APPLE CRISP CUPS
A yummy one-biter! Whenever I ask 'what can I bring?' these top the list! Sweet cinnamon-scented apples held in a buttery crispy oatmeal cup and crunchy sweet topping. I like to make sweet treats to share with friends. I came up with this recipe so that I could bake and take apple crisp to share easily with everyone.

- Preheat oven to 350 degrees F (175 degrees C). Grease 4 12-cup mini-muffin tins.
- Mix apples, water, white sugar, and 1/2 teaspoon of cinnamon together in a saucepan, and bring to a simmer over medium-low heat, stirring occasionally. Simmer until apples are partially cooked, about 5 minutes; remove from heat.
- Combine flour, oats, brown sugar, 1 teaspoon of cinnamon, and nutmeg in a large bowl; cut the butter into the flour mixture with a pastry cutter until the mixture looks like coarse crumbs. Place a heaping tablespoon of the crust mixture into a mini muffin cup, and press it into the cup so that it covers the bottom and pushes up the sides of the cup. Make the crust go all the way to the top of the little muffin cup, and patch any holes with more crust mixture. There will be crust mixture left over. Place about 2 teaspoons of apple filling in the crust. Sprinkle about 1 teaspoon of the remaining crust mixture on the filling.
- Bake in the preheated oven until golden brown, 15 to 20 minutes.

CARAMEL APPLE DESSERT CUPS
These little dessert cups taste just like Caramel Apple Pie, just in a smaller package. Easy to make and take.

- 1. Heat oven to 350 degrees.
- 2. Unroll both tubes of cresent rolls onto work surface, roll out into (2) 16x8 inch rectangles; press seams together. Cut into 16 4 inch squares. Press 1 square in the bottom and up sides of each of 16 ungreased regular-size muffin cups.
- 3. Mix together 1 can apple pie filling, 1 tsp. ground cinnamon, nutmeg, and all spice. Place 1 teaspoon caramel topping in the bottom of each muffin cup. Place filling in ach muffin's cup (1-2 Tbsp) each. Fold cresent corners over top of filling.
- 4. Mix together sugar and 1 Tbsp. ground cinnamon and sprinkle over top of each cup.
- 5. Bake 16-20 minutes or until golden brown. Cool 5 minutes. Remove from muffin cups and serve.
- 6. NOTE: you can warm up some more caramel topping and drizzle over each dessert cup.

- Heat oven to 350°F. Mix Bisquick and granulated sugar in medium bowl. Stir in milk until blended.
- Pour into ungreased square pan, 9x9x2 inches. Top with apples; sprinkle with lemon juice. Mix brown sugar and cinnamon; sprinkle over apples. Pour boiling water over apples.

When you want a change from the same old apple pie, these miniature apple pies are a nice alternative.I find the double crust and the smaller size of the pies a good balance for the sweetness of the filling.These are best served warm with a good quality vanilla ice cream.

Steps:
- Combine apples, sugar, butter,juice, cream, spices, cornstarch and caramels in a skillet.
- Bring to boiling over high heat, stirring frequently, 8-10 minutes.
- Lower heat to medium; cook for another 2-3 minutes.
- Remove from heat.
- Preheat oven to 425 degrees.
- Roll pie crust out to 1/4" thickness.
- Cut out circles just large enough to fit 12 3" diameter muffin cups with a bit of overlap all around the edge.
- Cut slightly smaller circles for lids.
- Press dough on bottoms and up sides of muffin cups overlapping rim slightly.
- Fill each cup with a scant 1/4 cup of filling.
- Brush edges of smaller circles with egg.
- Place smaller circles on top of filled cups; pinch pastry edges together to seal.
- Pierce top of pie cups or cut out with miniature cutters before brushing on egg wash.
- Bake at 425 degrees for 15 minutes or until filling is bubbly.
