in a large skillet or on a bbq cook steaks until light brown on the outside & still slightly pink in the middle -- carne asada should not be dark brown & charred.
- once done let sit for 5 minutes.
- while the meat is resting slice bolillos in half & toast for 4 minutes.
- cut carne asada into small pieces or strips.
- spread one half of the bolillos with guacamole.
- spread the other half with hot beans.
- sprinkle cheese on beans, if using, & top with carne asada, lettuce, salsa fresca & hot sauce, if using.
- close sandwich, press down & cut in half.
- serve with extra salsa & guacamole (if there's any left still!).
