CARAMELIZED APPLE CHEDDAR QUESADILLAS
These dessert quesadillas are a yummy take on apple pie-made with tortillas, cheddar, caramelized apples, cinnamon and a dollop of whipped topping.

Yield Makes 4 servings, one quesadilla each.

Steps:
- Melt butter in medium skillet on medium-high heat. Add apples; cook 5 to 7 min. or until apples are soft and brown. Add brown sugar; cook 2 min. or until sugar is dissolved. Remove from heat; add 3 Tbsp. of the peanuts and the cinnamon. Spoon evenly onto centers of tortillas; sprinkle with cheese. Fold tortillas over to completely enclose filling.
- Heat large nonstick skillet on medium-high heat. Add tortillas, two at a time; cook 2 to 3 min. on each side or until lightly browned on both sides. Repeat with remaining tortillas.
- Serve topped with whipped topping and remaining 1 Tbsp. peanuts.

APPLE-CHEDDAR QUESADILLAS

Steps:
- Spread 4 tablespoons mustard evenly over tortillas. Top half of each tortilla with 3 tablespoons cheese and a heaping 1/4 cup sliced apples. Fold tortillas in half.
- Heat 1 tablespoon oil in a large non-stick skillet over medium. Add 4 quesadillas; cook, flipping once, until golden brown in spots and crisp, 2 to 3 minutes per side. Transfer to a plate and cover loosely with aluminum foil to keep warm. Repeat with 1 tablespoon oil and remaining quesadillas.
- Whisk lemon juice, salt, and remaining 1 tablespoon mustard in a large bowl. Gradually whisk in remaining 3 tablespoons oil until dressing is well-combined. Add spinach, avocados, and pumpkin seeds to bowl with dressing; toss to coat salad. Serve with quesadillas.

CARAMELIZED APPLES WITH CHEDDAR STREUSEL
Steps:
- For the streusel: Preheat the oven to 325 degrees F.
- In a bowl, combine flour, butter, brown sugar, pecans, and smoked paprika. Using a pastry cutter, work the ingredients until a rough dough forms; it should resemble large grains. Place streusel on a nonstick baking sheet in an even layer. Sprinkle cheese on top. Bake until toasty, 15 to 20 minutes.
- For the apples: In a medium saute pan over medium-high heat, add sugar and water. Bring to a low boil, occasionally swirling the pan. Cook for about 5 minutes until the sugar begins to caramelize and turn light brown to amber; this is a little tricky and needs to be watched continuously. When light brown, turn off the heat, add the apples and whisky, and light on fire to flambe (this will cook out some of the alcohol). Then, add the butter and turn heat to low. Cook the apples, flipping to coat in the caramel, about 2 to 4 minutes. In the meantime, combine the whipped cream and creme fraiche.
- To assemble: Divide the apples into 8 individual serving dishes or one large one. Top with a dollop of the creme fraiche mixture and some streusel.
APPLE CHEDDAR QUESADILLA
Enjoy a creative meal in minutes with this apple cheddar quesadilla. Caramelized onions, apple slices and two types of Sargento® cheese-mild cheddar and mozzarella-create a delicious medley of flavors melted between lightly browned tortillas.

- Place onions in pan with 1 tsp. vegetable oil. Let onions cook on low to medium heat until soft and brown.
- Brush 1 side of 1 tortilla with 1tsp. oil and sprinkle with 1/4 tsp. salt.
- Place tortilla (oil side down) in pan.
- Place apple slices and caramelized onions on top of tortilla. Sprinkle with cheeses.
- Place remaining tortilla on top of ingredients. Brush top of tortilla with 1 tsp. oil and sprinkle with 1/4 tsp. salt.
- Cook over medium heat until cheese melts and both sides of tortillas are browned.

One of my favorite quick, breakfast treats. You can make it gluten-free by using corn tortillas! Top this delicious quesadilla with honey, maple syrup, powdered sugar, or whipped topping. Serve as either breakfast or dessert!

- Heat a large skillet over medium-low heat. Cook apple, corn syrup, honey, maple syrup, ground cinnamon, and brown sugar in hot skillet, stirring every few minutes, until apples are slightly softened and caramelized, 8 to 10 minutes. Transfer apple mixture to a bowl.
- Place 1 tortilla in the same skillet over medium-low heat; spread apple mixture on top of tortilla. Top with remaining tortilla. Cook until the bottom tortilla is golden brown, 1 to 3 minutes. Carefully flip the quesadilla and cook until the other tortilla is golden brown, 1 to 3 minutes more.
