CARDWELL'S SPICED TOMATO RELISH (FOR BURGERS)



Cardwell's Spiced Tomato Relish (For Burgers) image

They recommend serving this atop a burger stuffed with blue cheese finished off with some bacon. . .YUMMO! I imagine you could use this atop a grilled portabello for a great vegan meal too! This is a recipe from Cardwell's at the Plaza in St. Louis, MO which was published in Sauce Magazine in May 2009.

5 medium tomatoes, peeled, seeded and chopped
1 1/2 cups minced red onions
1/2 cup red wine vinegar
1/3 cup tightly packed light brown sugar
1/2 cup light Karo syrup
6 tablespoons tomato paste
1 small jalapeno, minced with seeds (no seeds for less heat)
1 minced garlic clove
1/2 tablespoon minced fresh ginger
1 teaspoon salt
1/2 teaspoon ground pepper
1/2 teaspoon ground cinnamon
1/4 teaspoon ground mace
1/8 teaspoon ground cloves
1 tablespoon chopped of fresh mint

Steps:

  • Combine all of the ingredients except the mint in a 3 quart saucepan and bring to a boil over medium high heat.
  • Lower the heat and simmer for 1 hour, stirring frequently.
  • Remove pan from the heat.
  • Transfer the relish to a bowl and place the bowl on an ice bath until cold. When relish is cold, stir in the mint.
  • Refrigerate 24 hours prior to serving.

1 ½ pounds ground beef
2 (8 ounce) cans tomato sauce, divided
1 large egg
1 teaspoon salt
¼ teaspoon ground black pepper
6 thin slices onion
1 tablespoon olive oil, or as needed
6 thin slices lemon
1 tablespoon Worcestershire sauce
1 tablespoon white sugar
1 teaspoon chili powder
½ teaspoon mustard

Steps:

  • Mix ground beef, 1 can tomato sauce, egg, salt, and pepper in a bowl until combined. Form 6 patties and top each with an onion slice.
  • Heat oil in a large skillet over medium-high heat. Place burgers in the skillet, onion-side down, and brown for 3 to 5 minutes. Turn burgers and drain any grease. Top each burger with a lemon slice.
  • Combine remaining tomato sauce, Worcestershire sauce, sugar, chili powder, and mustard; pour over burgers. Cover and simmer until burgers are cooked through and sauce has thickened, at least 1 hour.

  • For the fresh tomato relish, place the tomatoes and red onions in the bowl of a food processor. Pulse 10 to 12 times or until the tomatoes and onions are finely chopped but still a little chunky. Place in a strainer and drain for 2 minutes.
  • Place the chopped tomatoes and onions in a bowl and stir in the apple cider vinegar, honey, kosher salt, pepper, celery salt, red pepper flakes and parsley. Set aside.
  • For the burgers, place the bread in a bowl and pour milk over it. After the bread has soaked up as much of the milk as possible, smash and squeeze out and pour off the excess.
