SIMPLE CARAMELIZED ONION WHITE PIZZA
With just a few ingredients, you can make a pizza that is simply spectacular. For an appetizer or a full meal (with a salad), just follow these easy instructions.

Steps:
- Preheat oven to 550 degrees F, with pizza stone set on middle rack while the oven preheats.
- Toss or roll the dough into a flat, round shape, approximately 10-inches in diameter.
- Spread the mozzarella and 1 tablespoon of the parmesan or romano cheese over the center of the pizza dough, leaving uncovered a ring of approximately 1-inch around the edge.
- Add the caramelized onions, spreading them over the cheese. Sprinkle the remaining tablespoon of parmesan or romano cheese.
- Slide the pizza onto the stone in the oven, either directly or using a pizza tray/cookie sheet. Bake for approximately 8 minutes until the crust is browning and the center bubbles. If you notice that bubbles develop on the ring of crust without cheese and onions, you should press them down or puncture them with a fork or knife. This keeps them from burning before the pizza is fully baked.
- Once you remove the pizza from the oven, slice it into wedges for serving.

- 1. Preheat the oven to 450 degrees F. Grease a large baking sheet with olive oil.2. Heat 1 tablespoon oil in a large skillet over medium-high heat. When the oil shimmers, add the onions and honey and cook 5 minutes, stirring occasionally until softened. Season with salt and pepper and continue cooking another 5-10 minutes or until the onions are golden and caramelized. Remove from the heat and let cool.3. In a medium bowl, toss together the tomatoes, remaining 2 tablespoons oil, herbs, garlic, crushed red pepper flakes, and a pinch each of salt and pepper. 4. On a lightly floured surface, push/roll the dough out until it is pretty thin (about a 10-12 inch circle). Transfer the dough to the prepared baking sheet. Spread the dough with crème fraîche, top evenly with onions, and then sprinkle with parmesan. Add the tomatoes, spreading them in an even layer.5. - To caramelize the onions, heat the olive oil in a large skillet over medium heat.
- Add the onions and garlic and cook over medium-low heat for about 20 minutes, stirring frequently, until the onions are very soft and lightly browned.
- Add the balsamic vinegar and cook a few more minutes, then remove from heat.
- Preheat the grill to low-medium heat (or preheat your oven to 400 degrees).
- Spread the caramelized onions evenly over the pizza crust.
- Top the onions with the chopped peppers, crumbled goat cheese, shredded provolone, and chicken.

- In medium bowl, cover dried tomatoes with boiling water and soak until soft, about 45 minutes (soaking could take more or less time, depending on size of tomatoes and drying process).
- Remove from bowl, squeeze out excess liquid. If desired, reserve liquid for another use.
- Now, heat 2 tablespoons oil in large skillet over medium-high heat. Add onions and reduce heat to medium-low.
- Sauté until slightly softened,a bout 5 minutes; sprinkle salt and pepper.
- Continue to sauté until a rich golden brown color, about 20 minutes.
- Add whole garlic cloves during last 10 minutes so they caramelize, keeping separate from onions when stirring.
- Heat oven as needed to bake pizza for crust.
- Place tomatoes, caramelized garlic, 1 tablespoon oil and some salt & pepper in a processor.
- Pulse just until mixture is pureed but has texture. Spread cooled onions on crust and press down with hand.
- Spread tomato mixture on top; press lightly and sprinkle with oregano.
- Spread mozzarella all around, then Parmesan and some extra pepper.
- Bake 10-15 minutes or until the crust is golden and topping is hot.
- Remove from oven and place on cutting board. Let rest 5 minutes before slicing.

- Caramelize onion by melting 3 tablespoons butter in a saute pan over medium heat. Add onion. Cook for 15to 20 minutes, or until onion is a deep brown, stirring occasionally. Remove from heat and reserve.
- Sprinkle your rolling surface with a handful of cornmeal or flour. Place dough in the middle of the surface. Roll dough out gently 1/4-inch thick, into either a 12-inch rectangle or circle. Brush both sides with olive oil and set aside until ready to grill.
- If you are grilling on a charcoal grill, set coals on one side of the grill.
- Place dough directly on the cooking grate over medium heat for 1 to 3 minutes, until the crust is well marked and browned. Flip dough and spread tomato slices evenly over crust. Sprinkle onion over top, then sprinkle cheese over the top. Move to indirect heat (for charcoal: the side of charcoal grill that has no coals. For gas: turn off burner directly under pizza). - Peel, then slice the onions into thin wedges. Thinly slice the garlic. - Thirty minutes before baking the pizza, preheat the oven to 500 degrees. Heat the olive oil over medium heat in a large, heavy skillet. Add the onions. Cook, stirring often, until tender and just beginning to color, about 10 minutes. Add the thyme, garlic and a generous pinch of salt. Turn the heat to low, cover and cook another 10 to 20 minutes, stirring often, until the onions are golden brown and very sweet and soft. Remove from the heat.
- While the onions are cooking, stem and wash the chard leaves, and bring a medium pot of water to a boil. Fill a medium bowl with ice water. When the water comes to a boil, salt generously and add the chard. Blanch for one to two minutes, just until the leaves are tender, and transfer to the ice water. Drain and squeeze out excess water. Alternatively, steam the chard for two to three minutes until wilted, and rinse with cold water. Chop the chard medium-fine.
- Roll out the dough, oil a 14-inch pizza pan and dust with cornmeal or semolina. Place the dough on the pan.
- In a medium bowl, combine the ricotta, egg yolk, Parmesan and chard. Spread over the pizza dough in an even layer, leaving a 1-inch border around the rim. Spread the onions over the ricotta mixture.
- Place in the hot oven, and bake 10 to 15 minutes until the crust and bits of the onion are nicely browned. Remove from the heat, and serve hot or warm.
