Categories     side-dish

Time 1h20m

Yield 6 servings

Number Of Ingredients 12

1 1/2 pounds onions (2 to 3 medium onions), thinly sliced
1 teaspoon sugar
3 teaspoons kosher salt
3 tablespoons clarified butter*
1 tablespoon sweet sherry
1 large Italian or French bread loaf, crusts removed, cut into 5 by 1-inch pieces
6 eggs
2 cups heavy cream
1 tablespoon grainy mustard
1 teaspoon finely chopped thyme
1 teaspoon freshly ground black pepper
2 cups grated Gruyere cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large skillet, saute the onions, sugar, and 1 teaspoon of the salt in the clarified butter over medium-high heat; stir constantly to prevent burning. Cook until golden brown. Add sherry and stir to lift any caramelized onion on the bottom of the pan. Remove from the heat and set aside.
  • Spread out the bread pieces evenly on a baking sheet. Place in the oven for about 5 to 8 minutes to dry the bread slightly but not to add color. Set aside to cool.
  • Whisk together the eggs, cream, mustard, thyme, the remaining salt, and pepper. Soak the bread in the egg mixture for 5 minutes.
  • In a casserole dish, layer the bread with the onions and cheese. Pour the remaining egg mixture over the top.
  • Bake for 35 minutes or until the egg mixture is set.

Yield 8

Number Of Ingredients 19

For the Caramelized Onions:
3 tablespoons (45g) unsalted butter, plus more for greasing baking dish
3 large Spanish onions (about 2 1/2 pounds; 1kg), thinly sliced
1 teaspoon sugar
1 teaspoon kosher salt
3 medium cloves garlic, minced
2 teaspoons finely chopped fresh thyme leaves
1/4 cup (60ml) dry sherry
1/2 cup (120ml) dry white wine
For the Strata:
1 large Italian or French bread loaf (about 1 pound; 450g), cut into 1-inch cubes
6 large eggs
3 1/2 cups (830ml) half and half or whole milk
1 1/2 tablespoons (22ml) smooth Dijon mustard
1 tablespoon (15ml) Worcestershire sauce
1 teaspoon (5ml) fish sauce (optional)
1/2 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 1/2 cups (8 ounces) grated Gruyère cheese

Steps:

  • For the Caramelized Onions: In a large skillet, melt butter over medium heat, then add onions, sugar, and 1 teaspoon salt. Cover and cook, stirring every few minutes, until onions have softened, about 10 minutes. Remove lid and cook, stirring frequently and keeping skillet uncovered, until onions are deep golden brown, 20 to 25 minutes; if onions threaten to burn at any point, stir in a tablespoon or two of water as needed, and/or lower heat. Add garlic and thyme and cook 1 minute longer. Add sherry and wine and cook until liquid has almost completely evaporated, about 3 minutes. Remove from heat and set aside.
  • Meanwhile, for the Strata: Preheat oven to 350°F (177°C). Spread bread in a single layer on a baking sheet. Bake until bread is dry but not browned, about 8 minutes.
  • In a large bowl, whisk together eggs, half and half or milk, mustard, Worcestershire sauce, fish sauce (if using), 1/2 teaspoon salt, and pepper. Add dried bread and let soak in custard for at least 15 minutes and up to 30 minutes.
  • Butter a 12-inch cast iron skillet or a 9- by 13-inch baking dish and add half of bread. Scatter half of caramelized onions and half of cheese all over. Layer remaining bread on top and scatter remaining onions and cheese over. Drizzle any remaining custard all over, then bake until bread is crisp and custard is just set, about 35 minutes. Serve hot or at room temperature. This Recipe Appears In Turn French Onion Soup Into a Strata for an Easy Breakfast, Lunch, or Dinner

1 cup lukewarm water
1/2 teaspoon active dry yeast
1 cup bread flour
2 tablespoons extra virgin olive oil
2 tablespoons firmly packed brown sugar
2 onions, sliced into 1/4 inch rings
1 cup lukewarm water
1 teaspoon active dry yeast
2 1/4 cups bread flour
1/2 cup whole wheat flour
2 1/4 teaspoons salt
1/2 teaspoon fresh ground black pepper

