COCONUT-NUT MACAROONS
The reward of these classic one-bowl cookies far outweighs the effort of making them. They are so easy - just dump and stir - and you don't need any special equipment. Here, Mark Bittman adds a generous handful of pistachios for crunch and color. They are also gluten-free, and the perfect treat for Passover.

- Heat oven to 350 degrees. Whisk together egg whites, sugar and vanilla in a large bowl. Add remaining ingredients and mix well with a rubber spatula or your hands.
- Use a nonstick baking sheet, or line a baking sheet with parchment paper. Wet your hands and make small piles of the mixture, each 1 to 2 tablespoons; place on sheet about an inch apart.
- Bake until firm to the touch and lightly browning on edges, about 15 minutes. Remove baking sheet and cool on a rack for at least 30 minutes before eating. These keep well in a covered container for up to 3 days.

- Line a 13x9-in. pan with foil; grease foil with 2 teaspoons butter., In a large heavy saucepan, combine cubed butter, sugar, 1 cup cream and corn syrup. Cook and stir over medium heat until a candy thermometer reads 238° (soft-ball stage). Stir in remaining cream very slowly so that mixture does not stop boiling., Using a pastry brush dipped in water, wash down the sides of the pan to eliminate sugar crystals. Cook and stir until thermometer reads 245° (firm-ball stage)., Remove from heat; stir in walnuts and vanilla. Immediately pour into prepared pan (do not scrape saucepan). Let stand until firm, about 5 hours or overnight., Using foil, lift candy out of pan; remove foil. Using a buttered knife, cut caramel into 1-in. squares. Wrap individually in waxed paper; twist ends.

- Place egg whites in a large bowl; let stand at room temperature 30 minutes., Preheat oven to 275°. Place confectioners' sugar, walnuts, cocoa and coffee in a food processor; process until finely ground and set aside., Add salt to egg whites; beat on medium speed until soft peaks. Gradually add superfine sugar, 1 tablespoon at a time, beating on high after each addition until sugar is dissolved. Continue beating until stiff glossy peaks form. Carefully fold in walnut mixture until blended., Pipe or drop by rounded teaspoonfuls 1 in. apart onto parchment-lined baking sheets. Air dry for 30 minutes before baking. Bake 18-20 minutes. Remove macaroons from baking sheet to a wire rack; cool completely. Remove from parchment; store in an airtight container.

- Sift the ground walnuts, powdered sugar, and cocoa powder together. (Re-process and re-sift, if necessary.)
- Place the egg whites in a large mixing bowl, and add the cream of tartar. Whip the egg whites, on medium-high speed, until fluffy. Slowly add in the superfine sugar, while whipping. When all the superfine sugar has been added, turn the speed up to high and continue to whip until stiff.
- Add the ground walnut/powdered sugar/cocoa mixture, all at once, and fold until the mixture drops from the spatula in one long ribbon. Transfer to a piping bag fitted with a large round tip.
- Pipe the batter onto parchment-lined baking sheets, in 1 1/2-inch circles. Set them out to dry for 45 minutes to an hour, or until a thin, dry membrane has formed on the surface of the macarons.
CARAMEL COCONUT MACAROONS - PUREWOW

- In a medium saucepan, heat the sugar and 3 tablespoons (45g) water over medium heat. Stir the mixture until the sugar begins to dissolve and the mixture comes to a simmer. Once it's bubbling, stop stirring. If any sugar crystals have washed up onto the side of the pot, wash them away with a pastry brush dipped into cool water.
- Continue to cook over medium heat until the mixture begins to caramelize. Do not stir the mixture, but you can swirl the pot slightly over the burner to help distribute the heat more evenly (this can be helpful if one side of your burner is hotter than the other). Continue to cook until the mixture is a light amber. Remove the pot from the heat and continue to swirl until it darkens a little bit more, 15 to 30 seconds.
- Add the butter and cream, and stir to combine. The mixture will bubble up and steam (don't worry, this is normal). Add the salt and stir to combine. Allow the mixture to cool for 10 minutes. Meanwhile, preheat the oven to 325°F and line two baking sheets with parchment paper.
- Pour ? cup (91g) of the cooled caramel sauce into a large bowl, reserving the rest. Add the sweetened condensed milk, egg white and vanilla, and whisk well to combine. Add the coconut and stir to combine with a silicone spatula.
