BAKED CHICKEN LEGS

Tender, juicy chicken legs that are tossed in seasonings and baked until they have a crispy skin!

Number Of Ingredients 8

8 chicken drumsticks (about 2 lb)
2 Tbsp olive oil
1 tsp sea salt
½ tsp ground black pepper
1 tsp garlic powder
1 ½ tsp smoked paprika
¼ tsp chili powder
1 tsp onion powder

Steps:

  • Preheat the oven to 425 degree F.
  • Line a baking sheet with aluminum foil and lightly spray with non-stick cooking oil. Set aside.
  • Remove drumsticks from packaging. Pat them dry with paper towels. Place into a bowl or resealable plastic bag. Add oil oil and toss to coat.
  • In a small bowl combine seasonings. Add to bowl/bag and toss until chicken is coated.
  • Place drumsticks on the baking sheet. Place in a preheated oven and bake for 40-45 minutes or until the internal temperature is 165 degrees or higher.

3 lbs chicken pieces (wings, thighs, drumsticks or chicken breast, you choose!)
2 tablespoons olive oil
1/2 cup soy sauce
2 tablespoons ketchup
3/4 cup pure maple syrup (or honey)
2 garlic cloves, minced
salt and pepper

Steps:

  • 1. 1 Preheat oven to 375 degrees F (190 degrees C). 2 Place chicken in a 9x13 inch baking dish. 3 Mix together the oil, soy sauce, ketchup, honey, garlic, salt and pepper Pour over the chicken. 4 Bake in preheated oven for one hour, or until chicken is cooked and sauce is caramelized. (turn the chicken pieces every so often to avoid them burning!)

My husband loves this recipe. That alone is reason enough to make these as he is picky.

2 1/2 lb chicken legs
3/4 c honey
1/2 c soy sauce
1/4 c catsup
2-3 cloves of garlic

Steps:

  • 1. Preheat oven to 350. Line a 9x13 pan with aluminium foil.
  • 2. Lay chicken out and give them a good sprinkle of salt and pepper.Put them in the prepared pan.
  • 3. In a glass measuring cup measure out the honey , soy sauce, and catsup. Add minced garlic and stir. If mixture doesn't combine well, microwave for 30 seconds.
  • 4. Stir again and pour over chicken legs.
  • 5. Put in preheated oven. Bake 45 minutes.
  • 6. Take out of oven and turn over and return to the oven .
  • 7. Raise the temperature to 425 and bake until the sauce is bubbly and starts to caramelized on the chicken legs.(about 15 minutes.
  • 8. Remove from oven and let rest 15 minutes before serving.

CARAMELIZED CHICKEN DRUMSTICKS

I developed this recipe and it is easy and kid friendly -- Grown-ups like it too. I strongly suggest to use drumsticks, or boned thighs, not the boneless breast. I also remove skin from the drumsticks to reduce the fat intake. Don't skip on fresh ginger and garlic. You can double or tripe the recipe and adjust amount of soy sauce & sugar for your preference.

5 -6 skinless chicken drumsticks
3 tablespoons soy sauce
2 tablespoons sugar
1/4 cup water
1 tablespoon minced fresh ginger
1 tablespoon minced garlic
1 teaspoon sesame oil
1/4 teaspoon pepper
1 teaspoon sesame seeds

Steps:

  • In a small bowl, combine soy sauce, sugar, water, ginger, garlic, sesame oil, and pepper.
  • Place drumsticks on non-stick skillet and pour the soy sauce mixture on top. Cover with lid and bring to boil. Reduce the heat to low and cook for 15 min until they are cooked through.
  • Remove the cover, turn up the heat to mid-high. The sauce will get thicken and start to caramelize in a few minutes. Continue to cook drumsticks turning them around so the sauce can cover them evenly, about 5 more minutes.
  • When you see the sauce becomes like dark brown glaze and stick on to the meat, it is done.
  • Remove from the heat, sprinkle sesame seeds all over them.
  • Serve with hot rice and my steamed broccoli (recipe #286792).

  • Preheat the oven to 350 degrees F. Lay the chicken legs out in a foil-lined baking dish with high sides (the foil is to make clean up easier — it’s not essential but helps a whole lot). A high-sided sheet pan is the best option because it has sides to keep everything in, but it is big enough that the chicken isn’t drowning in the sauce. It will caramelize best if half of the chicken is poking out of the sauce while cooking.
  • In a glass measuring cup, measure out the honey, soy sauce, and ketchup. Add the minced garlic, and stir. If the mixture doesn’t combine well, microwave it on high for 30 seconds and stir again. Pour the honey mixture over the chicken legs.
  • Put the chicken legs in the oven and bake for 45 minutes. Take the chicken out of the oven, and rotate it so that the bottom that was in the sauce is now on top, out of the sauce.
  • Put the legs back in the oven. Raise the heat to 425 degrees F., and bake until the sauce is bubbly and starts to caramelize on the chicken legs. This should take about 15 minutes.
