2 1/3 cups Original Bisquick™ mix
3 tablespoons packed brown sugar
1 teaspoon ground cinnamon
1/2 cup milk
3 tablespoons butter or margarine, melted
6 tablespoons butter or margarine
1/2 cup packed brown sugar
6 medium bananas (2 3/4 lb), peeled, diagonally cut into 1/2-inch slices (4 1/2 cups)
1/2 teaspoon ground cinnamon
3/4 cup hot fudge topping, warmed

Steps:

  • Heat oven to 400°F.
  • In medium bowl, stir Bisquick mix, 3 tablespoons brown sugar and the cinnamon until well blended. Stir in milk and 3 tablespoons melted butter until soft dough forms. Drop by 6 heaping spoonfuls onto ungreased cookie sheet.
  • Bake 10 to 12 minutes or until golden brown.
  • Meanwhile, in 10-inch skillet, melt 6 tablespoons butter over medium heat. Stir in 1/2 cup brown sugar. Cook, stirring constantly, about 2 minutes or until dissolved. Add bananas to pan; coat with caramel mixture. Stir in ground cinnamon; remove from heat.
  • To serve, split warm shortcakes; fill with warm banana filling. Drizzle each with 2 tablespoons hot fudge topping.

I found this recipe in an old cookbook I was given some time ago and thought this sounded awesome. A little work but oh...SO worth the effort! Cook time does not include chill time.

1 cup butter, softened
1 cup sugar
4 large eggs
2 teaspoons vanilla
2 cups sifted cake flour
1/4 teaspoon salt
1 teaspoon baking powder
2 tablespoons heavy cream, chilled
2 cups heavy cream, chilled
1/4 cup bakers sugar
1 teaspoon vanilla
1/2 cup heavy cream, chilled
1 tablespoon bakers sugar
1/2 teaspoon vanilla
1 pint french vanilla ice cream, softened (the best quality you can afford)
2 very ripe bananas, cut into very thin slices
1 tablespoon dark rum
2 -3 tablespoons dark rum
4 small ripe bananas, sliced plus 1 banana, thinly sliced
hot fudge sauce, of your choice

Steps:

  • Preheat oven to 350 degrees. Butter and flour 12 individual charlotte or cake pans.
  • In large mixing bowl of electric mixer on high speed, cream butter with the sugar until pale and fluffy for approximately 5 minutes.
  • Scrape bowl down often. Add eggs one at a time, beating well after each addition. Add vanilla. Continue beating on high speed for 6 minutes while frequently scraping down the sides of the bowl. Set aside.
  • Resift flour with salt and baking powder. Add flour to cream mixture using lowest speed of the mixer. When incorporated, add cream. Beat only until blended.
  • Place cake pans on baking sheet and divide the batter equally. Bake on the center rack 25-30 minutes or until toothpick interted in middle of each cake comes out clean.
  • Cool 5 minutes on a wire rack in pans; remove and place right side up on cooling rack until completely cooled.
  • For the whipped filling beat or whip the cream until stiff; fold in sugar and vanilla.
  • Set aside (chill).
  • For the banana sauce, toss the banana slices with the rum. Set aside. Whip the cream with sugar and vanilla until stiff. Fold softened ice cream into the whipped cream.
  • Fold in the macerated bananas (with the rum) into the whipped cream mixture.
  • To assemble:.
  • Slice each cake horizontally into two equal layers. Place cake tops upside down on dessert plates. Poke or prick each cake with fork and drizzle with the rum. Spread chilled whipped filling generously on top of cake. Place a single layer of bananas to cover filling. Cover with more filling and top with the remaining cake layer. Spoon a dollop of filling on top of cake. Chill.
  • When ready to serve, place remaining banana slices on top of the cake. Spoon on the Banana Sauce and Hot Fudge Sauce.

2 cups sugar
1 stick (8 tablespoons) unsalted butter
1 cup whole milk
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon vanilla bean paste
1 teaspoon powdered gelatin
1 2/3 cups mascarpone
3/4 cup confectioners' sugar, sifted
3/4 cup cold heavy cream
2 teaspoons vanilla extract
1 pound peaches, unpeeled, cut into wedges (about 3 peaches)
3 tablespoons sugar
2 pinches sea salt
1 tablespoon butter
White chocolate wedges, for garnish, optional

Steps:

