Steps:

  • Combine ingredients in a non-metal bowl. Enough for 10 chops or 5 large steaks. Cover and marinade 2 days or longer. Turn daily. The strained marinade can be used as a BBQ baste or incorporated into gravies and sauces afterwards.

3 tb Pickling spice
1 qt Wine
1 ts Juniper berries
2 Bay Leaves
1 ts Peppercorns
3 Ribs celery; chopped
2 Carrots; diced

Steps:

  • Simmer the vegetables and spices in water till tender. Cool mixture and add wine. Place the caribou in the marinade (can be used on any game) Cover and marinate 2 days or longer. Turn daily. The strained marinade can be used as a BBQ baste or incorporated into gravies and sauces afterwards. Meat should be marinated at least 2 days before preparing and large roasts up to a week.. 1 lb caribou round steak, cut in strips
1/4 cup soy sauce
1 garlic clove, minced
1 1/2 teaspoons fresh ginger, minced
2 teaspoons vegetable oil
1 teaspoon dark sesame oil
3 tablespoons vegetable oil
1 cup coarsely chopped onion
1 cup coarsely chopped green pepper
1 cup sliced mushrooms
1 tablespoon cornstarch
1/4 cup water

Steps:

  • Place meat, soy sauce, garlic, ginger, 2 teaspoons vegetable oil, and sesame oil in a large bowl.
  • Mix well, cover and refrigerate for at least 1 hour.
  • Drain, reserving marinade.
  • Heat remaining oil in a large skillet over high heat.
  • Add meat and stir-fry until tender, about 8 minutes.
  • Add vegetables and continue cooking until onions and peppers are tender-crisp.
  • Mix cornstarch and water and add to the reserved marinade.
  • Pour marinade mixture over meat and cook 5 minutes more.
