Cardamom Apple Crisp with Caramel Cream image

Here's great tasting apple and oats crisp flavored with cardamom and cinnamon. Serve this delicious baked dessert with caramel cream.

4 medium tart baking apples, peeled, sliced (4 cups)
1/3 cup plus 2/3 cup packed brown sugar
1/2 cup all-purpose flour
1/2 cup quick-cooking oats
1/2 to 3/4 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
1/3 cup cold butter or margarine
1/4 cup chopped pecans, if desired
1 cup heavy whipping cream
1/4 cup caramel topping

Steps:

  • Heat oven to 375°F. Grease bottom and sides of 8-inch square baking dish with shortening or cooking spray.
  • In medium bowl, toss apples with 1/3 cup of the brown sugar. Spread apples in dish. In another bowl, stir remaining 2/3 cup brown sugar, the flour, oats, cardamom and cinnamon until well mixed. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like coarse crumbs. Stir in pecans. Sprinkle over apples.
  • Bake 30 to 40 minutes or until topping is golden brown and apples are tender when pierced with fork. Cool 45 minutes before serving.
  • In chilled large deep bowl, beat whipping cream and caramel topping with electric mixer on high speed until stiff peaks form. Serve caramel cream with warm crisp. Drizzle with additional caramel topping, if desired.

A twist on the classic apple crisp, this version uses the delicious spice of cardamom for lots of flavour. A vegetarian dessert, as well as being gluten free (using certified oats) and a low histamine recipe. Serves 4-5.

4 apples (peeled and cored)
2 tbsp honey (or maple syrup)
1/2 tsp cardamom
2 tbsp apple juice
1/5 cups oats
2 tbsp pumpkin seeds
1/2 tsp cardamom
1 tbsp honey (or maple syrup)
3 tbsp coconut oil (melted)
small pinch salt

Steps:

  • Preheat the oven to 180C
  • Scatter the apple slices into your ovenproof dish, drizzle with honey, pour over the apple juice and sprinkle over the cardamom.
  • Add all the ingredients for the oat topping to a bowl and stir well to combine. Spoon onto the fruit filling.
  • Bake for 25-30 minutes. Keep a watch after 20 minutes for any signs of burning. If the top is looking as though it could burn but the apples aren't softened, loosely place a piece of aluminium foil over the dish and bake until done.

2 apples, peeled and sliced
2 firm ripe pears, peeled and sliced
1 tablespoon lemon juice
1/2 teaspoon pure vanilla extract
2 tablespoons cornstarch
1 teaspoon cardamom, ground
1/2 cup flour
1/2 cup quick-cooking oats
1/2 cup brown sugar, firmly packed
6 tablespoons cold butter, cut into pieces

Steps:

  • Preheat oven to 350°F.
  • Toss apples and pear slices with lemon juice and vanilla in large bowl. Mix cornstarch and cardamom. Sprinkle over fruit; toss to coat well. Spoon into lightly greased 8 or 9-inch square baking dish.
  • FOR THE STREUSEL TOPPING: Mix flour, oats and sugar in medium bowl. Cut in butter with pastry blender or two knives until coarse crumbs form. Sprinkle evenly over fruit.
  • Bake 40-45 minutes or until fruit is tender and topping is golden brown. Serve warm with ice cream or whipped cream, if desired.

1/2 cup old-fashioned oats
1/2 cup all purpose flour
1/2 cup (packed) golden brown sugar
1/3 cup sliced almonds
1/4 teaspoon ground nutmeg
Generous pinch of salt
6 tablespoons (3/4 stick) chilled unsalted butter, cut into 1/2-inch cubes
Filling
5 cups 1/2-inch-thick slices fresh rhubarb (from about 2 pounds)
2 cups halved strawberries
3/4 cup sugar
1/3 cup orange juice
2 tablespoons all purpose flour
1 1/2 teaspoons grated orange peel
1/2 teaspoon (scant) ground cardamom
1/4 teaspoon ground nutmeg
Sweetened whipped cream

Steps:

  • For topping:
  • Mix first 6 ingredients in medium bowl. Add butter; rub in with fingertips until moist clumps form.
  • For filling:
  • Preheat oven to 375°F. Butter six 1 1/4-cup custard cups. Combine all ingredients except whipped cream in large bowl; stir to blend. Let stand until juices form, about 15 minutes.
  • Divide rhubarb mixture among prepared custard cups. Sprinkle topping evenly over mixture in each. Bake until topping is golden brown and crisp and filling is bubbling thickly around edges, about 45 minutes. Serve warm with sweetened whipped cream.
