CARMEL BIG APPLE WAFFLE WITH SALTED CARAMEL SAUCE



Carmel Big Apple Waffle with Salted Caramel Sauce image

Number Of Ingredients 12

4 Fuji or local apples, cored and quartered
1 cinnamon stick
1 lemon, juiced
2 tablespoons sugar
Pinch salt
1 cup sugar
3/4 cup heavy cream
3 1/2 tablespoons butter
1 teaspoon sea salt
4 to 6 waffles (use your favorite waffle mix)
Whipped cream, for serving
Apple chips, for garnish

Steps:

  • For the apple compote: Combine the apples, cinnamon, lemon juice, sugar, salt and 1/2 cup water in a medium saucepan over medium heat. Cook until the apples start to break down, 30 to 45 minutes. Set aside.
  • For the salted caramel sauce: Combine the sugar and 1/4 cup water in a small saucepan over medium-high heat. Cook without stirring, brushing down any sugar crystals from the sides of the pan with a wet pastry brush. Watch carefully, when the sugar turns a dark amber color, remove the saucepan from the heat and stir in cream and butter (it will bubble, so be careful) and then the salt.
  • Serve the waffles topped with some apple compote, a drizzle of caramel sauce and a dollop of whipped cream. Garnish with an apple chip.

3 medium eating apples, peeled and sliced (3 1/2 cups)
1/4 cup caramel topping
2 cups Original Bisquick™ mix
1 1/3 cups milk
2 tablespoons vegetable oil
1 egg, if desired

Steps:

  • To make Caramel Apple Topping, melt butter in 10-inch skillet over medium heat. Stir in apples. Cook about 3 minutes, stirring frequently, until tender. Pour caramel topping over apples. Heat, stirring frequently, until warm. Keep warm.
  • Heat waffle iron; grease if necessary.
  • Stir remaining ingredients until blended. Pour batter by slightly less than 1 cupfuls onto center of hot waffle iron.
  • Bake about 5 minutes or until steaming stops. Carefully remove waffle. Serve with Caramel Apple Topping.

¾ cup white sugar
¼ cup applesauce
1 large egg, at room temperature
1 tablespoon vegetable oil
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
2 ½ cups apples - peeled, cored, and chopped
½ cup chopped nuts
¼ cup brown sugar
2 tablespoons butter
2 tablespoons heavy cream
½ teaspoon corn syrup

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Beat sugar, applesauce, egg, oil, and vanilla with an electric mixer in a bowl until well combined.
  • Sift flour, baking soda, cinnamon, and salt together in a second bowl. Add to sugar mixture and stir to combine. Fold in apples and nuts. Pour batter into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted in center comes out clean, 45 to 55 minutes. Cool on a wire rack for 10 minutes. Remove from pan and cool completely.
  • Combine brown sugar, butter, heavy whipping cream, and corn syrup in a small saucepan. Bring to a boil and cook, stirring constantly, for 1 minute. Let caramel cool, then drizzle over cake.

A cinnamon-y fruit topping that tastes great over pancakes, waffles, oatmeal, etc. From the Black Dog Inn B&B in Estes Park, Colorado. Mix and match different kinds of apples for a more robust flavor. Also good with a few raisins or dried cranberries thrown in; just make sure to add a little more water or juice to allow them to plump up enough.

2 large apples, peeled, cored, and sliced
1/2 teaspoon cinnamon
1/2 cup sugar
1 cup orange juice
1/4 teaspoon orange zest
brandy (optional)

Steps:

  • Place all ingredients in saucepan.
  • Bring to a boil, reduce heat, and simmer until apples are tender, approx 15-20 minutes. Add more water as needed while simmering.
  • Softened apples can be left chunky or processed in a blender for a smoother sauce.
  • Return to pan and add brandy as desired.
  • When ready to serve on pancakes, re-heat and top with applesauce and whipped cream.

1 (12.4 ounce) package Pillsbury cinnamon roll dough with cream cheese frosting
2 apples (peeled and diced)
2 Tablespoons butter
2 Tablespoons brown sugar
1 teaspoon cinnamon
1/2 cup maple syrup
1/2 cup chopped pecans (or walnuts)

Steps:

  • Make the apple topping before making the waffles because they cook up so fast and the apple topping will stay warm while the waffles are cooking.
  • For the caramel apple topping combine diced apples, butter, brown sugar, cinnamon, syrup, and chopped pecans in a small saucepan and cook over medium heat for about 5 to 6 minutes or until the apples are very tender. Leave in the saucepan to stay warm while the waffles cook.
  • Heat waffle iron and spray with non stick cookie spray. Place 4 cinnamon rolls in the waffle iron and cook for about 1 1/2 minutes or until done. (You may need to open slightly and peek inside)
  • When done remove to a plate and frost immediately.
  • Spoon apple topping over the cooked waffles.
  • So YUMMY!