  • For the genoise: Preheat the oven to 335 degrees F (or 325 if using convection). Grease a half sheet pan and line it with parchment.
  • In a stand mixer fitted with the whisk attachment, whip the eggs for 5 minutes until light and frothy. With the mixer on medium speed, slowly add the sugar; increase to medium-high speed and beat to a ribbon consistency, another 5 minutes.
  • Combine the butter and milk in a microwave-safe bowl. Microwave for about 2 minutes, until the butter is melted and the milk is hot. Set aside.
  • Sift together the flour, baking powder and salt. Set aside.
  • With the mixer on low speed, add the vanilla and then slowly add the flour mixture; mix until combined, scraping down the sides.
  • Whisk about 1 cup from the mixer in the hot milk-butter until smooth, then return to the mixer, whisking until just combined.
  • Pour the batter into the prepared half sheet pan and bake until an inserted toothpick comes out with just a few moist crumbs, 15 to 20 minutes.
  • Let cool for 15 minutes, then remove the cake from the pan and use a 3-inch biscuit cutter to cut out 12 mini cake rounds.
  • For the whipped cream: Bloom the gelatin in 2 tablespoons cold water to dissolve.
  • In a stand mixer with the whisk attachment, beat the mascarpone until smooth and fluffy. Add the confectioners' sugar, beating until smooth. Slowly add the cream; beat until smooth, then add the vanilla. Raise the mixer speed to high and beat to soft/medium peaks.
  • Mix a dollop of the whipped cream into the gelatin, then add back to the mixer. Whip to medium peaks. Chill until ready to use.
  • For the caramelized peaches: Toss the peaches, sugar and salt together in a bowl.
  • Heat a medium-large skillet over medium heat until hot; add the butter. Place the peaches, cut side down, in the skillet and cook, turning once, until caramelized on both sides, 4 to 5 minutes per side; be careful to keep the peach skins intact. Transfer to a parchment-lined baking sheet to cool for about 10 minutes.
  • To assemble: Place a cake round on a plate and top with two peach wedges, skin-sides facing out.
  • Scoop some whipped cream into a pastry bag fitted with a large round or star tip and pipe a swirl in the center of the round, between the peach wedges.
  • Top with a second cake round and pipe another swirl of whipped cream in the center. Garnish with a peach wedge and a wedge of white chocolate if using.
  • Repeat to make 6 shortcakes total.

1 large egg
1/4 cup chilled sour cream

1 egg yolk beaten with 1 tablespoon milk (for glaze)
Additional sugar
For fruit
6 tablespoons (packed) golden brown sugar
3 tablespoons unsalted butter
1 20-ounce can pineapple slices in juice, drained well, patted dry, cut into 3/4-inch pieces
2 large bananas, peeled, cut into 1/4-inch-thick rounds
Butter pecan ice cream

Steps:

  • Make shortcakes:
  • Position rack in center of oven and preheat to 425°F. Line large baking sheet with parchment. Sift first 5 ingredients into large bowl. Rub in butter with fingertips until mixture resembles very coarse meal. Mix in pecans. Whisk milk, 1 egg, sour cream and vanilla in small bowl to blend. Add to flour mixture and toss just until evenly moistened. Using about 1/2 cup dough per shortcake, drop dough onto prepared sheet in 6 mounds. Using floured hands, shape each mound into ball and return to sheet. Brush each with some egg glaze, then sprinkle with additional sugar.
  • Bake shortcakes until golden and tester inserted into center comes out clean, about 18 minutes. Transfer to rack; cool. (Can be made 4 hours ahead. Rewarm in 350¡F oven 10 minutes before assembling.)
  • Make fruit:
  • Whisk sugar and butter in heavy large skillet over medium-high heat until butter melts and mixture forms dark caramel sauce, about 4 minutes. Add pineapple and bananas; stir gently until fruit is heated through, about 2 minutes. Remove skillet from heat.
  • Cut shortcakes horizontally in half; place bottoms on 6 plates. Top each with ice cream, then with fruit. Lean shortcake tops against ice cream and serve.

  • Heat oven to 425 degrees; you'll need a baking sheet.
  • Sauce: Stir sugar and water in a heavy 2-quart saucepan over medium heat until mixture comes to a boil.
  • Boil 5 minutes, without stirring, scraping down sides of pan if mixture starts to crystallize around edges, or until mixture is caramel-colored.
  • Whisk in butter until melted.
  • Remove from heat and whisk in cream (mixture will bubble vigorously).

  • Beat cream, sugar and vanilla until soft peaks form when beaters are lifted.
  • Halve shortcakes with a serrated knife.
  • Place bottoms on dessert plates.
  • Top each bottom with scant 1/4 cup banana-caramel mixture, then about 3 T whipped cream.
  • Top with biscuit tops, 2 T banana-caramel mixture and 1 T whipped cream.
  • Garnish.
  • To plan ahead: Bake shortcakes no more than 8 hours before serving.
  • When they're cool, store tightly covered at room temperature.
  • Make the caramel sauce up to a week ahead and store in the refrigerator.

Combine the crunch of a shortbread base with a gooey caramel middle and chocolate topping, and you have millionaire's shortbread - the ultimate sweet treat

250g plain flour
75g caster sugar
175g butter, softened
100g butter or margarine
100g light muscovado sugar
397g can condensed milk
200g plain or milk chocolate, broken into pieces

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Lightly grease and line a 20-22cm square or rectangular baking tin with a lip of at least 3cm.
  • To make the shortbread, mix 250g plain flour and 75g caster sugar in a bowl. Rub in 175g softened butter until the mixture resembles fine breadcrumbs.
  • Knead the mixture together until it forms a dough, then press into the base of the prepared tin.
  • Prick the shortbread lightly with a fork and bake for 20 minutes or until firm to the touch and very lightly browned. Leave to cool in the tin.
  • To make the caramel, place 100g butter or margarine, 100g light muscovado sugar and the can of condensed milk in a pan and heat gently until the sugar has dissolved. Continually stir with a spatula to make sure no sugar sticks to the bottom of the pan. (This can leave brown specks in the caramel but won't affect the flavour.)
  • Turn up the heat to medium high, stirring all the time, and bring to the boil, then lower the heat back to low and stirring continuously, for about 5-10 minutes or until the mixture has thickened slightly. Pour over the shortbread and leave to cool.
  • For the topping, melt 200g plain or milk chocolate slowly in a bowl over a pan of hot water. Pour over the cold caramel and leave to set. Cut into squares or bars with a hot knife.

Stir in the rum and cook until the liquid has reduced slightly, about 1 minute.
