BASIL POACHED SHRIMP

Steps:
- Put the shrimp, lemons, white wine, parsley, and peppercorns in a large pot. Season with some salt and cover with cold tap water. Bring to a boil. As soon as the shrimp reaches a boil remove from the heat, strain the water, and plunge the shrimp into the ice water to stop the cooking. Allow the shrimp to chill for about 10 minutes.
- After shrimp are cooled strain the water and toss the shrimp with the pesto, season with salt and pepper, to taste.
- 2 cups basil leaves
- 1 tablespoon toasted pine nuts
- 1 cup extra-virgin olive oil
- 1 teaspoon chopped garlic
- Salt and freshly ground black pepper
- Put all ingredients in a food processor and pulse a few times to blend the pesto. Do not blend until completely smooth, leave it a little rough.

- Combine the allspice, thyme, cinnamon, cumin, nutmeg, cayenne, black pepper and salt in a bowl. Add the shrimp and toss thoroughly.
- Heat 1 teaspoon of the oil in a small nonstick skillet set over medium-high heat. Add the shrimp in a single, uncrowded layer and cook until no longer translucent in the center, 2 to 3 minutes per side. Transfer to a plate.
- Heat the remaining 1 teaspoon oil in the skillet. Add the pineapple and cook until lightly browned, about 1 minute. Turn and cook until again lightly browned on the underside, 1 minute more. Remove from the heat.
- Thread each skewer in the following order: mint leaf, pineapple chunk, shrimp, pineapple chunk and mint leaf. Serve warm or at room temperature.

- Heat oil in skillet. Lightly season shrimp with pepper, garlic powder, and salt and then dredge in the flour, shaking off any excess.
- Lightly fry until shrimp turn pink and curl, about 2 minutes per side. Remove from skillet and drain. Saute onions in the same pan until they begin to soften. Add a couple tablespoons of flour and whisk well to make a roux. Season with a little more salt, pepper, and garlic powder. Whisk in water, 1/4 cup at a time until desired consistency is reached. Add shrimp and simmer in gravy for 10 minutes. Serve over white rice.
CARIBBEAN BRUSCHETTA WITH SHRIMP AND SCALLOPS

- Preheat oven to 400 degrees F.
- Drizzle olive oil over bread and toast lightly in the oven.
- In a large bowl, add tomatoes, lime juice, balsamic and sugar and stir to combine.
- In a medium saute pan over medium-high heat, add onion and cooked until caramelized. Add radicchio and mushrooms and cook until radicchio has wilted and mushrooms have released their liquid. Season, to taste, with salt and pepper. Add minced garlic and cooked bacon and stir to combine. Remove from heat and allow to completely cool.
- Fold cooked onion-bacon mixture into the tomato mixture and add the chopped cilantro.
- Preheat grill to high.
- Grill shrimp and scallops until opaque. Season both sides with salt, pepper and crushed red pepper flakes. Remove from the grill and slice the scallops and shrimp in half.
- Top each toasted bread slice with the tomato mixture, grilled scallop, and grilled shrimp and garnish with sliced green onions.

CARIBBEAN GRILLED SHRIMP
This recipe reminds so much of the taste of vacation that I HAD to share it! We tasted it a few years ago, and begged the chef for the recipe just about everyday during our stay! A few simple ingrediants, 1- 2 hours of marinade time, and VOILA! The compliments will just keep on coming!

- Prepare your shrimp, and leave in the fridge until you're ready.
- Next, mix the rum, brown sugar, cayenne pepper, ground pepper, chopped basil, olive oil, garlic salt and juice from 2 of the limes.
- Using a chocolate grater, add the zest from the third lime to the mix.
- Use the juice from the last lime, and add that to the mix as well.
- Place your shrimp into the liquid, and leave for between 1 - 2 hours. (60 minutes seems to be the magic number for us, because after that, the rum is a little overpowering).
- Grill on a hot barbeque about 2-3 minutes each side, or until pink. The caramelisation is amazing!
- In absence of a barbeque, pan frying or broiling is good too.
- We serve on stir fried vegetables (using the juice from the mix) and pasta.

- Heat broiler.
- Coat large broiler-pan rack with nonstick vegetable-oil cooking spray.
- Mix brown sugar, allspice, black pepper, onion powder, thyme, salt and cayenne in bowl.
- Whisk in oil, molasses and lime juice until smooth.
- Add shrimp; toss to coat.
- Cover and refrigerate for 10 minutes, stirring after 5 minutes.
