CARAMELIZED BACON

Caramelized Bacon image

Caramelized bacon is crispy, candied bacon made with a pecan, brown sugar, and maple syrup paste-it's the first thing to go at parties!

Provided by Lucy Brewer

Categories     Appetizers

Time 1h10m

Number Of Ingredients 7

1/2 cup light brown sugar, packed
1/2 cup chopped pecans
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/4 teaspoon ground cayenne pepper
2 tablespoons pure maple syrup
1/2 pound thick-sliced applewood-smoked bacon

Steps:

  • Preheat oven to 375. Line baking sheet with aluminum foil and place wire rack on top.
  • Combine brown sugar and pecans in food processor and pulse until pecans are ground. Add salt, black pepper, and cayenne. Pulse a few times.
  • Add maple syrup and pulse until mixed and paste forms.
  • Cut bacon slices in half crosswise and place pieces on the rack without touching.
  • Get a cup of hot water for dipping the spoon.
  • With the back of a spoon or your fingers, spread pecan mixture on each piece of bacon. Cover each piece but don't spread too thickly. Dip spoon in water if difficult to spread.
  • Bake 30-40 minutes, until topping is very brown but not burnt. Bacon must be very brown to get crisp as it cools.
  • While hot, remove bacon to plate lined with paper towels and allow to cool.
  • Serve at room temperature.

Categories     100+ Breakfast and Brunch Recipes     Eggs     Quiche

Time 2h25m

Yield 8

Number Of Ingredients 11

4 slices bacon
1 (9 inch) unbaked pie crust
¼ cup butter
1 medium onion, finely chopped
1 egg, beaten
2 eggs
1 ¼ cups sour cream
¼ cup cream cheese, softened
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Fry bacon in a large skillet over medium-high heat, turning occasionally, until crispy, about 10 minutes. Drain bacon slices on paper towels. Let cool 10 minutes. Crumble and set aside.
  • Roll out pastry crust into a circle using a lightly floured rolling pin. Line a 9-inch pie pan with crust. Prick holes into the base of the dough using a fork.
  • Bake crust in the preheated oven on the middle rack for 15 minutes.
  • Remove pastry crust from the oven. Brush crust with beaten egg. Return crust to the oven and bake 5 minutes more.
  • Heat butter in a pan over medium heat and stir in onion. Cook and stir until onion has softened and turned translucent, about 5 minutes. Reduce heat to low and continue cooking and stirring until onion is very tender and dark brown, about 40 minutes more.
  • Whisk 2 eggs together in a bowl using a fork. Add sour cream and cream cheese and beat using an electric mixer until well combined. Beat in salt and pepper.
  • Spread caramelized onions with remaining butter onto pastry crust. Sprinkle with 1/2 the Cheddar cheese. Place crumbled bacon evenly over the top. Pour egg mixture over bacon. Top with remaining Cheddar cheese.
  • Bake quiche in the preheated oven until golden and fluffy, about 30 minutes. Let cool 10 minutes before serving.

Time 1h5m

Yield 6 servings

Number Of Ingredients 19

2 pounds calf's liver, cut into 6 pieces
1 cup whole milk
8 bacon slices, cut into 1/2-inch pieces
3 tablespoons unsalted butter
2 large onions, thinly sliced
3/4 cup all-purpose flour
1 teaspoon Essence, recipe follows

  • Add 2 tablespoons reserved bacon fat to skillet over high heat and add liver; cook for 2 to 3 minutes on each side. Turn liver over, remove pan from heat, add sherry and beef broth, return pan to heat and shake and flambe. Cook on second side for about 2 minutes or until cooked through. Serve liver with pan sauce, topped with onions and bacon.
  • Combine all ingredients thoroughly.

  • Preheat the oven to 375 degrees. Line a sheet pan with aluminum foil (for easy cleaning) and place a wire baking rack on top. Combine the brown sugar and pecans in a food processor and process until the pecans are finely ground. Add the salt, black pepper, and cayenne pepper and pulse to combine. Add the maple syrup and pulse again to moisten the crumbs.
  • Cut each bacon slice in half crosswise and line up the pieces on the baking rack without touching. With a small spoon, evenly spread the pecan mixture on top of each piece of bacon, using all of the mixture. Bake for 25 to 30 minutes, until the topping is very browned but not burnt. If it’s underbaked, the bacon won’t crisp as it cools.
  • While it’s hot, transfer the bacon to a plate lined with paper towels and set aside to cool. Serve at room temperature.