  • To prepare the sponge, place the water in a mixing bowl.
  • Sprinkle the yeast over the water, stir in and let sit for 2 minutes.
  • Mix in the 1 cup bread flour.
  • Cover the bowl with plastic wrap and let sit overnight or for 14-16 hours.
  • To prepare the onions, heat the olive oil and sugar in a heavy-bottomed saucepan over medium heat for 1 minute.
  • Add the onions, stir well, and saute, stirring occasionally, for 10-12 minutes or until browned and caramelized.
  • Remove the pan from the heat and set aside to cool.
  • To prepare the dough, place the water in the bowl of an electric mixer or in a mixing bowl.
  • Sprinkle the yeast over the top, stir in, and let sit for 2 minutes.
  • Add the sponge, bread flour, whole-wheat flour, salt and pepper.
  • Mix with the dough hook for 2 minutes, or until the ingrediets are combine.
  • Or beat vigoursly with a wooden spoon for 8-10 minutes.
  • Let the dough rest for 15 mintes.
  • Add the caramelized onions and resume mixing, continuing for 12-14 minutes or until the dough is silky and elastic and pulls away from the sides of the bowl.
  • The dough should be very wet and sticky, but still elastic.
  • Transfer the dough to a lightly oiled bowl and cover with plastic wrap.
  • Let rise in a warm place for 1 1/2 hours, or until doubled in volume.
  • Turn over a baking sheet and set a piece of parchment paper on it.
  • Place the dough on a well-floured work surface, handling it gently to preserve as much volume as possible and cut into 2 equal pices.
  • Gently pull and stretch each piece of dough into a flat round, about 1 1/4 inches thick.
  • Transfer to the parchment paper.
  • You may have to reshape once you have moved it.
  • Cover with plastic wrap, and let rise in a warm place for 45 minutes to 1 hour.
  • To avoid the plastic from sticking to the dough, spray the dough with some cooking spray.
  • Place a baking stone on the middle rack in the oven and preheat to 450 degrees.
  • Using a spray bottle, spritz the oven walls with water.
  • Work quickly so the oven does not lose heat.
  • You could also quickly place several ice cubes in the bottom of the oven after you have placed the loaves in the oven.
  • Slide the loaves, still on the parchment paper, into the oven onto the hot stone.
  • Bake for 16-18 minutes, or until the bread brown.
  • Transfer the flatbreads to a rack to cool.
  • Note: I could only bake one loaf at a time.
  • Next time I will forget about turning the dough onto a floured board.
  • I'll gently dump half of the dough onto each piece of parchment paper and shape it there.

Time 40m

Yield 4 serving(s)

Number Of Ingredients 8

5 tablespoons unsalted butter
3 cups vidalia onions, halved and sliced thin
3 eggs
1 cup heavy cream
1 teaspoon salt
1/8 teaspoon nutmeg
1 teaspoon baking powder
4 1/2 teaspoons flour

Steps:

  • Preheat oven to 350 degrees. Use 1 tbsp butter to lightly grease 4 ramekins.
  • In a saute pan over medium flame, melt 4 tbsp butter. Add onions and saute until they caramelize and turn golden brown. Cool and transfer to a blender or food processor and puree.
  • In a medium bowl, beat the eggs. Then add the cream, salt, baking powder, nutmeg, and flour and mix well.
  • Mix the onion mixture into the cream mixture.
  • Pour into individual ramekins (about half full). Place ramekins in a roasting pan. Cover the ramekins with foil. Fill the roasting pan with water until the water reaches about half way up the side of the ramekin. Place roasting pan in the oven and bake for about 25 minutes until the pudding is set.
  • Remove ramekins from the roasting pan to remove from the oven and let the water in the roasting pan cool before trying to remove. I've made the mistake of trying to remove the ramekins IN the roasting pan-let's just say the water is very very hot.
